Welcome - your best chance to get off the roller coaster is to make small changes and stick to them. Turn those into habits and make more changes. I have seen improvements in all of the areas you mention and have a whole lot more weight still to lose. Pay attention to NSVs (non-scale victories) like your numbers on lab work and how your clothes fit and the weight will come off too.
