This is my favourite crock pot recipe when Shrimp is on sale.
1 cup finely chopped onion
1/2 cup chopped celery
1 medium green pepper, chopped
14 oz canned tomatoes, with juice, broken up
2 tbsp ketchup
10 oz canned sliced mushrooms, drained
1 tsp salt
1/4 tsp pepper
1/4 tsp garlic powder
1/4 tsp cayenne pepper
1 tsp lemon juice
1 tsp parsley flakes
1 lb cooked fresh ( or cooked frozen, thawed) shelled shrimp
Put onion, celery and green pepper into 3 1/2 quart slow cooker.
Combine next 9 ingredients in bowl. Stir. Pour over top. Cover. Cook on low for 6 to 8 hours, or on High, for 3-4 hours.
Add shrimp. Stir. Cook on high for 1-20 minutes until shrimp is heated through. Sir before serving. Makes 4 1//4 cups.
