My goals are to cook 4-5 meals a week, making enough for lunch or dinner leftovers. I also plan on continuing to try new recipes on weekends and days where I have some extra time.

I've made some major changes! I no longer use white rice; I use sweet potatoes more often than white potatoes; I get 20 grams of fiber daily; I find ways to use more vegetables in soups and sauces; the diet soda is GONE! Thanks Spark!

Throughout the challenge I've tried numerous new and healthy SparkRecipes...Some loved by all and others "so-so." Although no one complained (family believes that we're blessed to have an abundance of food), I felt that I was the one trying all the recipes; so we came up with a good idea...At least once a week, another family member is responsible for searching the SparkRecipes for a new and healthy recipe to try. That way, we've all had a part in the planning and experimenting with our new healthy lifestyle.
