Week two is starting out good , my family has eaten some new foods and my picky grand daughter even said she would try new foods and she has at least tried new things.
having a garden helps the grand kids they just go out and pick beans , tomato's blackberries
right off the vines and eat them raw. and they love it .

Week 2 Action Plan
~~~~~~Eat more fruits and veggies.~~~~~~~~ My kids love salad. I love salad. My DH loves salad. So we've been building on that love! Keeping fresh fruit in the house. That is great! No chips, ice cream, etc. Just not worth it.
~~~~Make the switch to whole grains. ~~~~~
I love whole grains. YES, those labels need to be read. I am teaching my kids to do this in the store. The other shoppers get annoyed, but oh well, they can go around us.
~~~Make over at least one favorite recipe~~~
We use fage (0 fat greek yogurt) in place of sour cream now. NO heavy whipping cream, I use evaporated milk. Applesauce in place of eggs in cakes now. These changes add up fast!

I found some new foods at the grocery store, Ranch dressing made by Bolthouse (love their products), it is made with Greek yogurt, 45 calories and tastes sooo good! Also bought some dips made with Greek yogurt (25 calories per serving and tastes so much better than the sour cream versions)! These new (to me), products make me want to dip my veggies & ditch chips for ever!

I am working on planning meals so we have more healthy choices at home. I have found if there are less snacks available the kids are more willing to try something new. My oldest picked out carrots this time when shopping. Surprised but encouraged!

It is going great. My week 2 just started today. I have carrots, celery and hummus in the fridge. If only I had thought of buying whole grain bread instead of white yesterday. Oh, and I have brown rice in the cupboard. :)

We use whole grain bread and pasta. Once the pasta is cooked it tastes about the same. Even my picky eater did not notice the difference. I will try to puree more vegees to sneak into dishes to help our family get more nutrition. I liked the suggestions of what type of vegees to add to different dishes. Now that I am learning more about what types of foods to substitute in recipes, that will be something I will keep in mind with our family favorites.

This week was an easy one since a few of my other challenges I have been working on were themed on veggies. So here's how I did:



1. Eat more fruits and veggies. I made a more conscious effort to increase my veggie count each day. I was surprised at how little I had been getting in (maybe once/twice a day) . So for at least 5 days this week I made the full 5 servings. I will continue to work on improving this.

2. Make the switch to whole grains.We already switched to a lot of the suggested items here (brown rice). I do not care for whole wheat pasta..they haven't made one yet that doesn't taste like cardboard to me.This week I did buy a whole grain bread and that was tasty.

3. Make over at least one favorite recipe. I am constantly remaking recipes, including the ones on SparkPeople..I replace full fat for non or low fat options. One thing I have been working towards is replacing sour cream with plain non-fat greek yogurt. We're almost there.

Week 2 has been incredibly easy, seeing as we already do these things. We don't do all whole grains - we can't stand brown rice or whole wheat pasta. It isn't a taste thing. It's texture. None of us can handle the texture of them. I use wheat flour for everything I make that uses flour. We only buy wheat or rye bread, except the few occasions we buy artisan bread. We eat tons of fruits & veggies. I've spent the whole 9 years we've been married trying to expand my husband's taste in veggies. My son is picky about veggies, but becoming less picky. We enjoy trying new fruits & veggies, as well as new ways to cook/eat them. Right now, the kids are really into smoothies. Today, we had smoothies with honey orange greek yogurt, almond milk, banana, cherimoya, mango, and strawberries (and my son added peaches to his). We often have 2 -3 veggies at lunch (that is our big family meal). Fruit is generally a part of breakfast. Fruit & veggies are common snacks for us. Fruits are common desserts.

As for making over a recipe, I do that all the time. I always make healthy changes & substitutions, even the first time I try some recipes. Usually, my changes not only make it healthier, but also better tasting.

We're on the last day of week two.
My husband has been out of town since Monday, fingers crossed he'll get back tomorrow night.
So my daughter and I focused on week two together.

We've all made the switch to whole wheat foods the beginning of the month and still going strong with this change.

My daughter has increased her fruit intake this week,. She's not too fussy on the vegetables --- still a work in progress with her :)

I've increased my fruit and vegetable intake. I eat at least one serving of fruit with breakfast, dinner & supper. Two servings of vegetables with dinner & supper. And I switch between fruits and vegetables with my snacks.

As for the make over a family favorite recipe we've decided to do this once my husband gets home. We're going to makeover our homemade pizza which will be either Saturday supper or sometime on Sunday.

