My challenge this week was to make over a recipe and I've already hit that! We had meatballs last night, which I switched to 99% lean ground turkey instead of the 93% lean ground beef. I used fat free ranch dressing as the binding ingredient, since meat that lean doesn't hold together well. I think my kids actually prefer the taste of ground turkey in these meatballs, instead of the beef. I also included diced bell pepper in the mix - I don't try to hide veggies from my kids, I tell them what's in there, but I do look for opportunities to include them.
