I just read through the thread here when I was first looking for recipes. I guess if you know of a recipe that you already saw here you could put a title in the search box and it will locate it for you, but I'm really not sure how it works.

Hello, I've just rejoined. I had lost well on Dukan a couple of years ago but didn't keep it up as it's quite expensive and the economy is not rosy in Greece. But now I'm heavier than when I first did Dukan so I'm back.
I'm trying to find some recipes here but I can't work out how they are organised. This section also seems to contain questions about the programme? I tried a search for something but couldn't find a recipe. Please help. Once I understand where to post I can share some recipes too.

Thanks for sharing Sugarfreebie! I love having new resources for Dukan information and recipes. While losing my weight I did not eat fruit-flavored yogurt for that very reason. Dukan warns us about it in his US book version. You can add flavorings like, sugar-free jello, sugar-free drink flavors (like Mio), etc. to plain yogurt, if you like though.

Have you used any of her recipes, if so please share them with us here?

Found another excellent recipe source recently called dukandietsite. The lady who runs it lives in Britain but she is excellent about taking into account the different measurement systems etc. She is also very aware of the differences on the food lists between the US and the UK; apparently the fatfree dairy products are far more readily available here than in Europe. If you have questions you can post them there and she is wonderful about replying promptly.
For example, she posted about the upper limit for carbs in a serving of fuit-flavored yogurt, expressed in the European system of grams (7 in this case) per 100 gms of food. The standard 6 oz American carton of yogurt is 170 gms; w/ a little math that came out to 12 gms carbs per carton max. Europeans have been using Dukan for a LOT longer than we have so they have answers to many of the questions we might not know we had.

I made a great chicken salad today, it is even better if you make it a day ahead and let the flavors blend in the fridge.

cooked chicken breast, chopped
celery, chopped
red onion, chopped

Mexican Chicken

1 frozen chicken breast
1 TBS salsa
1 oz of cheese

Cook the chicken breast any way you like in a skillet or bake. When its done add the salsa and cheese and bake until cheese is bubbly then top with FF sour cream or plain yogurt.

I love this on PV days with a salad.

I also heard one on Dr. Oz from Hungry Girl that I'm going to try:
1 cups plain Greek yogurt
1 1/2 Tbsp. Hidden Valley Ranch dressing mix
Add skim milk to desired consistency

Here is one that I love to use:

Italian Tomato Basil Dressing
6 sun-dried tomatoes (not packed in oil)
1 tomato, coarsely chopped (about 1 cup) I used about 9 very sweet cherry tomatoes
1 garlic clove, minced
1/4 cup chopped fresh basil
1/4 cup water
2 Tbsp. balsamic vinegar
1/4 tsp. salt

Cover the sun-dried tomatoes with boiling water and set aside until soft.

Combine in a blender or food processor (I used my small Magic Bullet container) the cherry tomatoes, garlic, basil, 1/4 cup water, vinegar, and salt. Blend.

Drain the softened sun-dried tomatoes and add them to the other ingredients and blend until mixture is smooth.

Cover and refrigerate, will keep for about a week.

I also had a yummy breakfast. I used to love McDonalds Bacon Egg McMuffins. I haven't had one for 7 years since I was diagnosed with Celiac Disease and can't have the muffin. This morning another bell went off in the old brain and I made one using the Dukan muffin. These are made with 3 egg yolks mixed with 3oz ff cream cheese and then 3 whipped egg whites folded into the yolk mixture. Bake 1/2 hour at 350. makes 6 separate buns. I make a batch and freeze them and then just take out what I want for a sandwich or hamburger. This morning I fried up some Turkey bacon, put it on my egg with some ff cheddar cheese and put it between 2 buns. Talk about yummy. I felt like I was really cheating.

I just tried one this morning. I have been flavoring my yogurt with MIO water enhancer for a long time. I was making some meringues this morning and a light went off in the old brain....I decided to try the lemon water enhancer to flavor them. They turned out great. Kind of like a lemon meringue pie...... sort of.

Here's a hint! Fromage Frais can be replaced with cottage cheese that has been blended or processed until smooth!
Fake quark can be made by straining gelatin free plain yoghurt through a cheese cloth until it is reduced to about half, but I imagine this would increase the fat percentage.

I googled Dukan Muffin recipes and found a recipe for muffins that use baking powder, not soda. It adds a bit of shredded carrot as well. I'm going to bake them today and see how they taste and how they freeze!

I also modified a shephard's pie recipe yesterday and it turned out amazing. Hubby is still raving about it. I used very lean ground beef, garlic, onion, low-sodium soy sauce and pepper for the based...added green beans. Topping was cooked fresh cauliflower pureed with a bit of pepper and fat free cheese. We'll be fixing it again!

