Ooh! I just bought my first spaghetti squash and am excited to make it this week. I'm also hoping to get my boyfriend on the bandwagon since he doesn't eat vegetables. Like, at all! We'll see how it goes. :)

I've been overweight/obese for over 10 years. How can I complain if it takes me a year or two to lose it??

My boyfriend didn't like it...still. *sigh* It was because of the consistency of it. It was pretty mushy when you get to the bottom of the bowl. I'm not sure if I over or under cooked it.

Made it last night with spinach, cauliflower, chicken, packaged alfredo sauce and fresh grated parmesan on top, WAY too good to be healthy!

I don't know, mine has always been like al dente pasta. bf says undercooked I say perfect.

Omg, it's so yummy! And I love that I can eat the most giant bowl ever of it and it's still a really low calorie meal. Win!!!

Mine did seem a little overly-moist. I've seen pictures of others cooking it and mine seemed more "soggy" than others, but it was still good. Did I need to cook them longer? Less?

If he likes spaghetti he will like it. I was a little worried at first because it really smelled squashy when we were pulling out the string parts. Im not a fan of butternut and that is what it smelled like. With the sauce and everything though it is AMAZING!

I've got to try this. I've heard so many people talk about this, but my boyfriend sounds grumpy about trying it, lol. Guess I should make some for myself for lunch and see what he thinks!

I didn't believe it when I was told its just like Spaghetti, I actually think it is BETTER!!!! You can eat so much of it too and its just veggies!

Take a spaghettig squash and poke it all over with a fork (all over, not just the top like bf did last night, took forever!)
Bake it at 375 for an hour
Scoop out the insides with a spoon
Take a fork and scrape out the squash its all stringy just like spaghetti
Mix with your favorite sauce (we make tomato meat with ground turkey) put in a casserole dish and bake for half an hour.
It makes a GIANT portion. I haven't froze any yet but Im sure it would be fine.

I can't wait to try it with chicken and alfredo sauce! mmmmmmmmmmmmmmmmmmm
