I love grilled fish. I do all kinds of different rubs, blackened, Greek, Mexican. I like to grill, Mahi Mahi shark, salmon, any kind of meaty fish will work. In the winter I make oven baked fish in a Mediterranean sauce. Of course fresh caught is best, but now that my husband is not taking me to the Sea of Cortez to go fishing I have to make do with store bought.

I love reading all these receipe ideas but I'm dismayed at the folks that don't care for fish! One of my favorites and so good when done on the George Forman grill. I like to marinade it in something lemony or an asian salad dressing and then cook it. So yummy. I also like to grill my veggies, like a slice of onion, zucc. and even whole mushrooms at the same time. Super!

Does anyone have any recipes using turmeric?
I cannot eat artificial sweeteners. They make my kidneys bleed. Does anyone have any ideas for how to add a little sweetness to dishes with using sugar, honey or something artificial?

I made a tasty soup yesterday in the slow cooker. Serves 4
1 small bag little carrots
2 med red rose potatoes cubed
1 Anaheim chili chopped
1 red pepper chopped
1 onion cubed
3 cloves garlic minced
leftover chicken from a roasted chicken the night before
12 oz kale washed and chopped
1 can white beans, rinsed and drained
1 can low sodium diced tomatoes
2 cans low sodium chicken broth
red pepper flakes to preference
slow cook on high 3-4 hours or on low 5-7 hours

Hello teamies! Hope your weekend is going great!

I wanted to share a healthy summer salad that I took to my potluck last night and it was a hit!
Very simple and fast to make.

2/3 jicama, cubed
2 cucumbers (lightly peeled, cut in half lengthwise and then slice as thick or thin as you like)
1/4 C virgin olive oil
2 limes, juiced

Mix it all together and sprinkle lightly with chili powder. The chili powder does not make it hot, just adds to the flavor!

I brought very little back home with me. The jicama and cucumber are very juicy and it was delicious served cold. I put it all in the refer for a couple hours and then mixed it all up again. By that time there was juice on the bottom to moisten it all up.

I just looked at the week 2 recipe ideas and was delighted to find the eggplant pizza recipe! We made this in High School Home Ec back in the 70's and I always remembered how good it was! Can't wait to try it. Probably this weekend. I have roommates and it's hard to get to the stove during the week. I use my George Forman grill ALOT. Great for chicken, fish AND veggies belive it or not!

protein pancakes:
1/2 cup oats
1/2 cup nonfat cottage cheese
4 large egg whites
dash of cinnamon


I enjoyed the flavor as I love pancakes, but the texture was a little off. Unfortunately, my kids requested that I continue to search for a pancake recipe. I think I will stick with these (as they do not require protein powder), but I will make the kids some "normal" pancakes.

Basically a pound of ground veal, 5 cups chicken broth, 1 onion, 1 head napa cabbage, diced celery, garlic, parsley and diced tomatoes.

Tilapia has been a huge help to me. I don't have to struggle so much with eating healthier options as I have to struggle with eating too much food (too many calories).

I like to coat a filet of Tilapia with Penzeys Lemon and Pepper combination. Then pan fry until finished. Depending on the pan, it may need a bit of olive oil.

I love the taste and for less than 150 calories, it's very filling.

Hubby has to have sauce on everything, so I usually microwave a bit of his salad dressing for his. He thinks my sauces are wonderful. lol

I tried the Chicken and Broccoli casserole, which was pretty darn good. I have all the ingredients for the Low carb cheesecake so that will be the next try. The hardest thing for me is most of the low carb recipes call for almond or coconut flour and where I live these flours are not sold. I can only find them online. I will keep looking though.

I have saved several recipes, but have not actually tried them. Work demands have been high and my husband does most of the cooking - and he is pretty scared of recipes. I will try some over the weekend. My favorite "sweet" lately has been a baked apple substitute. I cut the apple up in chuncks with the skins on. Drizzle light maple syrup (drizzle means less than teaspoon) and sprinkle with cinnamon and microwave for 1 1/2 minutes until soft. The juices in the apple sweeten and become syrupy.

I am a diabetic who is allergic to artificial sweetners - so I get excited when recipe says it is low sugar just to find the hidden wording for all the various sweetners. I would appreciate any recipes.

I made a mashed sweet potato and carrot recipe. Delicious!! I also made some homemade chicken broth for use in some yummy soup and in other recipes later in the week.

I made 2 recipes yesterday - Quinoa Black Bean Casserole and Chicken and Vegetable Stir Fry. The casserole turned out fine but I probably won't make it again - it's a little too different for me. The stir fry was amazing - brought it for lunch today instead of eating out - that's half way to my goal for the week!! emoticon

I would like some recipes for fish. I am not a baked fish fan at all but, my hubby loves it. If any one can tell how to bake fish and it has a little bit of crunch to it I would appreciate it.

