Frozen Coffee


Ingredients:
4 Cups strong brewed coffee (espresso or regular)
Splenda to taste
3/4 Cup heavy cream
1/2 tsp vanilla extract
2 tsp brandy

Pour coffee and desired sweetener into ice cube trays and freeze hard. Prepare whipped topping right before you're ready to serve. Whip the cream and blend in the other ingredients. Refrigerate. Empty the frozen coffee cubes into the food processor — you may have to do this in batches — and process until you have a chunky slush. Serve immediately with the flavored whipped cream.

Makes 6 Servings. Less than 1 net gram of carbohydrate per serving.

Eggnog - 8 net carbs per serving
The holiday season is here. One of my family's traditions was always to have eggnog on Christmas Eve. I mixed up a batch last night to try my hand at making a low-carb version. I must say that I like it as much as the high-carb version.

5 servings @ 8 net carbs each.

Ingredients:
4 cups Hood Calorie Countdown Dairy Beverage
1 cup heavy whipping cream (not whipped)
1 cup equivalent to sugar (I used 1/4 t. Sweetzfree)
7 large egg yokes
1 T. vanilla
Nutmeg (optional)

Instructions:
Add all ingredients to saucepan on medium high. Whisk (or use beaters) while cooking, making sure to keep it moving so as to not scorch the bottom for 7 to 10 minutes until thickened. To see if it is done, insert a spoon and if a thin film sticks to the spoon, it is ready. Remove from heat and continue whisking occasionally as it cools. Then chill in refrigerator for 8 hours or more. If desired, after cooling, add alcohol. Serve with a little nutmeg sprinkled on top.

Frothy Hot Chocolate

Whipping this otherwise old-fashioned hot chocolate creates the illusion of creaminess.
15 Minutes to Prepare and Cook


Ingredients

4 1/2 cups low-fat milk
1/3 cup Splenda
2 tablespoons unsweetened cocoa powder
1 1/2 teaspoons vanilla extract
1 1/2 teaspoons ground cinnamon


Directions
Whisk together 1/2 cup milk, Splenda, cocoa, vanilla and cinnamon in a small bowl until a smooth paste forms. Heat the remaining 4 cups milk in a medium saucepan until steaming. Remove from heat and whisk vigorously. Whisk the cocoa mixture into the milk and pour into mugs.

"NO EGG" NOG

Nutritionat Information

Serving size: 8 ounces

Ingredients

1 pkg (4 serving size) sugar-free instant vanilla pudding mix
4 packets Equal®
7 cups skim milk
1/2 teaspoon nutmeg
1 12 ounce can evaporated skim milk
2 teaspoons imitation rum flavor extract


Preparation

In half gallon pitcher or large deep bowl, combine pudding mix, Equal® and 2 cups milk.
With wire wisk or electric mixer, mix completely for approximately 1 minute.
Add 3 more cups of milk and continue to mix.
Add nutmeg, evaporated milk, rum flavor extract and remaining milk. Mix again and
chill several hours

Cherry Berry Freeze

Bursting with the flavor of deep, dark cherries, this is so easy to
make, yet oh-so delicious. It's also a great choice for those who
prefer something dairy or fat-free.

1 cup light cranberry juice
1 cup frozen dark cherries (without added sugar)
2 tablespoons Splenda
1-2 drops almond extract (optional)
1/2 cup crushed ice

Place all of the ingredients into a blender. Blend on high
until ice is completely incorporated. Makes two servings.
