Not as often as I would like to. It's hard to find recipes that diabetics can eat and not have their BG's go up. But now that I am on this site, maybe I can start baking more. Would love o find holiday recipes that are low carb. Good luck and God bless you.

Anything with pumpkin! There's a recipe I found for a breakfast "hot cereal" using pumpkin and ricotta cheese! Had the consistency of a cream of wheat type cereal...add some pumpkin pie spices and WOW!
Just put PUMPKIN in the recipe search here as the main ingredient and start searching...so much fiber and a real "comfort food" at our house.

Any favorite fall snacks? What do you use for your protein source, if any?
I love the fall squashes, like the heirloom delicata and the butternut. A while ago, I made a carrot ginger soup and thought I would try squash soup, but wondering how to eat these for a snack and still get in protein... usually would grab a cheese stick, but trying to get away from high salt proteins...
