my current favorite fast go-to food is black bean salsa, sour cream cradled in crunchy cabbage leaves. If I'm not in a BIG hurry, I nuke a small portion of ground beef, layer the sour cream first, then the beef, then the salsa. I ALWAYS have a batch of my black bean salsa in the fridge, it's a quick flavor-adding topping to omelettes, burgers, you name it.
1 can black beans, drained, but not 100%, save some of the juice.
1 can Ro-Tel tomatoes and green chilis, also drained but not completely
finely chopped onion to taste
finely chopped green onion to taste
generous portion cilantro, finely chopped
couple of good shakes of sea salt, garlic powder, and fresh ground pepper
two good squeezes of lime juice
(sometimes in the summer when I want lots of yummy wet cold food, I'll add diced cucumber)
Mix, and VIOLA - awesomeness ensues. One of my staples, and SO yummy with sour cream and crunchy cabbage leaves. BETTER than taco shells.
