Made Garlic Parmesan Roasted Broccoli and it was good!

24 oz broccoli florets
3 T olive oil
4 cloves garlic, minced
Kosher salt and freshly ground black pepper to taste
1/4 c grated Parmesan cheese
Juice of 1 lemon

Preheat oven to 425*F. Lightly oil a baking sheet or coat with non stick spray
In a large bowl, toss broccoli, olive oil and garlic.
Spread mixture in a single layer on the baking sheet
Bake for 10 - 12 minutes or until tender
Sprinkle with Parmesan and lemon juice
Serve immediately

Nothing changes if nothing changes.

Made the Easy Beef Roast recipe from Spark Recipes. I was disappointed because I made this exactly as the recipe said but it came out tough and dry.

Last night i made Salmon for dinner my hubby and i both like fish so we have it often. I just wrapped it in tin foil but added homegrown Roma tomatoes and Onion along with some garlic powder and pepper...bake at 350 for one hour...yummy! emoticon

Hi. I need some recipe help. I've been trying to create recipes on the site, and then forgot to add something, so I click on makeover, etc. and it saves again. Now I have about 3-4 of the same recipe with different versions. How do I delete a recipe after I've saved and shared it to spark? Can I, once they're shared?
I really want to delete for first few bumblings. Thanks.
ps. Just made really good steel-cut banana bread oats in the crock pot overnight -with chia and flax seed. Smells nummy!

I love grilled fish. I do all kinds of different rubs, blackened, Greek, Mexican. I like to grill, Mahi Mahi shark, salmon, any kind of meaty fish will work. In the winter I make oven baked fish in a Mediterranean sauce. Of course fresh caught is best, but now that my husband is not taking me to the Sea of Cortez to go fishing I have to make do with store bought.

I love reading all these receipe ideas but I'm dismayed at the folks that don't care for fish! One of my favorites and so good when done on the George Forman grill. I like to marinade it in something lemony or an asian salad dressing and then cook it. So yummy. I also like to grill my veggies, like a slice of onion, zucc. and even whole mushrooms at the same time. Super!

Does anyone have any recipes using turmeric?
I cannot eat artificial sweeteners. They make my kidneys bleed. Does anyone have any ideas for how to add a little sweetness to dishes with using sugar, honey or something artificial?

I made a tasty soup yesterday in the slow cooker. Serves 4
1 small bag little carrots
2 med red rose potatoes cubed
1 Anaheim chili chopped
1 red pepper chopped
1 onion cubed
3 cloves garlic minced
leftover chicken from a roasted chicken the night before
12 oz kale washed and chopped
1 can white beans, rinsed and drained
1 can low sodium diced tomatoes
2 cans low sodium chicken broth
red pepper flakes to preference
slow cook on high 3-4 hours or on low 5-7 hours

Hello teamies! Hope your weekend is going great!

I wanted to share a healthy summer salad that I took to my potluck last night and it was a hit!
Very simple and fast to make.

2/3 jicama, cubed
2 cucumbers (lightly peeled, cut in half lengthwise and then slice as thick or thin as you like)
1/4 C virgin olive oil
2 limes, juiced

Mix it all together and sprinkle lightly with chili powder. The chili powder does not make it hot, just adds to the flavor!

I brought very little back home with me. The jicama and cucumber are very juicy and it was delicious served cold. I put it all in the refer for a couple hours and then mixed it all up again. By that time there was juice on the bottom to moisten it all up.

I just looked at the week 2 recipe ideas and was delighted to find the eggplant pizza recipe! We made this in High School Home Ec back in the 70's and I always remembered how good it was! Can't wait to try it. Probably this weekend. I have roommates and it's hard to get to the stove during the week. I use my George Forman grill ALOT. Great for chicken, fish AND veggies belive it or not!

protein pancakes:
1/2 cup oats
1/2 cup nonfat cottage cheese
4 large egg whites
dash of cinnamon


I enjoyed the flavor as I love pancakes, but the texture was a little off. Unfortunately, my kids requested that I continue to search for a pancake recipe. I think I will stick with these (as they do not require protein powder), but I will make the kids some "normal" pancakes.

Tilapia has been a huge help to me. I don't have to struggle so much with eating healthier options as I have to struggle with eating too much food (too many calories).

I like to coat a filet of Tilapia with Penzeys Lemon and Pepper combination. Then pan fry until finished. Depending on the pan, it may need a bit of olive oil.

I love the taste and for less than 150 calories, it's very filling.

Hubby has to have sauce on everything, so I usually microwave a bit of his salad dressing for his. He thinks my sauces are wonderful. lol

I tried the Chicken and Broccoli casserole, which was pretty darn good. I have all the ingredients for the Low carb cheesecake so that will be the next try. The hardest thing for me is most of the low carb recipes call for almond or coconut flour and where I live these flours are not sold. I can only find them online. I will keep looking though.

I have saved several recipes, but have not actually tried them. Work demands have been high and my husband does most of the cooking - and he is pretty scared of recipes. I will try some over the weekend. My favorite "sweet" lately has been a baked apple substitute. I cut the apple up in chuncks with the skins on. Drizzle light maple syrup (drizzle means less than teaspoon) and sprinkle with cinnamon and microwave for 1 1/2 minutes until soft. The juices in the apple sweeten and become syrupy.

