Oriental bean salad made with dried beans and yellow & green peas, spelt pasta, vegetables, dressing with apple cider vinegar, organic kind with " mother" in it. Without this it is no good for your health, sesame oil, low sodium soy sauce and spices. It takes almost 2 hours to cook everything first, it made 8 cups & I had 1 cup as it includes lots of protein in legumes and spelt noodles, carbohydrates and fat. You could have more vegetables as a side dish.

Cooked Quinoa in a pot. Then used some organic chicken broth in a frying pan and added lots of vegetables to it and 2 tablespoons soy butter for flavor, just before done added the Quinoa, I am allergic to lots of foods.

I just had a 4 oz ribeye steak wrapped in bacon with sauteed onions and green peppers. I had a sweet potato for lunch with molly mcbutter. For breakfast i had a yogurt smoothie with sliced bananas.

I love Moussaka. The key to keep from getting it soupy, for me is to sweat the eggplant for a while. Slice them, then sprinkle salt on them and let them sit for about 1/2 and hour. The salt draws the water out of the eggplant. Rinse VERY well and then follow the directions.

My problem is I can never get the eggplants crispy enough, they always get mushy. I think my slices are too big.

Good to know I can still enjoy my favorite dish. :)

Parm Swai and string beans with diced tomatoes for lunch

Enjoying the last three days of fresh garden produce. When we return from vacation, it will be from the Freezer or from the store...
Breakfast - onion, sweet pepper, yellow squash, zucchini finely chopped into omelette
---watermelon, hot tea

Dinner, sauted onion, green zucchini, yellow squash in olive oil, added polish sausage which is probably not too good for me but small portion for the evening protein.
---avocado, chopped fine with tomato and a bit of onion, tried a bit of olive oil instead of usual dressing and it was pretty good. Spiced both with Italian seasoning and a bit of garlic.
---banana "coins" around a dish of yogurt

I spoon flax seed oil into my fruit smoothies or porridge.
You can't cook with the oil but can use it in dressings for salads, stir into pasta, or use over vegetables in place of butter.

You can get capsules which are just as effective and you just swallow with water.

I bought leeks by mistake (don't ask)

Since I don't usually cook them, I had to google a recipe.
This is what I found:

Sautéed Carrots and Leeks
2 leeks, finely chopped
4 carrots, finely chopped
1/3 cup chicken broth
2 tablespoons butter
1 tablespoon white sugar
1/2 teaspoon dried thyme
1/2 teaspoon kosher salt
1/8 teaspoon ground black pepper

Directions
1.Combine leeks, carrots, chicken broth, butter, sugar, thyme, salt, and pepper in a skillet; bring to a boil.
Reduce heat and simmer until liquid evaporates, about 15 minutes. Cook and stir mixture until leeks and carrots are lightly browned, 2 to 3 minutes.

It was really good
(though my leeks were really sandy/dirty and needed rinsing)

Last night I made lean pork meatballs with half the breadcrumbs and some oatmeal. The pasta had added fiber and Omega3. I have this because I am allergic to fish and cannot have nuts either. I do eat olives often for another alternative.

The tomato sauce had no sugar and low sodium; I used organic. I had a big batch of green beans made with garlic and a little olive oil. It had onions and a little bit of tomato sauce... quite delicious!

JINLYNN I made the moussaka with eggplant, but I think it would be great with zucchini too.
When I had the first piece after cooling it for 30 min or so out of the oven it was real soupy. But later it was not soupy and more like lasagna.
I think I'll try it with zucchini the next time. I did roast the eggplant a little per some one's suggestion, but I would chop it up a little to make it easier to scoop out into portions when done.

We went shopping @ Costco today and they had Fresh Tilapia that was covered with a sun dried tomatoes & basil dredging! Yummy... (I hope)! We're having that for dinner with a romaine lettuce salad and a baked potato.

This week we are having:

Chicken salad with carrots

Grilled chicken, corn and green beans

Sloppy joes (turkey & sneaking spinach in there....kids will nevah know!) with corn and carrots

Spaghetti (whole wheat--sneaking in spinach here too) with salad

I think that's it. We'll do left overs a couple of nights and are supposed to go out to eat with the in-laws at some point.
