The other night DD and I were looking at the Sparkpeople Recipe pages planning meals for the next two weeks, and we tried Megs enchillada---omg were they yummy! We added rice and black beans (not called for in the recipe) and I used a high fiber tortilla. I had leftover filling so tonight we had quesidilla (sp) and each had 1 enchillada.
DD took my class again tonight and we are planning to exercise tomorrow together. DS wants the two of us to workout together Sat:-)