I am starting week two this week and I don't think it will be too much of a challenge as we already do some of the tasks given to us. Our only vice is that we use Italian bread for our lunches. When starting to diet my husband asked me if we had to give that up as he doesn't like the taste of the whole grain. Perhaps we'll have a taste test to find a compromise. Other than that the cereals are whole grain and we only use brown rice.

I thought eating five servings of fruits and veggies would be hard, but after reading a certain article related to this challenge I realize I've been discounting some of my servings as being only one serving when in fact they were two. I probably need to add an additional veggie snack to make five a day, but I think we can get there.

Pasta is probably our biggest issue as it's my go to for nights where I'm limited on time and energy. I'll have to see if there's a filling pasta recipe.

This was a fun week. I like playing with recipes and this was an excuse for playtime in the kitchen. All in all, I think this was a acknowledged change week, and it was simple to incorporate the changes into life because they were already being done fortunately. This was not an uphill battle in our home.

Continuing week 2 and enjoying it. My oldest son still resists cooked vegetables, but barely notices when I give him carrots and dips. My plan next week is to let HIM pick out the vegetables we buy for the week. As long as it's more than just potatoes. ;)

I made over a mac and cheese recipe. Honestly, I'm not much for the stuff but my husband is insistent. I want to find another to make over, too.

Starting week 2 today. We already eat almost all whole grains, so that's no change. My kids don't like white bread anyway since they tried whole grain a few years ago. I'm working hard to get them to eat more fruits and vegetables-my husband too. He and my oldest son are not fond of vegetables, so it's a challenge. Last night I served steamed broccoli and raw carrots with ranch dip. My youngest LOVES broccoli. He'll ask for seconds on that before chicken nuggets or mac and cheese. My oldest and my husband ate up the carrots, so that's a good step in the right direction. I'll serve the carrots again tonight with our chicken burgers. Gotta find something else that my picky eaters will consume in the vegetable category, though.

As one of my new goals I am trying to make sure that I cook dinner at home at least 4 nights per week. That means sitting down family style, too.

Now I'm off to make-over the mac and cheese. My kids love it, my hubby wants a new one made with Worcestershire sauce (thank you Food Network), so I'm going to see what I can do.

Week 2 starts today for me. I went to Whole Foods Sunday and stocked up on freggies. We went as a family and ate there, too. My 4 year old chose a salad for lunch and enjoyed every bite. We shopped for fruit and veggies together and the kids liked choosing their favorites. Week 2 is all about getting us all to eat more freggies and still working on eating together as a family more. Whole grains are already pretty prominent in our house. I hardly buy anything made from white, bleached, enriched flour as it is. The kids don't like this much, so I'm finding that they avoid bread altogether. They eat whole grain cereal, though. Will work on incorporating more grains. My daughter loves quinoa and whole grain, rice and couscous.

Week two is starting today! i'm very lucky and fortunate to be making these changes while my children are young (3/5) and they don't even notice the changes! My goal for next week is to only eat out ONCE on Wednesday (which is the only day that my husband is off work and we spend the evening as a family) I like to consider Wednesday my cheat day because my husband doesn't care so much about eating healthy like I do! (then again, he eats filibertos every night and still loses ten lbs! -____-;;)

point is, i'm staying positive and working to make this life the best I can :] Good Luck in week two!!

It has been a wonderful week! We have walked back and forth to school 3 out of 5 days. We mowed and trimmed the yard together. And my son, looked through some of my cookbooks and picked out a recipe, and we cooked it together. It was delicious. And the bonus- we are getting healthy together, and I love the quality time.

Week 2 was easy for us since we already eat tons of fruit and veggies more than our recommended amounts. I keep lots of fresh around to curve the sweet tooth issues we have. As for the recipes I use sea salt or my garlic pepper salt grinder. Gives us more than salt flavor with out over doing the sodium.

We have been doing whole grains for years. I buy granola cereal in bulk from winco and dried fruit it. I can't do the whole wheat pasta thing we can't stand how it tastes. I only pasts once any way. Another ingredient I use a lot aside from garlic is ground turkey. It has less fat doesn't leave behind grease as much as ground beef does. I do a lot of cooking at home and love my crockpot. We also eat a lot of spinach, mixed spring salad greens with a little bit dressing.

We also eat at the table using square plates. I notice the more I use the the less portions I put on the plates when I serve my family dinner.