I tried this today for breakfast! I mixed it in my coffee mug, nuked it, and even ate it out of the mug!! A one dish meal if you want it to be that way!!! I liked it, very filling and it took awhile to eat. I think next time I will make with less baking soda as I could taste the soda in my muffin. Thanks for sharing. emoticon

Finally made the Buffalo Chicken Dip recipe...Dukan Style! It made a 9x13 pan and is amazing (if you like this kind of stuff). I ate it with celery sticks...hubby used bread, tortillas, etc.

2 cans white chicken meat
I also chopped up two grilled chicken breasts that needed to be used up
8 oz ff cream cheese
1 cup ff cheddar cheese
1/2 cup reduced fat blue cheese crumbles
Hot wing sauce to taste (I used Frank's Buffalo - no sugar, no fat) - used about 1/2 cup

Mix all together and bake at 350 until bubbly. I sprinkled a bit of shredded 2% Italian Three cheese on top during the last 5 minutes of baking. Husband says this is a repeat recipe..I say it's a treat since the sodium and cheese it on the high side. If you get along well with cheese, you should be fine. Enjoy!

i tried the breakfast muffin today and found it was a nice change!

2 T oat bran
1 egg
1 pkt. splenda
1/2 tsp. cinnamon
1/4 tsp. baking soda
appx. 1 T skim milk


Mix the ingredients together until it resembles a firm cake batter. Pour into a coffee cup and microwave for one minute. The muffin will pop right out. It resembles a cupcake. I read that cocoa is good in these as well.

my daughter makes amazing jalapeno appetizers and i modified her recipe, Dukan style! They are amazing!

12 jalapeno's
8 oz FF cream cheese
1 lb. turkey sausage
FF Cheddar Cheese

cut the jalapeno's in half, scrape out seeds. Brown sausage, mix in cream cheese and cheddar cheese to suit you (about a cup works).

spoon the sausage/cheese mix into the jalapeno's. you can sprinkle a bit more cheddar on top or even sprinkle with reduced fat parmesan cheese. Bake at 350 for about 20 minutes.

If you're cooking for one, you can reduce the ingredients above and then just bake the number of peppers you want at a time. the sausage/cheese mixture will keep in the fridge.

my daughter makes these with parmesan cheese instead of the FF cheddar. I'm also going to try making them with the 2% Italian three cheese next time. Something different and my goodness....here's what to take to that holiday event that is amazing and you know safe for you PV day!

3 eggs
3/4 cup of oat flour
3/4 cup of skim milk

Beat eggs. Slowly add flour. Slowly add milk.
Spray skillet with Pam.
Cook 1/3 cup of batter in skillet, turning when brown.

Can be used for wraps or burritos or pancakes.
Batter keeps well in the fridge for a few days.

I made this last night and it was easy and delic!

Preheat oven to 400 degrees. Pull off a long strip of foil (one per person) and fold in half to make a sturdy holder for a foil packet. Put a small handful of haricot verts (thin string beans) on the foil. Top with a salmon fillet. Put a heaping tablespoon of basic pesto on top of the salmon. Squeeze some fresh lemon juice over the whole thing and then season with salt and pepper. Fold the edges of the foil together to seal and form a packet. Put on a baking sheet and bake for 15-20 minutes. Let it sit for a minute before you open the packet.

Here's a dish I make a LOT. If you like garlic, you'll love this! (I don't use the white wine. I drizzle a bit of olive oil over the chicken and add some chicken stock to the bottom of the pan.)

Chicken and Sausage Garlic Bake from Family Fun-
1 whole chicken, cut into 8 pieces
1 pound sweet chicken Italian sausage, each link cut into thirds
1/4 cup olive oil
juice from 1 lemon
1 teaspoon dried thyme
1 teaspoon dried sage, crumbled
1 teaspoon salt
1/2 teaspoon pepper
1/2 cup dry white wine or 1/2 cup chicken broth

Directions

Preheat oven to 400 degrees. Place chicken (skin side up), garlic and sausage in a roasting pan. Season each piece of chicken with salt and pepper, and sprinkle with the herbs.
Squeeze lemon juice over the chicken, then drizzle the olive oil over everything in the pan. Shake the pan to distribute the oil a bit.
Place pan on a rack in the middle of the oven and bake for one hour, or until chicken is cooked through.
Place chicken, sausage and garlic on a large platter and cover with foil. If desired pour off all but 2 tablespoons of the drippings from the roasting pan, then place pan on a burner over medium heat. Add 1/2 cup of dry white wine or chicken broth and simmer until mixture is reduced by half. Serve alongside the chicken.

Made this last night but used fresh yellow peppers and a store bought cajun spice blend instead..YUMMY!!

