I bought leeks by mistake (don't ask)
Since I don't usually cook them, I had to google a recipe. This is what I found:
Sautéed Carrots and Leeks 2 leeks, finely chopped 4 carrots, finely chopped 1/3 cup chicken broth 2 tablespoons butter 1 tablespoon white sugar 1/2 teaspoon dried thyme 1/2 teaspoon kosher salt 1/8 teaspoon ground black pepper
Directions 1.Combine leeks, carrots, chicken broth, butter, sugar, thyme, salt, and pepper in a skillet; bring to a boil. Reduce heat and simmer until liquid evaporates, about 15 minutes. Cook and stir mixture until leeks and carrots are lightly browned, 2 to 3 minutes.
It was really good (though my leeks were really sandy/dirty and needed rinsing)

Last night I made lean pork meatballs with half the breadcrumbs and some oatmeal. The pasta had added fiber and Omega3. I have this because I am allergic to fish and cannot have nuts either. I do eat olives often for another alternative.
The tomato sauce had no sugar and low sodium; I used organic. I had a big batch of green beans made with garlic and a little olive oil. It had onions and a little bit of tomato sauce... quite delicious!

That sounds great! Yesterday I had a big batch of veggies with garlic, olive oil and a litle stuffing mixed in it.

JINLYNN I made the moussaka with eggplant, but I think it would be great with zucchini too. When I had the first piece after cooling it for 30 min or so out of the oven it was real soupy. But later it was not soupy and more like lasagna. I think I'll try it with zucchini the next time. I did roast the eggplant a little per some one's suggestion, but I would chop it up a little to make it easier to scoop out into portions when done.

We went shopping @ Costco today and they had Fresh Tilapia that was covered with a sun dried tomatoes & basil dredging! Yummy... (I hope)! We're having that for dinner with a romaine lettuce salad and a baked potato.

All y'all are doing so much better than me at eating Mediterranean style! I need to step up my game. We are still stuck in pork chop, taco, spaghetti, lunch meat city. I got some Med. Diet cookbooks from the library so I could start making some Med. dinners, but I have only gotten as far as looking through one - haven't tried a single recipe yet. Blah. Need to add a goal of fixing Med meals so I can use my point fetish to help me out!

One Mediterranean salad that I love is: Tomatoes cut in wedges Cucumbers sliced Red Onion halved & sliced Black Olives cut in 1/2 dressed with OVOO & Red Wine Vinegar. Salt to taste with Lawreys Seasoned salt and fresh cracked black pepper.

It was really good, both sweet and tangy. The original recipe calls for imported black olives as well. That would add another layer of complexity.
Kids taste are a bit more basic. It can add a challenge to eating healthy when they want to eat food like Mac and cheese. But you are so lucky to have grandkids.

Wow! That salad sounds refreshing! Tonight we are picking up three granddaughters from gymnastics and feeding them dinner before their mom gets home from work. I'm just doing something easy... and something they will eat. I bought a frozen chicken fettuccine dinner. I will probably just eat the side salad and some broccoli. It won't be as good as that Mahi-Mahi we had last night! YUMMY!

I made walleye tonight and followed the recipe for the Mahi-Mahi except I added a small amount of bread crumb. It was excellent. But the real treat of the meal was an orange onion salad. It is a take off of a recipe in the Mediterranean Harvest book I have mentioned before. My version (because I didn't have all the ingredients on hand for the books recipe) is one orange, cut off all the pith and slice. Place on a plate. A couple of thin slices of onion soaked in water for about 10 minuets to take out the bite. Drain and put that on top of the orange. Top with a drizzle of a dressing made of 2 T lemon juice, 1/4 t freshly ground cumin seeds (next time I'll double this) salt and fresh ground pepper to taste, and 4T olive oil. This is for one but there is plenty of dressing left over for more servings.

Was it as good as it sounds?
I had half a can of sardines, steamed broccoli and tomato's topped with a sprinkle of oregano and four basil leaves sliced. Finished it off with a banana, strawberry smoothie sweetened only by the natural goodness of the fruit. I put a T of flax seed in the smoothie to try and up my nutrients. It turned out well. The total meal contained about 6 servings of fruits and vegetables. Before I started back at sparks I would be lucky to get 2 servings of healthy vegetables a day.
This spell check feature is a hoot. I misspelled vegetables and for a correction it suggested the word football's

"Grandma Duty" should be under both Cardio & Weights! It's a gradual weight gain, and you would think that I would be getting used to it... but I'm sore tonight! Now that she's getting a little older there is up and down from the floor a lot, so that is another type of exercise. Right?

