Yeah. Me too... I am gonna make it with the sugar as per instructions... I think there's a honey alternative. After all, when I occasioanlly use ketchup I only use a scant tablespoon anyhow. So, that should be just fine. Honey is good for us too. Superfood!
I ordered some Veggie culture starter... I am trying to cut back on the whey products. I am so happy to say that I have been eating yogurt with no ill effects. Limited to one sering a day. Not Greek yogurt which is very high in protein. Just regular yogurt. I also had Doc Mercola's whey protein a smoothie the other day.... I just have to watch not to over do it. I guess...
My DOC says that if I keep the dairy to a dull roar, I may be OK with it. Woo Hoo! I think I had to sort of "detox" all the high protein products out of me. Cottage cheese, Greek yogurt and whey protein.... 3 servings a day was just too much.
Really HAPPY about this!!!

Thanks for this recipe Laura! I have lots of ketchup recipes but none of them are fermented. I hadn't even thought of that. Of course, the non-fermented ones don't need sugar so you can substitute stevia in them. But fermented foods are so good for us. I really like this idea.

I haven't done any fermenting yet, so that's what I would do. There a ferment team on spark, I bet you can go on there and ask,

You might need the sugar for the bacteria to eat.

Have you done fermentation before? If not, maybe you should follow the directions exactly, you don't want to end up with a bad batch and not know it.

This looks yummy! I am trying to include more raw foods as well as fermented foods into my diet. I have been avoiding store-bought ketchup... this stuff looks good. I thought about making it without sugar, but I am wondering if the sugar is necessary for fermentation. I will most likely use LESS honey and add a bit of stevia...
