Reduced Fat/Calories: Being a Jersey Girl I gotta have my cannolis...a good substitute that I have for breakfast is 2 waffles of your choice (I really like the Van's Multigrain) 1/2 c of fat free ricotta, I tablespoon of chocolate chips and sweetner of your choice (this am I used a stevia sweetner) mix the cho chips and sweetner into the ricotta and divide between the 2 waffles. emoticon

I made the BEST dessert last night

6 peaches, halved and pitted
1 can tart cherries canned in water (drained)
2 cups white zinfandel wine
1 stick cinnamon
3 oz. white chocolate baking bar
1/2 tsp. butter

in a large frying pan bring the wine and cinnamon to a boil
add the peaches and cherries, cover and simmer 10 minutes or until the peaches are tender
remove the fruit and place in serving dish
continue to simmer the wine and cinnamon, stirring often, until it reduces to about 1/2 cup of syrup, discard the cinnamon stick, drizzle syrup over fruit
in a small bowl microwave the white chocolate and butter for about 1.5 minutes, stirring once, until melted, drizzle over the fruit
serve hot

makes 6 servings

It's not really a recipe, but I like to grill veggies.
Grilled summer squash, eggplant, zukes, peppers, mushrooms. Cut them in about 1/2" pcs. rub with olive oil or Italian dressing so they don't stick to grill.
Any leftovers used mixed with pasta or rice make a great lunch the next day.

Just wanted to create this spot for everyone to share their favortie recipes. Post according to dietary need to keep things organized, eg, put vegan in the title if it is a vegan recipe, low carb, low fat etc etc.