CAJUN CHICKEN AND SPAGHETTI SQUASH CASSEROLE

1 lb ground chicken breast, browned and crumbled
1-2 t cajun spices, recipe below
1/2 roasted spaghetti squash, recipe below
2 T dried red bell pepper, like the kind of Penzey’s
1 cup fat free cottage cheese
2 T oat bran
1 t Parmesan cheese, finely grated
salt and pepper

Mix all the ingredients down to the oat bran, in a large bowl. Season with salt and pepper. Pour mixture into a small casserole dish and sprinkle the top with the oat bran and then the Parmesan. Bake at 350 for 25-30 minutes.

Cajun Chicken and Spaghetti Squash Casserole

ROASTED SPAGHETTI SQUASH

Cut the spaghetti squash in half lengthwise, scoop out the seeds, and roast at 350, cut side down on a cookie sheet, for 45 minutes.

CAJUN SPICE MIX

1 T granulated garlic
1 T granulated onion
1 T smoked paprika
2 t fresh thyme, chopped
2 t dried oregano
2 t pepper
2 t salt

Mix all ingredients together and store in an airtight container.

Found this on another site (Dukaners.com):
Oat Bran Cracker:
2 Tablespoons of Oat Bran
1 tablespoon of nonfat Milk

Seasoning ( I am not shy about it) I put in crushed red pepper, dried basil, dried garlic, dried oregano (you could do a sweet cracker too w/ splenda and other seasoning like cinnamon)
I mixed it all up really well and flattened it to about a 4x4 inches.. I microwaved for about 1 minute 10 seconds.. Then I flipped it again & micro waved it for 1 min 10 seconds.. Let it sit and cool

Another from dukanitout:
1 packet of rapid rise active yeast
1/2 cup warm water
1/2 cup of oat bran
1/2 t olive oil
pinch of salt

Pour yeast over the warm water and let it sit for 10 minutes until it starts to bubble. Place the bowl over simmering water and add the oat bran, a pinch of salt, and olive oil, slowly, until a very sticky ball of dough forms. Keep stirring until the moisture is absorbed and it resembles a ball of dough. Spray a glass bowl with olive oil spray, place the dough in the bowl, cover with a kitchen towel and let rise in a warm place for an hour. The dough will not rise much but it will lose it’s stickiness and become much easier to handle. Place the dough between two pieces of parchment paper and roll it out until it’s about a 9-inch circle. Cut the dough into a dozen pieces. Spray both sides with olive oil spray and place on a pizza stone or cookie sheet (I also bake mine on the parchment paper is used to roll it out). Add freshly cracked pepper and kosher salt on the top. Bake at 425 for 12 minutes or until crispy.

I'm not 100% sure this is on PP days approved, but I made this today:

4 small thin slices of Nova Lox (salmon)
1T FF cream cheese
dash of garlic salt
1/2 of a green onion (I used a little of the top and a little of the bottom

put cream cheese in a dish and sprinkle garlic salt on it. Microwave until warm and spreadable. Then cut green onion finely-add to cream cheese mixture. Then spread on the Lox slices and eat with a fork or your hands. YUMMY!!!!

I really don't know if you can replace the Creme Fraiche because the taste will be different and with this cake it is tasty ans satisfying to use this kind of cheese and it is dukan diet friendly cheese try it I am sure that you will love it, taste it than tell me the good news I hope I will hear from you soon emoticon

My Dukan Chicken Lettuce Wraps
Servings: 2-3

2 boneless skinless chicken breasts, cut into small cubes
1 cup water chestnut slices, cut in half
1 cup bamboo shoots, cut in half
1 onion, chopped
1 teaspoon minced garlic
1 head butter (Boston) lettuce

Stir Fry Sauce
1/4 cup soy sauce
1/4 cup Splenda brown sugar
1 teaspoon rice wine vinegar
6 shakes ground ginger
Prepare the stir fry sauce by mixing all together in a small bowl.

Directions:
Spray Pam on a wok or large frying pan & heat on high heat.
Sauté onion, then add chicken breasts.
Add water chestnuts, bamboo shoots & garlic.
Add the stir fry sauce to the pan and sauté the mixture for a couple minutes then serve it in the lettuce"cups" (each leaf).

I just posted a recipe for Dukan-friendly muffins on the sparkrecipes website. The recipe is very simple and I believe that you can have two of these muffins per day if you're on Cruise, since each should equate to approx one tbsp of oat bran. This recipe is definitely not going to impress anyone who's not desperate for carbs, but I think it's pretty decent for those of us on Dukan who are missing baked goods.

BTW, I didn't create this recipe--I found it online but can't relocate the website. If I could credit the creator, I would!

