I tried Tofu for the first time this past summer in a spring roll. Wasn't really impressed. I tried it again last month while having lunch at BD Mongolian Grill. Much better. I will continue to eat tofu. I understand its a good substitute for meat.

I tried the Jamaica Jerk Tofu recipe first because the marinade would add lots of flavor.

The flavor was excellent. It will take me a few meals before I get used to the texture of the tofu. I had to eat each bite with some rice on the fork.

The verdict? Yes. I will continue eating and cooking tofu.

Oops. I meant to post this in Week 3 discussions. Week 3 is when we are doing the healthy food substitutions.

Is it my destiny to always be in the wrong place at the wrong time? At least I can laugh about this one.

Let us know how it goes :) I usually use it instead of meat in stir fries and haven't tried to pass it for something else like chicken or eggless egg salad. I don't see the attraction for my palate since I still eat eggs and chicken.

After reading the articles for this week about substitutions, I decided Tofu would be my focus. I will try 1-2 tofu recipes during the coming week.
