my current favorite fast go-to food is black bean salsa, sour cream cradled in crunchy cabbage leaves. If I'm not in a BIG hurry, I nuke a small portion of ground beef, layer the sour cream first, then the beef, then the salsa. I ALWAYS have a batch of my black bean salsa in the fridge, it's a quick flavor-adding topping to omelettes, burgers, you name it.

1 can black beans, drained, but not 100%, save some of the juice.
1 can Ro-Tel tomatoes and green chilis, also drained but not completely
finely chopped onion to taste
finely chopped green onion to taste
generous portion cilantro, finely chopped
couple of good shakes of sea salt, garlic powder, and fresh ground pepper
two good squeezes of lime juice
(sometimes in the summer when I want lots of yummy wet cold food, I'll add diced cucumber)

Mix, and VIOLA - awesomeness ensues. One of my staples, and SO yummy with sour cream and crunchy cabbage leaves. BETTER than taco shells.

No problem. I love my slow cooker. Just throw in a chunk of meat, seasonings and VOILA! Dinner is ready a few hours later. Just make a salad. lol

I think I will need to invest in another slow cooker... my "crock" broke and I have not gotten another one. It might come in handy in my venture here.

Here are a couple of Spark cookbooks. Most of the recipes are fairly low carb (watch out for a couple of them)

My faves are the Paleo Bread, Banana Cake; No grain, No sugar, Coconut Pancakes Best Ever!, Coconut Lime Pie (for a 10 gram carb treat), Chicken Curry, Herb-Stuffed Pork Tenderloin.....

I am new here and will be putting together a menu this week and will go grocery shopping on the 1st. Right now I am in the process of getting rid of trigger foods and will replace with good stuff on the 1st. I don't have all the different foods I need and this week it will be not following lo-carb because of lack of proper veggies and such.
What I am interested in is seeing what people are finding tasty and easy to make... what do you fall back to on a regular basis? What shows up in your menu on a regular basis? I need to reprogram my brain to think of lo carb meals.... not the meat and potato and bread kind. This is going to be an adjustment but I know I can do it.

Ideas on favorite foods everyone? (please)