I probably should have started week 2 over the wkend...but haven't had laptop going and had to make other internet changes :( hoping we'll be able to get my laptop up and running.

We already do whole wheat bread, rice but just not noodles/pasta. I do make it because husband will only eat whole wheat pasta, I just do not like it :(

The girls didn't like the whole wheat bread till about a year ago..they just got used to it.

Have been trying to buy string cheese for snacks and fruit and make snacks rather then buying a lot and when i do it's more for when we're on the go and try to make them more healthy like baked chipps (got Kettle chips), cheese it's, yogurt, cottage cheese, and canned fruit. I try to get fruit in for snack and breakfast :)

I asked the family to switch. They resisted. the 12 year old who is a hold out for white rice, says brown rice is to to crunchy. I switched to whole grain pasta awhile ago, and they are ok with that. They prefer to eat whole wheat bread. The problem would be cereal. they really like the cheep kind that comes in a bag.. not the whole grain kind. High fiber costs more. Eating fresh produce is easy, since we live in the fruit basket of the world. Apple picking starts next week, and we will have fresh picked apples for snack. I have fresh fruit available to them for snacks but they are not 100% behind this. I think I am going to take two weeks to talk about eating fruits and veggies. Slow but steady.

The kids are enjoying the change from white rice to brown rice and hardly have noticed the whole grain pasta replacement. They both love fresh fruit and the oldest loves every vegetable she's ever met. This is a great week for them to celebrate the healthy foods they love already and appreciate that some of their favorites are so good and healthy. They are enjoying learning about what is good for their bodies. (ages 10 and 6)

Actually, some of this week I have been incorporating for a few months now so it has been easier over all. Just yesterday I had several requests from the kids to go to McDonald's, Wendy's, you name it. I stood firm and just said, "No, we can't do that today."

Both my boys (ages 5 and 10) commented on how we hardly eat out anymore. Ding ding ding ding ding!!!

I acknowledged that they were right, we are eating out less often, for a couple reasons: health and money. It was a nice segway into the reminder of how eating out is a special treat we do now and then, not all the time.

And it's hard too! I really did want to cave and just go have dinner at the china buffet! But I stood my ground against MYSELF and said, "No, not today" (to me). There will be an afternoon/evening outing eventually where we can go out, but this made me notice that as a family, we are starting to see and accept the change.

3 days into week 2. Week one came with some resistance but I see great thing emerging from my 11 year old. emoticon

As we walk though this garden, that some call life there are many paths and ways to go. There is always someone there to help you along the way some may force you down their path or help you find your own. No matter what path you take there is a key in the garden. You must find it to survive!

4 year old is causing resistance. I tried serving her fruit and yogurt for breakfast, no deal...so now I am compromising and feeding her cocoa puffs with yogurt instead of milk plus skim milk to drink. Everyone has been very supportive of the dietary changes. Hubby initiated it, but didn't act on it. I'm just following his lead and putting the plan into action. Only problem is Natalie (4 yrs old) doesn't want to eat black beans. I don't know if hubby realizes we've gone vegetarian. I think I'm gonna try 5-6 nights meat free. So many recipes!!! First week I made 6 new meals and hubby loved them all. So happy to be on this journey with a supportive family!

Never try to teach a pig to sing. It wastes your time and annoys the pig-unknown

I finished the week off only making two dinners ONE night. woohoo! this is progress!

My husband has really come a long way since I joined spark - he is drinking more water (2 in his work lunch when it used to be all pop!), he is eating more fruit (taking fruit in his lunch now instead of hostess treats), and he is eating more whole grains for breakfast (fiber one cereal instead of fruit loops and the like), and he is eating more veggies with dinner (I serve two but he used to only eat one).

Just a bit of info: I have been here 4 yrs (in June) so it took him a bit but he is catching on to health.

We already were doing pretty well. My kids won't touch anything "new" but I read it takes 10 times for them to see it and maybe consider eating it. I'll keep trying.
They do eat fruit, eggs and carrots. I'm trying to expand the "veggie" items.
None of us are lacking with anything nutritional. I keep a clean cabinet / refrig. Some foods are for the kids, but I'm not concerned about their weight so it's okay for them to eat it occasionally - as long as they have something healthy at meal time.
I find this site very helpful. It's funny that my husband love his snacks but he's cut down alot just because I have. He's FINALLY "getting it" and it's like he's just discovered all this stuff that I have been doing for years (cooking better, exercise, eating healthier) He's been doing some of it all along and never noticed! Guess that is good.

