I have found that it does work better to soak and cook different varieties of beans separately. What I often do is soak and cook a bunch of beans and freeze them in small bags with labels. Then, when it is time to cook I can take my pick and each one is done perfectly beforehand.

Hospitals are terrific for traumatic care; for acute care. They do a really, really good job in saving lives when it’s a sudden bleeding emergency. But in terms of chronic care, they’re terrible; (that is) in terms of the illnesses that most people have, endure, that cost the most money, that last the longest and ultimately die from. -Dr. Andrew Saul

Thanks for the advice! I have beans and they only took 6 hours to cook. Has anyone cooked several different kinds of beans in the same pot? I like to use kidney, black and pinto beans in my chili, so would I have to make three different pots of beans since they are very different in size?

I'll have to try the boil and simmer method because overnight soaking doesn't seem to help. I never thought about sugar cooking more quickly, but that makes sense too.

I have some black beans on hand and they are small, so I'll start with them. I have chicken and red peppers to use up too, so chicken fajitas and black beans are now on the menu.

I lived at high altitude (8,000 ft plus) for several years of my life. Absolutely cooking is different up there! Water maintains a boil at high altitude that is much lower in temperature than at the lower altitudes. So beans will take longer...unless you use a pressure cooker. I used one of those things a lot when I lived in the Rockies. Most pressure cookers have an automatic release valve that keeps the proper pressure during the cooking time.

But not everything takes longer. Some things need a shorter time--like raising bread and making anything with much sugar in it. Just as water boils at a lower temp, so does sugar reach its perfect stages at a lower temperature. Since the air pressure is much less up high, your bread dough will rise very fast. It's fun to learn these things. The trial and error was quite an experience for me!!

Well, the adzuki beans are smaller. Maybe that would cut down on cooking time. I boiled mine for 15 minutes, then simmered for about an hour and a half. They were tender and I then put them in the crockpot to simmer with the rest of the "baked beans" ingredients for a couple more hours. I started the entire bean cooking process at noon and was eating by 5:30.
