Good ideas! You could also dehydrate the tomatoes.

Also, I made these for dinner.

I would juice and freeze the grapefruit.

Try roasting the tomatoes. Slice and drizzle with a little olive oil, salt and pepper. Roast until they dry out. Put in tupperware and freeze. These are great with french bread and soup in the winter!

Use the grapefruit in a smoothie. I would think there would be tons of great combos with other fruits!

Stuffed tomatoes! You can even make up a bunch and freeze them. You can stuff with whatever you like. Meat, cheese, brown rice or barley, veggies (spinach with some cheese and a little bit of ground beef sounds like a good combo). I stopped eating grain, but brown rice with ground turkey or pork topped with cheddar is good too. The combos are endless.
Hmmm... grapefruit eh? How about fruit salad?

Hi All -
Looking for ideas to use up some extra tomatoes and grapefruit from my garden. Of COURSE the first idea that popped into my head was a grapefruit salsa to go on my fish tonight. But hoping you can also share some other favorite recipes with me. They don't have to be used in conjunction, of course. I don't yet have a huge supply of tomatoes but too many to just use in a salad every day. For now I have about 5 big sized and a dozen romas. And the grapefruits are needing to be pulled from the tree. I have a dwarf and there's about 10-20 on it right now that are ripe.

Of course, looking for something sans sugar and with the focus on clean eating and minimal processing.

Thanks!
