Healthy cooking has taught me that I do pretty well over all but I really need to work more on being prepared. I am lucky that my teenager eats pretty good and will try anything once so he enjoys the majority of the healthy foods.
I have really enjoyed this cooking challenge. The tips and ideas shared by everyone was great and helpful. I am enjoying using my crockpot lots more and trying the new recipes. I have been really happy with all the recipes. I like the shopping once a week as well. Planning my meals and shopping, and then preparing the meals I have planned for the week has made lots easier. I actually know what I am eating and can get right to it when I get home. It makes it so much easier.

Great idea! I use my crockpot a lot for that type of cooking, especially in the winter. I grill a lot in the summer (I live in Michigan, so right now grilling is not an option.) I've also started taking the time to enter all my recipes on Sparkpeople. I don't necessarily share all of them if there are others on there that are similar, but it makes it much easier for me to track it if all I have to do is click on the recipe.

what I am doing is cooking my main entre for three days so all I need to do add vegies,fruits.fiber and I have my dinner ready in 1/2 hr. tops. Have a plate of vegies and sliced fruits on kitchen counter for snacks so I am sure to get right amount of servings.
Hard-boiling the eggs is indeed a great idea...do it myself on occasion...thx for the reminder. They make a terrific breakfast addition or just a good protein snack in the afternoon. These aren't hard-boiled, but you get the idea. lol.