Another new recipe that is great as an appetizer so you don't feel left out!

turkey bacon
seasoned chicken breast
jalapeños
toothpicks (let sit in water)

1. Cut off stem of jalapeno. Cut jalapenos in half the long way. Take out all of the seeds and rinse in cold water. Pat dry and set aside.
2. Cut chicken breasts into small pieces depending on size of your 1/2 jalapeno
3. Season chicken breast pieces IE paprika, season salt, Montreal Chicken seasoning etc... and let sit in a bowl for about an hour.
4. Place a piece of chicken in a 1/2 of a jalapeno, wrap whole thing with a piece of turkey bacon and stick a toothpick through it to hold together.
5. Cook on grill (or in oven) for about 20 to 30 minutes on low.

My husband uses real bacon which is ok but the turkey bacon gives it a smoke flavor. I can only eat about 5 and I feel totally full and satisfied!

"Chicken Wings"

Cut chicken breasts into strips and/or chunks.
Season.... I use 'Montreal Chicken Seasoning', paprika and season salt
Bake at 375 till done (about 15 min.)
Place in a bowl and shake with chicken wing sauce (I use
Wegmans)


If it is a PV day have some veggies too!

Sugar Free Beef Jerky

1/2 tsp. garlic powder
1/2 tsp. onion powder
1/4 tsp. liquid smoke
3 Tbsp. soy sauce, low sodium
1/4 cup Splenda
1 lb. very lean ground beef

Use a hamburger press to press out a heaping Tbsp. very thin. Add to food dehydrator tray. It takes about 4-8 hrs. Keep eye on it and when it gets to the amount of dryness you prefer, remove and blot oil off all side. Store in ziplock bag.

Tastes better than store bought and it is a lot cheaper too.

Honouria's No Bran Italian Meatballs

The food processer makes the consistency of these meatballs what you would normally get from the addition of starch. It took quite a few experiments to find a way to make the meatballs without the addition of bran, but these are quite good, I must say.

Ingredients:
2 lbs. extra lean ground beef
1/4 cup fat free cottage cheese
2 Tablespoons carb free catsup (or substitute tomato paste)
1 egg
1 Tablespoon chilli paste or sundried tomato paste
1 tsp. basil
1 tsp. oregano
1 tsp. thyme
1 tsp. parsley
1 tsp. garlic powder
red pepper flakes to taste
2 medium onions, chopped
1 Tablespoon olive oil
1-2 tsp. liquid beef bouillon

Method:
Preheat oven to 400 degrees.
Take out to oven trays, line with aluminum foil and spray with vegetable spray.

Heat non-stick pan on medium, add oil and onions. Cook until translucent.

In food processer, add remaining ingredients and process until combined and very smooth.
Remove to large bowl. Add cooked onions.
With 2 ice cream scoops, make balls and place on trays.
Bake at 400 for 20 minutes.

Makes 48 meatballs that are about 1.25 inches in diameter.

I made an excellent lunch today that was really filling. I see that the activity on this thread is monthly but if anyone has more recipes I would love to see them.

Today I made my first Dukan galette but I added 2T nonfat milk, cracked pepper, and a small amount of cracked salt. I made 2 thin pancakes in my smallest nonstick pan and it didn't need any oil.

I cut up two turkey meatballs in strips and split them between the galettes then topped them with homemade tzatziki sauce. I rolled them up and ate them like little burritos. Excellent! I'll be having this again soon!

Tzatziki
1/4 c fat free Greek yogurt
2t finely chopped cucumber
1t crushed garlic
1 pinch lime zest
1t fresh lime juice

You can adjust any of the ingredients to your taste. My husband doesn't like lime so I only add the zest, then serve him and add the juice to mine. It's very forgiving and so refreshing!

you might like to try my Regularity Muffins--the recipe makes eight, which means I only bake them once a week. They keep well enough in the fridge for a week, I just pop one in the toaster while my eggs are boiling and it comes out fresh and crunchy as though just baked.
I have a serious problem with constipation on DD, which is why I developed this recipe. In addition to oatbran it also includes wheatbran and linseed (flaxseed). 1 Tbsp wheatbran per day is allowed by Dr Dukan (p81 in his book) if the oatbran is not enough to prevent constipation. Linseed (flaxseed) are a Tolerance food in all phases except Attack, according to the Dukanaute.com site (in French) and it mostly just passes through the system but if you don't have a problem with constipation or you find it slows your weight loss you could omit them.
Another quick breakfast on PV days is frittata, you can make this ahead in muffin tins--use a variety of vegetables from the 100 list, e.g. spinach, season and mix with a beaten egg, then bake or microwave until just set. But this doesn't include oatbran which was your question.
