For my husband, eating more of the healthier foods didn't work, as he could only eat a certain amount. I am sitting here counting calories and wanting more, and he is wishing he could make himself eat a bit more. But that is why I stopped having salads at dinner and having my whole family have them. I have one as a late afternoon snack, about when I get dinner on, then have my dinner when it is ready. I do put toppings out for them, parmesan cheese, seed nuts, make sure and have bread also as that is something that is easy for them to eat a bit more of. When having salads as a family, provide the seed nuts, cheese, full fat salad dressing, etc. There are ways you can get them to eat a bit more and not feel it. But the hard part for me is if my hubby eats too much at dinner, he just won't eat breakfast. So he has stopped loosing weight, but not really gained any of it back. For me, that is good enough. His parents would prefer he gain some of it back, but that doesn't seem to be happening.

So sorry that your husband is not there with you...
But take advantage of the fact that you can do this for just you right now...
Something we all wish we had.
You can always add a sweet potato, whole wheat bread or as Cindilp said, he can eat more of the healthier foods that you have made.

Nancy: You might find it easier than you think. I cook the same for everyone in our house. Eating healthy is something everyone can benefit from. I have a family that includes two teen boys and my husband. My husband needs to lose weight, but isn't willing to cut his eating too much. So, I cook the healthy recipes and my family just gets to eat more of them than I can. I watch my portions and count my calories. I have tailored my eating plan to include most of the foods my family wants and likes. I don't cut any food groups. I've just made it healthier.

My husband is nearly underweight and lost some weight when I started my healthier eating journey. Now I stock the house with a fair number of snacks and sweets he adores. My salads are my afternoon snack, instead of at dinner. I stopped buying the lower fat salad dressings for him also. He adds some sunflower nuts and such to his salad if he does have a salad, more cheese, etc. He uses parmesan on his pasta, I do not. There are ways to customize your dish at the table that can add some calories. He also snacks on nuts a lot. It can be done, but oh, is it so hard.

Now that I'm well into modifying my cooking techniques, changing over ingredients for healthier ones, and regularly tracking my daily foods, my inner eye can turn forward to the future.

You see, I've had it relatively easy in this challenge. My husband works overseas and won't be home for a visit until next spring. I've only had to worry about ME--shopping for ME, feeding ME, pleasing ME.

I'm curious, and to be honest, a little worried, about how he'll react when he meets up with my updated refrigerator and pantry stock, and sits down to my revamped recipes. His issue with food is eating enough to keep up a healthy weight. That mixes with my issues like water mixes with oil.

I can't imagine how I'm going to maintain my prudent breakfast, lunch, dinner and snack schedule, and feed him enough to satisfy his dietary needs--without making totally separate meals 3 times every day! That doesn't sound like much fun.

Sharing my new "Spark" will be exciting. I'm grateful I've got several months to entrench myself before I have to begin sharing it, though! The day-to-day workability of the idea had better come clear by the time he comes home.

Life is a Journey, not a Destination. Plan the trip wisely!
