For those who are city dwellers but would like to have some hens for fresh eggs...do some snooping. Many states now allow people within city limits to have chickens. For example in WI they have a little known law on the books called the "Mad City Chicken" law which allows people in any city to own hens. They have to have a coop, and it must be 25 feet from any neighbors residence. With what is allowed in our food these days, you better believe we took advantage of this law. We have a duel purpose bird good for both meat & eggs.

As for telling the sex of your ducks, you can do that with most duck by looking for a drake feather near their tail. If you notice a currly feather that flips up towards your duck's back it is a male. Also listen to the ducks quack...if it is a quiter muffeled tone it is most likely male however; if it is loud and almost like a goose honk it is female.

I love using duck eggs for baking 1 for 2 chicken eggs, and I don't mind eating a duck eggs as long as when you scramble them, you do not mix in some chicken eggs too. I did that once and lets just say the dog really enjoyed his breakfast....

Our Ducks just started laying also. The eggs are delicious,richer than chicken eggs.

Obsessed is just a word the lazy use to describe the dedicated

Yup, duck eggs are a little richer but not much, depends on the duck. Just like chicken eggs, quality goes with the quality of the bird. Yes, I have eaten A LOT of duck eggs. They are Delicious. Yes, they are bigger so you might use one in a recipe that calls for 2 chicken eggs. Again, they come in different sizes so you have to use your judgement. the best way is to weigh them. A large chicken egg weighs about 2 oz so you can use that as a comparison. Duck eggshells are a little thicker so you might take that into consideration when weighing; depends on how persnickety you are. Duck eggs look just a little different in the pan; the whites aren't quite as white looking; they have a very faint grey or translucent look...very faint. Again, depends on the bird. They are actually a bit less allergenic than chicken eggs for those to whom allergies are a problem

I was so glad when I moved back to my family farm - I'd much rather wake up to roosters crowing than traffic! My poor dh, city boy that he is, hasn't quite adjusted yet - lol. We're down to four hens now - I'm thinking about getting another half dozen or so. I was excited when I realized those large white things laying in the pen were duck eggs - lol. We have four ducks and I had no idea if any of them were female.

I can't wait until we get some property.... have some chickens. I used to have 12 chickens and fresh eggs everyday was so AWESOME!

We just got ducks for the first time this spring and they recently started laying - in fact, right now I'm getting more duck eggs than hen eggs. I haven't been brave enough to try one yet - lol. I'm wondering if anyone has experience in cooking with duck eggs and if they can be used interchangeably with hen eggs in recipes? They are quite a bit larger than my hen eggs, so I'm thinking one duck egg might equal one and a half hen eggs?
