Crock Pot Pumpkin Pie

I LOVE this and get raves every time I take it to a party. Not a pie, of course, but the flour forms a biscuit-y crust on top. Easy to double. The longer it cooks the more caramelized and crusty it gets around the edges. Fresh cooked mashed or shredded raw pumpkin works fine too. Be sure to spray the pot VERY well with Pam! I am posting as is but prefer to use dark brown sugar and add about 1 tsp more spice. I don't like Bisquick so I use 1/2C flour blended with 1/4 tsp salt and 1/2 tsp baking powder, then cut in 1 Tbl butter. From Food.com. Note about the cooking time: I have an old pot which cooks at a lower temp than many of the newer ones; you may need to adjust the time.

1 (15 ounce) can solid pack pumpkin
1 (13 ounce) can evaporated milk
3/4 cup sugar
1/2 cup Bisquick
2 eggs, beaten
2 tablespoons butter (melted)
2 1/2 teaspoons pumpkin pie spice
2 teaspoons vanilla

Mix all ingredients and cook on low 6-7 hours. Wonderful warm with ice cream, whipped cream, sour cream, or plain liquid cream, and good cold too IF there are any leftovers!

Sometimes simple is best.

But I DO like Stehanie O'Dea's candied squash
emoticon

(fill halves or quarters with chopped apple, butter, cinnamon, brown sugar). I do almost any squash this way (acorn, butternut, hubbard) and it makes them taste great. Butternut is good all by itself though. I love butternut.

Butternut squash - plain and simple

Cut squash into quarters, brush with a little olive oil
Place in crockpot, put a little water at the base

Cook on low for 3-4 hours.
Use as needed

I needed to make some squash for my dogs and this was great!
But i think if you wanted it with just a little butter it would make an amazing side dish!

I would not exceed the recommended cooking time unless you are at home to keep an eye on it. I do that sometimes with new recipes I'm unsure of; usually on batchcooking day.

Another option is to plug it in to a lamp timer, and have it turn on 3 hours before you get home.

Hi Carol! I have a question about your Cherry chocolate Dessert recipe... I have made a similar recipe for years in the oven (with blueberries, yellow cake mix, cinnamon, sugar & butter). My neighbors cook almost every week and invite us over and always request that dessert. My problem is that now I do not get home until about 7:30 in the evening. I have been tempted to try it in the slow cooker, but not sure if it would get soggy after 10 hours in the slow cooker.
Any suggestions?

Cherry Chocolate Crockpot Dessert

1 can (21 oz.) cherry pie filling
1 pkg of chocolate cake mix
1/2 cup butter melted

Place pie filling in slow cooker. Combine dry cake mix and butter. Sprinkle over filling. Cover and cook on low for 3 hours.

Makes 10-12 servings.

Crockpot Cherry Crisp
Easy cherry crisp recipe with cherry pie filling in slow cooker.

Ingredients:
1 can (21 oz) cherry pie filling
2/3 cup brown sugar
1/2 cup quick-cooking oats
1/2 cup flour
1 teaspoon vanilla
1/3 cup butter, softened

Preparation:
Lightly butter a 3 1/2-quart slow cooker/Crock Pot. Place cherry pie filling in the slow cooker/Crock Pot. Combine dry ingredients with vanilla and mix well; cut in butter with a pastry cutter or fork. Sprinkle crumbs over the cherry pie filling. Cook for 5 hours on low.

Hot Cider Drink

3 cups cranberry juice, I used cocktail, 100% juice would have been better
3 cups apple cider
1.5 cups pineapple juice
1 cup water
1/2 cup brown sugar
1 teaspoon whole cloves
1 teaspoon whole allspice
2 sticks cinnamon

Put all liquid in crockpot. Put the rest in and stir. Heat 2 hours on medium.

I transcribed the above recipe exactly as I was given it. However I turn it on low indefinitely. None of my crockpots have a "medium", so I'm not sure what that is.

I used a 4qt crockpot because I needed my larger one for something else, and wow is the 4qt full! 4qt will work but just barely; definitely recommend larger that 4qt.

This is one of those sneaky recipes that looks so simple but tastes fantastic - it tastes silky and smooth on the tongue as if there is something else in there, other than the above ingredients. But there's not.

This is not a very healthy recipe, so I have not input it into SPRecipes and have no clue of the nutrition data. Makes 4qts.

Baked Ziti with Pepperoni, Mushrooms, and Ricotta
Source: Slow Cooker Revolution

2 T extra virgin olive Oil
2 onions, minced
10 oz white mushrooms, sliced thin
1 small green pepper, seeded and coarsely chopped
4 garlic cloves, minced
1 t dried oregano
28 oz rushed tomatoes
1/2 cup heavy cream
8 oz ziti
6 oz sliced pepperoni
1/2 t salt
1/2 t pepper
15 oz tomato sauce
Hot water, as needed
1 cup Ricotta cheese
1 cup Mozzarella cheese
1/4 cup fresh, basil,chopped (optional)

Heat oil in lg pot over medium high heat until shimmering. Add onions, mushrooms, pepper, garlic, and oregano, and cook until vegetables are softened and lightly browned - about 8 -10 minutes.

Stir in tomatoes, and cream, and simmer until thickened slightly, about 5 minutes. Stir in ziti, pepperoni, and salt and pepper.

Transfer mixture to slow cooker and spread tomato sauce evenly over pasta. Cover and cook until pasta is tender, about 3 hours on high.

Gently stir pasta, add hot water as needed to loosen sauce consistency. Dollop spoonfuls or ricotta over casserole, then sprinkle with mozzarella. Cover and let sit until cheese is melted, about 5 - 10 minutes. Sprinkle with chopped basil and serve.

Review:
This was good. My husband liked it very much and thanked me for making it. I think kids would love this too. Was fairly easy to do, and quick cooking time in the crock-pot.

I changed it up a bit - used a variety bag of veggies from costco, and did the 3 hour cook this time. Veggie fell apart a bit less, but i didn't find it quite as flavorful. Leftovers are chillin in the fridge right now, so the flavors might blend a bit more!

Please post your miscellaneous recipes here.

Some examples would be yogurt, veggie crockpot lasagna, mac and cheese, heavenly spinach, homemade marinara sauce, green beans almondine, bread, desserts, baked potatoes, etc. Also please note there is a Vegetarian thread located in the 'General Discussion' area of team page, you may also post there if it's vegetarian, vegan, etc.

And when possible, provide as much info as possible: dynamic links others can click on, size of crockpot, setting, nutrition info including size of servings and number of servings, etc.
