Meatless chili is always good. Load the crock pot with canned beans (rinsed and drained, and I always use at least two to three kinds), poblano peppers (and/or jalapenos, depending on your family's heat tolerance), canned tomatoes, garlic, onions, chili powder and ancho chili powder.
With winter veggies coming on, they'd make great soups. Carrots, winter squash, sweet potatoes and lots of others. Combine your favorites in the crock pot with vegetable broth from the store.
