I'm a sucker for pumpkin pie, so I tried my best to find a healthier alternative. My friend gave me this recipe and it quickly became one of my favorites! It's got the flavor of pumpkin I crave, without all the fat and calories! It goes great in a graham cracker crust or as a dip for ginger snaps or vanilla wafers.
1/2 c. cold skim milk
1 6-serving package of Fat-Free vanilla instant pudding
1 t. pumpkin pie spice
1 c. canned pumpkin
2 1/2 c Fat-Free Cool-Whip
Beat the milk, pudding & spices for 1 minute. Stir in the pumpkin. Fold in the cool whip and enjoy!