My meals are usually normal meals I just have learned to cut back on portions. I find that I am eating a lot less but I know that I am not getting in enough veggies so this is a new issue that I have to conquer. Lifestyle changes are hard I must say and I am getting by but I am finding it hard to enjoy since I am on the go all the time and grab and go meals are not working in my brain, especially with the holidays but I am staying away from the dessert tables. I have only had one piece of pie and one piece of cake during the season. So that is saying a lot for me the junk food junkie.

I've been grilling zucchini, and even patty pan squash. I just sliced them, put them in a gallon ziploc bag with a mix of a Tbsp of extra virgin olive oil, garlic powder, a dash of salt and pepper. Marinate a few minutes then grill. Even my young teen liked it.

The recipe I made here was Rayne's Fried Zucchini, though I used a tiny bit of regular flour instead of soy and I left out the cheese since I didn't have any. It was still good.

I tried a recipe that I found on SP from another sparker. It was a makeover for ramen noodle salad called "Makeover Asian salad" I made it for the 4th of July instead of my usual taco salad and ramen noodle salad. It makes a very large bowl. The people who tried it really liked it, unfortunately it was made with cabbage and broccoli slaw, and I didn't realize that a lot of people that were here didn't like cabbage. But it was good.

We have been grilling zucchini for a side dish lately. I just slice it in half, spray with EVOO, and sprinkle a little seasoning on top. My hubby then grills it with whatever lean meat we are grilling. It's so tasty and hardly any calories or carbs.

For lunch today I made a delicious baked potato, much like one you use to be able to get at Rax's. You bake the potato in the microwave required time, then heat up some bbq beef ( I like Lloyds) and after you add margarine to your baked potato and season, top with 1/4 cup of bbq beef and then top with diced onion and if you like garnish with a little fancy shredded cheddar cheese, talk about delightful and good for you, this is awesome and a quick idea for lunch, and I accompanied the baked potato with a dish of my homemade cole slaw. Yummy fulfilling lunch.

I cooked the Garlic Brown Sugar Chicken tonite. It was ok for something different, but could have used more flavor. Shoes, the meatball recipe sounds like it would have been good with stir-fried vegetables.

I found a recipe for sugar free barbecue sauce
I have not tried it yet
2/3 cup Worcestershire sauce
1 cup slender
1 tablespoon canola oil
1 cup minced onion 2 cloves garlic
2 beef bouillon cubes
1 cup hot water 3 small cans of tomato paste3/4 Dijon mustard 1 teaspoon salt 1/2 cup cider vinegar
heat oil, cook onion, mix cubes, hot water dissolved, mix paste, mustard, salts, vinegar, stir until sweetener is dissolved,

This topic gave me an idea! I've been planning on binging on Easter Sunday. I have my eye on a piece of Safeway chocolate cake. But if I find a diabetic friendly recipe at one of the low-cal sweetener sites, especially if it's eggless, since I don't tolerate eggs well, I'll make that up and have it instead and then I won't have strayed quite so far. Or maybe some brownies. (Pretend you can't see me drooling.) I'll let you know if I have any luck.

I made my favorite turkey meatball recipe last night. It is soooo good. I posted it onto recipes it is called Parmesan Turkey Meatballs. The whole family loves them! I made what is called Chef's Spaghetti to go with it but, I used whole wheat spaghetti which we have permanently switched to. We actually like the nuttier texture better than regular pasta. The spaghetti was very good with tons of garlic! emoticon

We don't eat out very much at all! I cook all of our meals from scratch, homemade whole wheat bread and whole wheat pitas. I made a couple of low carb sides this week. I made a Tuscan Kale salad that my husband loves as well and an Asian Broccoli slaw with broccoli, red cabbage and carrots. We do Meatless Mondays and last night I made Polenta stuffed red peppers, it was pretty tasty! emoticon

It's been a busy week. We went to a concert, out to dinner for a birthday, and now my DH has a cold and doesn't want to eat right. I've been doing pretty good as far as chosing what to eat, but I haven't made it to the pool too much. I've been trying to make up for it with 10 minute bursts of exercise.

I think I may have to do week 2 over!

Have been using 'The SparkPeople Cookbook". Love the Garlic Chicken Slaw in Lettuce Cups. Made some for my husband and daughter and they really liked this recipe as well. "A keeper" we will prob. be using often.
Also, very much enjoy the Skinny Eggs Florentine recipe. I add extra spinach for more veggies in my day.

