I was successful in all 3 challenges!

11/14 - baby carrots, baby bella mushrooms, artichoke & garlic salsa, low sodium V-8 juice

11/15 - roasted tomato & red pepper soup, lentils, onions & sundried tomatoes. Also had 2 slices pizza with sauce and mushrooms & banana peppers (1st one)and eggplant & sundried tomatoes (2nd one)

11/16 - baby carrots, snow peas, roasted tomato & red pepper soup, lentils, onions & sundried tomatoes

11/17 - baby carrots, mushrooms, spinach, mixed greens, cucumber, chickpeas, broccoli, cherry tomatoes, kale, artichoke & garlic salsa, Also had a slice of pizza with sauce and eggplant & sundried tomatoes

I wasn't able to keep a record of what I had to eat this week, unfortunately, but I did eat at least 3-5 servings of vegetables every day and while I did not try a new to me vegetable, I did try some new to me vegetable dishes (sadly, they are Indian dishes and I have no idea what they were called. Tasty though).

Yesterday I had mashed potato and corn. Not enough. This morning I found some cauliflower in the freezer so I'll work at getting more veggies in.

Nope, fruits don't count this week. Not for the Veggie challenge anyway.

Monday I had three servings of carrots. Wanted to finish off some leftovers. I was going to have a mixed veggie but I let the poor pan of veggies burn dry (not on purpose)!

Tuesday I had .....? I don't remember. I've been eating entirely too many sandwich type meals and not enough veggies.

Today so far I have had cucumber and onion salad. I'll have more veggies for supper. I know I'll be having beans and tomatoes.

Can I count potato chips? NOT! emoticon

Okay, on Monday, I had servings of mashed potatoes and corn in my Banquet meal for lunch, cauliflower with my dinner and I snacked on celery sticks throughout the day. So far today, I had two cups of mixed vegies stir fry (done in the microwave, not fried) which contained broccoli, carrots, corn, pea pods, red pepper and water chestnuts.

One can eat too many vegetables. I will do #2. Would like to try eat a new veggie everyday but was placed on a new eating plan and can't eat anything new. We are eliminating.

For a quick 'veggie fix'...
My favorite veggies are celery, radishes, and carrots. I like to cut them up and have them ready in the fridge...kinda my veggie trail mix.


With a little planning and 'fussing'...
My all time favorite is sweet potato 'fries' baked in the oven.
I also love squash.

I'm in for this challenge. My favorite is high calorie Corn! After all, I'm from the Midwest in the States...where the corn grows tall. In fact, I am a Cornhusker (from Nebraska)!!!

I'll let you know how I do with the veggie challenge during the week.

Ok, let's work on Vegetables this week. Do you like to eat veggies? What is your favorite veggie? How many veggies do you eat a day?

Choose one or more of these challenges for the week.

1. Eat more veggies than usual. If you usually eat three a day, eat four or five veggies, etc. At the end of the week let us know how you did.

2. Let us know each day what veggies you ate for that day.

3. Try eating a new veggie, new to you that is. What did you try? Did you like it?

4. Find a new Veggie recipe and fix it and let us know what you fixed if if you liked it.
