that looks delish! i recently bought coconut flour and coconut oil. i am reading that this is good for you.
the coconut oil is awesome to use and imparts a nice subtle flavor. my gyoza was the best ever with coconut oil to fry in.
but, then when they warn you about theatre popcorn, they say it's cooked in coconut oil, which seems bad in that particular reference.
do you have info or direction to more info on coconut products?

Coconut ghee is coconut oil blended with ghee (clarified butter). You can simply use butter or coconut oil though...
I have heard of and used coconut oil I have heard of but not found or used yet, coconut butter. What is coconut GHEE?
Maybe once I have the answer to that I can make these pancakes. I miss pancakes! ANd I would switch out for the stevia too.

I used coconut ghee instead of butter, stevia instead of honey and cinnamon instead of the dessert spice. I fried them in coconut oil. These ARE the best pancakes I have EVER eaten! Makes 2 large fluffy pancakes. Since I only eat 2 full meals per day I enjoyed both (guilt free) topped with some Greek yogurt and a small handfull of blueberries.