Having dealt with diabetes for 15 years I can say that soup at one of your daily meals can be your friend; low calorie, satisfying and easy on blood sugars. Some of my favorites are cream of potato soup, hamburger vegetable soup, tomato soup, bean soups and green pea soup. Make these with plenty of veggies and your favorite flavorings. I usually have soup several times a week for either lunch or supper and pair it with a whole wheat dinner roll. Your have to be careful not to eat to much bread though or your calorie count will go way up.

I shared a chicken stir fry recipe this morning - I've been testing it on my household for a few weeks, and the result is posted as "Chicken Dark-meat Stir Fry". It came out good enough that my teenager just picked those leftovers over mac and cheese for his lunch! It has more protein than carb and the carbs are all from veggies, so there's room to serve it over rice or noodles if you like (I normally skip them now).

Whole wheat Orzo can be found in the "specialty pasta" section; it's in a small tan colored celophene-like bag. We have it at Ingles, I imagine other chains that have specialty sections will have it; it was hard for me to find because I didn't know what I was looking for.

Tried a bean soup but didn't care for it. Want to try the chicken and orzo. Trader Joe's has one ready to heat but I want to be able to use whole wheat, which likely means I'll be doing chicken with whole wheat pearl couscous since i haven't found whole wheat orzo anywhere.

I made Chef Meg's Mediterranean Chicken with Orzo last night and it was yummy!! Instead of orzo I used broken up whole wheat spaghetti that I toasted in my pan first...grilled the chicken with some Mrs. Dash garlic and herb spice.

I can do this!

I tried the Roasted Beets but modified the menu a bit. I cooked sliced beets on the stove in a bit of water and added the dressing ingredients to the cooking water! The beets, served hot without the lettuce, were awesome!

I enjoyed a jello fluff recipe for Valentine's day. It was really good. I used cherry sf jello in honor of Valentine's day. I also made low carb cheesecake bars and gave some to family. They were pretty good as well.

My low carb recipes that I had for Valentine's Day were Lower carb peanut butter dessert and Herbed spinach, feta, ricotta stuffed chicken. We had some dear friends join us since restaurants are packed on this day. I also served broccoli and my friend brought a caesar salad. The meal was wonderful we all enjoyed these recipes very much.

This week I also made Yummy Key Lime yogurt pie with a reduced fat graham cracker crust and the Italian meatloaf roll w/spinach. The pie was wonderful but it did not set up as well as I would have liked. I ended up making the meatloaf roll but not eating it because my husband slipped on the ice and had to go in to get checked out. I froze it for another time. It smelled and looked wonderful. I find Spark People recipe site an invaluable resource for ideas to keep me from getting bored with my food. I will continue to use it for planning my menus and to try new things.

Happy Valentine's Day! Type 2. Tonight I'm making baby-back ribs in the crock pot, using a Spark Recipe rub--using a sugar substitute. Ribs aren't the best choice, but they are a choice, and hubby loves ribs. He'll have rice, I will not. Rice spikes the numbers. We'll have green beans, which I recently read are extra good for diabetics.

I am back to cooking out of my WW recipe books. I find them to be very calorie and diabetic friendly. This week I made Turkey Burritos and Roasted Garlic Chicken and Vegetables.

... If only I had not made an apple pie last weekend, I destroyed my caloric intake and weight loss with that pie. I will not make the same mistake this week.

So far I have tried a few of the recipes from the link on the week 2 task page. Tonight we had Balsamic Chicken and Mushrooms and it was delicious. We also had Roasted Lemon Basil Chicken yesterday that was also very good. I tried one recipe that did not sit well with me. I have several more recipes that I have on the menu this week. emoticon My favorite Breakfast is to cut up half of an apple and cook it into my minute oatmeal (1/2 cup). I add a package of Splenda a tsp of butter and 1/8 tsp of cinnamon to it as well! It tastes as good as apple crisp to me, and really fills me up. My son usually uses the other half of the apple in his oatmeal so it gets used too!

emoticon i really like chia seeds, if I use them daily, helps with appetite

1 tbsp chia seeds
stirred into a greek yogurt
add a little water or fruit juice, stir in & set aside 10 mins for seeds to swell (they become a little innocuous kind of like raspberry seeds in jam)
1/2 oz nuts
add fruit also if desired, like smashed berries yum!

(usually 1 Tbsp with my afternoon snack stirred into greek yogurt, add a little water or fruit juice and let the seeds swell which has higher protein & some nuts), i notice a difference in my appetite after a few days (also good fiber & omega 3s)

Tonight I had: Veggie Pizza on Whole Wheat Crust with Feta and Mozzarella Cheeses
It was really good and only had 19g carb per serving. I was able to have 2 slices with the dinner meal.