I am a diabetic who is allergic to artificial sweetners - so I get excited when recipe says it is low sugar just to find the hidden wording for all the various sweetners. I would appreciate any recipes.

I made a mashed sweet potato and carrot recipe. Delicious!! I also made some homemade chicken broth for use in some yummy soup and in other recipes later in the week.

I made 2 recipes yesterday - Quinoa Black Bean Casserole and Chicken and Vegetable Stir Fry. The casserole turned out fine but I probably won't make it again - it's a little too different for me. The stir fry was amazing - brought it for lunch today instead of eating out - that's half way to my goal for the week!! emoticon

I would like some recipes for fish. I am not a baked fish fan at all but, my hubby loves it. If any one can tell how to bake fish and it has a little bit of crunch to it I would appreciate it.

My meals are usually normal meals I just have learned to cut back on portions. I find that I am eating a lot less but I know that I am not getting in enough veggies so this is a new issue that I have to conquer. Lifestyle changes are hard I must say and I am getting by but I am finding it hard to enjoy since I am on the go all the time and grab and go meals are not working in my brain, especially with the holidays but I am staying away from the dessert tables. I have only had one piece of pie and one piece of cake during the season. So that is saying a lot for me the junk food junkie.

I've been grilling zucchini, and even patty pan squash. I just sliced them, put them in a gallon ziploc bag with a mix of a Tbsp of extra virgin olive oil, garlic powder, a dash of salt and pepper. Marinate a few minutes then grill. Even my young teen liked it.

The recipe I made here was Rayne's Fried Zucchini, though I used a tiny bit of regular flour instead of soy and I left out the cheese since I didn't have any. It was still good.

I tried a recipe that I found on SP from another sparker. It was a makeover for ramen noodle salad called "Makeover Asian salad" I made it for the 4th of July instead of my usual taco salad and ramen noodle salad. It makes a very large bowl. The people who tried it really liked it, unfortunately it was made with cabbage and broccoli slaw, and I didn't realize that a lot of people that were here didn't like cabbage. But it was good.

We have been grilling zucchini for a side dish lately. I just slice it in half, spray with EVOO, and sprinkle a little seasoning on top. My hubby then grills it with whatever lean meat we are grilling. It's so tasty and hardly any calories or carbs.

For lunch today I made a delicious baked potato, much like one you use to be able to get at Rax's. You bake the potato in the microwave required time, then heat up some bbq beef ( I like Lloyds) and after you add margarine to your baked potato and season, top with 1/4 cup of bbq beef and then top with diced onion and if you like garnish with a little fancy shredded cheddar cheese, talk about delightful and good for you, this is awesome and a quick idea for lunch, and I accompanied the baked potato with a dish of my homemade cole slaw. Yummy fulfilling lunch.

I cooked the Garlic Brown Sugar Chicken tonite. It was ok for something different, but could have used more flavor. Shoes, the meatball recipe sounds like it would have been good with stir-fried vegetables.

I found a recipe for sugar free barbecue sauce
I have not tried it yet
2/3 cup Worcestershire sauce
1 cup slender
1 tablespoon canola oil
1 cup minced onion 2 cloves garlic
2 beef bouillon cubes
1 cup hot water 3 small cans of tomato paste3/4 Dijon mustard 1 teaspoon salt 1/2 cup cider vinegar
heat oil, cook onion, mix cubes, hot water dissolved, mix paste, mustard, salts, vinegar, stir until sweetener is dissolved,

This topic gave me an idea! I've been planning on binging on Easter Sunday. I have my eye on a piece of Safeway chocolate cake. But if I find a diabetic friendly recipe at one of the low-cal sweetener sites, especially if it's eggless, since I don't tolerate eggs well, I'll make that up and have it instead and then I won't have strayed quite so far. Or maybe some brownies. (Pretend you can't see me drooling.) I'll let you know if I have any luck.

I made my favorite turkey meatball recipe last night. It is soooo good. I posted it onto recipes it is called Parmesan Turkey Meatballs. The whole family loves them! I made what is called Chef's Spaghetti to go with it but, I used whole wheat spaghetti which we have permanently switched to. We actually like the nuttier texture better than regular pasta. The spaghetti was very good with tons of garlic! emoticon

We don't eat out very much at all! I cook all of our meals from scratch, homemade whole wheat bread and whole wheat pitas. I made a couple of low carb sides this week. I made a Tuscan Kale salad that my husband loves as well and an Asian Broccoli slaw with broccoli, red cabbage and carrots. We do Meatless Mondays and last night I made Polenta stuffed red peppers, it was pretty tasty! emoticon

It's been a busy week. We went to a concert, out to dinner for a birthday, and now my DH has a cold and doesn't want to eat right. I've been doing pretty good as far as chosing what to eat, but I haven't made it to the pool too much. I've been trying to make up for it with 10 minute bursts of exercise.

I think I may have to do week 2 over!

Have been using 'The SparkPeople Cookbook". Love the Garlic Chicken Slaw in Lettuce Cups. Made some for my husband and daughter and they really liked this recipe as well. "A keeper" we will prob. be using often.
Also, very much enjoy the Skinny Eggs Florentine recipe. I add extra spinach for more veggies in my day.

How do you eat an elephant?