Darn! That Mahi-Mahi dinner didn't happen tonight, maybe tomorrow. Both DH and I were so pooped from caring for the grand baby today that we opted for fried egg sandwiches with a side of cantaloupe. Not a perfect choice for my diet, but it wasn't over the top on calories.

Your meal sounds wonderful as well. Although our weather is definitely better. We are having blue sky, lower humidity, and highs in the lower 80's. The evenings are just delightful for spending out on the patio. I melt in high heat. If I can figure a way to do it I will send our weather your way.

It is so hot here today that we are going out on the deck to grill. Tonight we are having grilled pork chops, small baked potatoes, broccoli and a fruit salad of watermelon, cantaloupe & pineapple.

I've always liked fish. Tonight I had a small serving Salmon and steamed several servings of Broccoli rabe and green beans, with slices of onions and garlic for extra flavoring. I made more baked tomato's with a small amount of cheese on top. Lemon was used to garnish the salmon, and fresh basil leaves for the vegetables. I made enough for my lunch tomorrow. I cook simply as it is just me in the house these days but with the fresh food of summer I feel like I am eating like a queen.

Yumm! That was very Mediterranean! I struggle with sardines, but have been trying to get used to them because they are so healthy to eat.
I've been eating frozen grapes lately for my snacks & when I have a craving for something cold. There are a lot fewer calories in grapes than in ice cream!

A baked tomato sprinkled with a little salt, pepper, oregano, and cheese. Accompanied with a bread stick cracker, the balance of the cheese (to make it one oz) and a half a can of Sardines. For desert I had a smoothie made out of 1/2 cup strawberries, 1/2 banana,(both frozen) 1/4 cup yogurt, and 3 oz of pineapple juice. It felt very Mediteranian. And the smoothie was better than ice cream.

Tonight we tried grilling Ahi Tuna. Here's the recipe we followed: recipes.sparkpeople.com/recipe-detail.asp? recipe=353278 We used frozen Ahi Tuna. It was excellent but DH cooked it a little too long. Careful not to cook too long. Makes the tuna too dry.
We had it along with asparagus, romaine lettuce salad & watermelon.
Try some fish recipes... I think you will be pleasantly surprised. Especially with Ahi Tuna -- it does NOT taste fishy at all!

Hubby is not eating dinner today. He eats too much for lunch and only wants to eat 1200 calories a day. So he skips dinner. I have only had under 900 calories so far so I plan to have what ever vegetables, which I will saute with some olive oil and garlic. that I have in the refrigerator with a cream of broccoli soup and some watermelon. If I have any calories left and am still hungry I will weigh out my options. But I think I will be going to a meeting tonight so I will allow enough left over for what ever snack is there. I allow myself to eat to my calorie range.

I've been reading a book on the Mediterranean Diet and decided to make my own conction today for lunch and will also have some for dinner with some of the ingredients used in this fare! I like experimenting!!
I cooked up some penne pasta (Barilla Plus, which is really good - can't stand the whole wheat stuff). I then very lightly sauteed some onion, garlic, green pepper, tomato, olives, and chickpeas in olive oil and a little bit of lemon juice. Added some salt and pepper with some other spices/herbs for extra flavor. Also topped with parmesean cheese.
Mixed it all together to see what it all tasted like and thought it wasn't too bad. It was nice and light and no tomato sauce, which I need to watch for the acid. I have acid reflux so I also have to watch out for the garlic too.
I have a ways to go to learn about this diet and to learn some great recipes. Can't wait for the book I requested from the library on all vegetarian recipes for the Mediterranean Diet. If I like it, I will buy it.

I had Smoked Salmon poached in Milk and Parsley with a side salad of Spanish Onion, Roma Tomato,Romaine Lettuce,Black Olive,Grated Carrot,slice of Advocado, and a sprinkling of Grated Parmasan cheese.
I had large romaine salad, with home grown cherry tomatoes, bell peppers, red onion, garbanzo beans, olive oil & balsamic vinegar. Half a baked sweet potato with a glass of skim milk. I really enjoyed this meal.