I've made the Apple Oatmeal muffins that were called for in several of the diabetes managment planned meals. They were really tasty. Its also good that they were a quick choice of a premade item for the substitution selections. I will continue to make these regularly.

The recipe that I love to make is veggie burgers. I even was able to get my husband to eat some this week! He is also looking into trying some of my favorite vegetarian meals. I also made Eggplant-Tomato Saute with Fennel and Fresh Oregano. Yum!

Last night we went with a quick "go to" meal, Spinach Feta Penne. It takes about 10 minutes

Boil up a box of Penne and throw in some frozen or fresh spinach, when the pasta is tender drain and throw it back into the pan. Throw in about 3oz. of crumbled feta, a tablespoon of olive oil, some cherry tomatoes, and minced garlic and ground pepper and toss together.

For about a cup and a half it comes out to roughly 400 calories, 60g carbs, 10g (mostly unsaturated) and 18g protein. We paired that with a salad of kale, and a host of other vegetables.

Best of all, it's just as good the next day for lunch, you don't even have to warm it up.

I had Black Bean and Portabella Mushroom burgers last night. The recipe seems to have been removed from SparkRecipes, they were very delicious. Also because we home canned our beans, the burgers themselves were sodium free. There was probably a little in the spicy mayo and bun but not as much in regular canned beans

I pretty much stuck with recipes I already use this week. A lot of the recipes I looked at had a lot of sodium in them. I have high blood pressure and I'm having a hard time finding recipes that are low in sodium AND diabetes-friendly.

I made the chicken and couscous. It was fantastic. I will be making it again. I also made the vegetable fried rice and loved it as well. I am also making pumpkin butter from skinnytaste.com and low calorie onion rings and chicken strips from Hungry Girl's new cookbook. It an awesome book and was well worth 20.00. I made some chicken taco chili from skinnytaste.com as well and it was a great recipe as well.

I put ground turkey in to brown then while it was browning.. to crockpot I added
1 can black beans, 1 can chili beans, 1 can red beans (I drain only the red beans).
1 cup dried mushrooms, 1 can Rotell, 1 cup salsa, 1 pkg taco mix, small onion,1 can corn, some chicken broth (I had frozen from boiling chicken)
(can use caned) then added turkey. Cook several hours in crockpot.

For breakfast I eat stone ground oatmeal with 2 T. cinnamon 2 T honey.

Snack is protein drink with cinnamon and honey or V8 juice with flax seed and spinach blended.

Blood sugar and cholesterol is going down with eating a lot of cinnamon and honey.

I also add cinnamon and honey on toast, in tea, most anything I can use it on.

I ate more healthy, homemade foods this week overall. Since I am not officially diagnosed as diabetic, I don't have a machine to check my blood sugar. I will be visiting the doctor in the next few weeks though for a check up. I have been more active this week too: my job (housecleaning), extra walking, and an exercise class all added to my fitness minutes. I plan this coming week to try out some SparkPeople cookbook recipes and to do-over other recipes I have from my various magazines, using lower calorie and carb options. Tonight I made a version of the Flat Out Pizza recipe. I toasted a Joseph's Lavash Bread, topped it with Pizza Sauce, low fat mozzarella cheese, and diced chicken and popped it back in the toaster oven until the cheese was melted. It was really good and 358 calories. It was more sodium than I usually want to have but that's ok. I used frozen already cooked chicken so that was more sodium. I need to get regular chicken breasts, cook it plain and freeze it in portions to use in different recipes. That would save about 250-300 mg of sodium.

Breakfast: Oatmeal with cinnamon
Lunch: Turkey and swiss cheese with mayo on whole wheat
Dinner: Grilled pork chop, sparkpeople Green Bean Saute recipe mixed with brown rice
Snacks: Raw baby carrots, grapes
Drinks: I only drank water all day :)

I love using my Hamilton Beach indoor grill. I use no oil and cleanup is easy because it has removable grill plates.

I'm stuffed but my food tracker says I only had 886 calories today. I MIGHT feel like eating a small snack after I hop on the elliptical in a little while but I probably won't.

I found an 'Easy Black Bean Burger' submitted by: ILOVEMYPEACHES

The recipe makes 5 servings. I divide the bean mix into 10 balls, flatten them a bit and bake it in the oven. I snack on these burgers or eat them with multiseed brown bread. They are spicy and delicous.

Once baked I freeze them and heat them in the microwave when needed.

KAMOMEDAN...do you have a recipe for the grilled garlic lemon salmon, or can you tell me where I can find a recipe for that?
