I need to get the chopper & the peeler!!!! I had the eggies & did not work for me!! I probably was doing something wrong!!!! LOL!! Mom buys everything on TV, so recently she got me one of those special skillets!!!! It is amazing.....you do not need any oil at all!!!! And NOTHING sticks!!!! I LOVE it!!!! I love my RADA knives too!!!! My fav is the birdbeak one!!!!

YUM!!! Thanks for all the ideas, Randy! I love grilled pineapple, and the others look wonderful!. I was thinking that the angel food cake would taste great with cherry!

Randy, the blueberry squares, you can also do other flavors, my favorites are peach and apple.

mmmm i loved grilled pineapple.

something else i like to do with zucchini is take a vegetable peeler and slice it down to the seeds then that will give you ribbons, i like them smaller so i cut them smaller into almost spaghetti size. saute with olive oil, salt pepper and top with a little parm cheese. I also got a special peeler from pampered chef that gives me teh spaghetti size. I got it just for teh zucchini lol.

{some may be repeats -- but some are new for me -- and I thought I'd share} I want to try the Crispy Edamame' and the Zucchini Boats! and the and the ..... :)

Healthy Side Ideas

Grilled Pineapple – Cut a fresh pineapple into rings, brush lightly with olive oil and grill for a couple minutes on each side

Zucchini boats - Cut the zucchini lengthwise and scoop out the seeds. Fill with various chopped vegetables likes bell pepper, onion, grape tomatoes, jalapenos, spinach, and add a small amount of low-fat cheese (either mozzarella or cheddar for this participant). Microwave for about 5 minutes or wrap in foil and toss on the grill

Whip-Dream Sandwich – Spread frozen light whipped topping on chocolate graham crackers

Twist on Peach Pie – Cover a graham cracker with peaches and top with a dollop of peach Greek yogurt

Healthy Ranch Dip – Mix 1 packet of ranch dressing mix with 1 large container of plain Greek yogurt for a delicious veggie dip

Blueberry Squares – Mix one box of angel food cake mix with one 22 ounce can of light blueberry pie filling and bake in an ungreased 9x13 pan for 30 minutes. Makes 24 servings

*Crispy Edamame – Thaw, rinse and drain a 12-ounce package of frozen shelled edamame and spread along the bottom of a 9x13 baking dish. Drizzle with ¼ cup of parmesan cheese, 1 tablespoon of olive oil, salt and pepper, and bake at 400 degrees at 15 minutes.
