My husband isn't missing the heartburd, indigestion. He likes the fack that the foods I cook are light and he feels better. Our problem is that he is a beef and pork lover daughter is a chicken lover and I love mushrooms and seafood and don't enjoy pork. Family loves the salads and the fresh fruit.
Hi all I thought I would check out what some of us were eatting. I wanted a nacho type thing so I made them with mushrooms instead of chips. It was really good. Husband and clild had burgers no chips no fries and I just wanted something different and it was.
I made the other night for dinner chicken caccitore which consists of boneless and skinless chicken thighs which I brown on both sides. Then the sauce consists of garlic,onion, oregano, redpepper, diced tomatoes, tomato paste, mushrooms, Heat together with chicken and serve over brown rice.
I try to make the same dishes with liter ingredients. We have switched to Fat Free milk (that took some time), and fat free sourcream, lite or fat free cheese and we went through all of our pasta and changed everything to whole wheat. We don't eat any "white grain" and it is not really that different. Also I always serve a salad with dinner and have everyone eat that first. It took my husband time to adjust but his doctor was on my side. I have a three year old and she doesn't seem to mind. I figured that changing to healthier food now would be easier than later. I have taken a lot of my family recipes I've made over the years and just made them more healthy. Ways I have done that replacing regular ground beef with extra lean ground beef, adding more vegies, using brown rice instead of white, using fat free and reduced fat versions of products, etc. Instead of frying I saute, grill, bake or roast. For example--I toss cut potatoes with olive oil and make oven fries. They still crisp up, but I have greatly reduced the fat and used a healthier choice too. Lucky for me my family likes the new foods and don't complain unless I go too overboard =)
Same here with food exchanges. My family's fav right now is whole grain pasta, marinara sauce, and a veggie mixed in the sauce. For example, I may steam some broccoli, cut it into small pieces, and throw it in the sauce (about a cup of veggies per person). Top with parmesan, salt, and pepper and they love it. I occasionally buy Texas toast garlic bread to have on the side. If you follow the serving sizes for everything, it's a suprisingly healthy meal that really fills you up!

Hi it's just me and my bf, I do little things like the fat free sour cream, the smart choice spreads rising[sp] off the canned veggies, that gets the extra salt off them[when my bf saw me doing it he had a fit, but before that he never know the differnce!!] Cooking stir fried foods, baking most of the meats. He to is a meat pots kinda guy it's a up hill battle!!
My husband really prefers the meat and potato meals (or pasta) but he'll eat most of what I put down, just more of it, and less veggies that I have o my plate. I really try to make healthier versions of what we used to eat, rather then doing too much new, but then again, I've always tossed stuff in the fridge together, I now just have healthier ingredients! :)

Sorry I can't be much help because it's just my husband and me. He likes ANYTHING I put on the table so I'm very blessed in that area. I'll be interested in seeing what some ladies say that have children at home or a picky/skinny husband (LOL).
I know it has to be somewhat of a challenge for you. Hope you get some neat hints.
