Red Bell Pepper Frittata
I had a catered mexican party and had a bunch of left over red bell peppers and squash and knew i had to find the recipe from child hood that my gram used to make, basically eggs and peppers, let it cool and then make sandwiches... MMMMM!
Alas mom wasn't on line and i knew i had this recipe bookmarked!
Turned out fabulous! I used quinua - 1 cup cooked, and added thyme (same spice they have in the mushroom fritatta that is a staple in my house) and it turned out great!
The cheese on top you can totally skip if you are going to eat it cold or at room temp - completely un-needed!
I usually make the fritatta sunday night, and each morning of the week (mon-thurs) i take a piece out while i get ready for work and it is just right when it is time to eat!
