hey everyone this is cool idea. So the goals that I am going to join for the week is the eight glasses of water and new produce. I saw this honey pomelo melon the other day at the store and though that might be cool so I am going to try that this week for my challenge.

This challenge has motivated me to try some new veggies. I bought spaghetti squash today. I can't wait to try that. I also got some fresh broccoli, yellow squash, and zucchini. I have had those things before, but I normally buy my veggies frozen. I'm lazy I guess. I'm looking forward to roasting them. AND I bought kale! It says "baby" kale on the package. Is that any different than regular kale? I thought it it is a milder taste I might be able to sneak a little into my salads. Thank you all for posting your suggestions on cooking it.

It is 5:30 am and I have had a healthy breakfast and half my daily water goal has been met! In fairness, I work nights, so I started... Um well..., yesterday (but I reset my "goals" at midnight. I will likely have "second breakfast" when I go home and I won't drink another 32 oz of water while I am sleeping. I know you can all catch up to me during my nap.

I'd just like to add my support for kale.
I've done it as "chips" too - my hubby and son liked it, I thought it was dreadful.
Soup and stew - fine, cos it can stand any amount of cooking.
To eat as a veg, I prefer it cooked in boiling water for as long as it takes to soften it all up. I don't waste the cooking water, though - I always drain in into a pan for soup, which my hubby has for lunch every day.
I love boiled kale as a veg with mince or stew - something with a really good gravy.

I have been totally slacking off on water lately, thanks for the reminder!

For breakfast I have been loving the Special K Flatbread breakfast sandwiches. 240 calories and 14 g protein. I don't even think about lunch until... Lunch time!

I saw some "eeew kale" messages. Kale is tough. It doesn't really taste good, and it's dry and stringy and hard to chew. But it is so so good for you! Here are my suggestions

Try toasting it on a cookie sheet with some olive oil, salt, pepper and garlic powder, into "Kale chips" (which are not actually good by the way, no matter what people say, so I don't advise eating them like this) Then crush the "chips" into soup, salad, tuna, omelets, anything! You can buy kale chips at the supermarket but store bought brands will have loads of sodium.

Kale is great the crockpot too, because it doesn't get squishy. I use scissors to cut it into small pieces and then I put it in soup, stews, crock pot chicken dishes. (Like Tikka Masala!)
I also like to throw it into omelets and scrambled eggs (cut it really small otherwise It will be stringy)
AND there is very little moisture in it, so it doesn't rot quickly like spinach does. it lasts a long time, so I almost never have to throw any away.

Drinking 8 glasses of water daily is a worthy goal for me. I have gotten out of the habit. Thanks for the goal. I shall reach it!

I can easily do the water & healthy breakfast. I will walk every day some distance as I am able.

I should be able to drink 8 cups of water and eat a healthy breakfast. I live in the midwest, so I'll try for the walk a day, but may not be able to do so.

for me I will do the breakfast, water, and note (skip the new produce as no new fresh produce allowed in my diet right now, probably won't make it on the walk this week either, still pretty exhausted) and I'll make #6 sleeping 8 hours a night, in my bed, not on the couch.

I'll choose water and breakfast. Then an either/or of walking or contacting another member - depends on the weather and my flu!

No 5 is a bit difficult for me as I seem to have tried just about everything that I can buy locally - apart from chilli peppers of any sort.
