I like to have a salad and veggie at lunch time (with my protein). Then it's veggies with protein at dinner. I am not a fruit eater, so I have to get creative!

This is both getting more veggies and helping me feel full and eat less at dinner. I'm usually starving when I get home for dinner and so I found that if I eat some raw cauliflower when I first get in the door, before I change clothes and get dinner going, it tides me over and I feel extra full when it's time to eat so I don't eat as much for dinner! I like to dip it in just a touch of lowfat dressing or veggie dip, just enough to give it a bit of flavor and make it a "treat!" Plus I'm getting all of those good nutrients from the cauliflower!

I don't get in enough veggies but this dish helps out a lot whenever I eat. A pasta salad!! Whole wheat pasta some kind of meat I use italian turkey sausage and veggies I out broccoli sweet peas carrots peppers or any thing else that I can find (not all of them at once) I like colors so I use different colored veggies. And after mixing it all together put some salad dressing any kind and toss it. It's great and it's a one pot(not really) meal and very quick.
I don't have to many ideas so I am looking forward to hearing all of the ideas suggested.

I never buy iceberg either. Usually romaine and spinach. I will try the artichokes and kale. WE all love veggie soups but not with a grilled chicken breast or fish.

Don't know how old the kids are, but it never hurts to look at what's fresh in your produce section. Even if you've never made it before, there are lots of online recipes. Make sure you try different types of salad greens (I never buy iceberg). Try artichoke hearts, vegetable soups, and kale. Eat the rainbow!

I love all fruits and eat a ton of them everyday. But I am getting bored with salads and my typical dinner side of broccoli, asparagus, or green beans. Any suggestions on how to up my veggie intake that the rest of the family will enjoy too?