emoticon I've found that having switched to and continuing on with eating more whole grain products, ex. bread and pastas, gets easier all the time. The whole wheat pastas are really great tasting.

emoticon We had some left over's of some healthy dishes. They are even better the 2nd time around. I attempted to make a servings of 4, tweaked scalloped potatoes for us to try, but, as bad as it was, I burned the top of them. I guess it was meant to be, we really didn't need them with what else we had to eat.

Starting week 2 - Drinking 100% juice is easy. We do that already. We will have to get back to eating more oatmeal. I bought some flax meal but haven't used it yet. The black bean burgers sound good. I may try ground chicken. I have tried the ground turkey but just don't like it. I tried it in taco's, spaghetti & meatloaf & have decided it just is not good. So I will have to try chicken instead. It seems odd because I like turkey breast.

emoticon Last night I made a version of spaghetti using lean turkey meat and my own spices. I used the brand of salt substitute "No Salt" and used whole wheat thin spaghetti. It tasted great, even if I say so myself. emoticon My grandson loved this version, even if it was a healthier kind. He wanted 2nd's, but he held back.

We do not eat much grains, no breads or cereals really. (gluten free house)
We do have brown rice and quinoa or millet.

This week we made plans for martial arts with the boys.

With the warmer weather we have been outside (all) doing yard work and went on a hike/picnic.

The DD cookbook is pretty good. I own hers + the Sneaky Chef books. It is time consuming in my opinion but it could be worth it if you have the time. I don't always. There are some recipes in both that aren't very good but overall it isn't bad. If you want them to like eating them I know that Jessica Seinfeld recommends still putting veggies and fruits on the plates.

I have to admit it is hard for myself to do 5 servings of fruits and veggies in a day. I have a harder time doing the rainbow because of the blue/purple.

Week 2 was a success! I leave out a big bowl of fruit on our island and we snack on them vs processed foods. We also joined a local CSA and we'll be picking up fresh, organic veggies weekly. This will definitely challenge me to try out new recipes - there are so many veggies we've never had before! The whole grain challenge was a breeze because we already eat whole wheat bread, brown rice, etc. For the recipe make-overs, I've added broccoli to our shells and cheese (and omitted butter), purchased pasta made with veggies, and put our grilled chicken in a salad vs on it's own. I'm ready for week 3!

I completed week one but I still need to work on my planning. I try to make my meals a day or two in advance. I wish I could get into a weekly plan but it is not working at this time. I don't think that adding veggies or fruit will be a problem. My kids love both. Whole grains are not too bad but I also do not like brown rice or whole wheat pasta. Each one of my kids like different veggies which can make it difficult but manageable. This week I started making sure that the kids had one protien, one veggie (or two), and fruit with their meals. They get their dairy in the morning or as a snack.
For the first time we made our own pizza last night and it was very good. We also made our own sauce to reduce the sugar. It can be fun to play with different cheeses and toppings. We let the kids make their own pizza our of whole wheat pitas. Our toppings were spinach, black okives, mushrooms, onions,tomatoes, and bell peppers. We wanted a veggie pizza but next time I think we will add chicken or beef.

I hope this challenge motivates me to keep planning out healthy choices for my family, I always relied on last minute decisions and came up with sometimes unhealthy processed meals.

Well... I made green bean and tater to casserole for dinner last night. I doubled the amount of green beans and reduced the amount of tater tots. Everyone was okay with it but 1. It was a fight to get him to eat. I hope every meal change for the better isn't a fight. There is a cookbook called Deceptively Delicious. It hides fruits and veggies in meals. I am considering it but I also want them to know they are eating fruits and veggies and learn to like them.

Off to a good start...made dinner last night: brown rice,pepper and onion stir fry, and boneless skinless chicken breast. I let my children have their cookies and milk after school and enforced a more nutricious snack before bedtime. They had their choice of pretzels, applesauce, grapes, or yogurt. I'm really excited about this week and the challenge it presents me. Hopefully our choices will get better each day!! emoticon

Biggest week two goal for me to do will be adding more whole grains. I hate whole grain pastas. I detest brown rice. I switched to whole wheat bread but I miss my white bread and because I don't like it as much, (I can eat it as toast and that is about all,) I have almost stopped eating bread all together. I like rye bread but that is hard to find here. I like the kind with out the whole seeds in it. That makes it even harder to find. Any suggestions?
