I agree with all of you ladies. Spark recipes are great, and there are lots of very good books in the library too. You just have to watch the ingredients and portions. I love watching Rachel Ray but her recipes are definitely not low calorie.

Remember you can be a miracle: it may seem small to you but can make smile or lend a hand to someone else.

Revising recipes is a good way to stay successful. I agree that there aer way too many shows that have way too much fat or refined ingredients or processed foods.

Great idea! I find a lot of my recipes on the internet; there are several good websites for great recipes. The first thing I do when I find one is to see if I can tweak it to make it calorie/sodium friendly (I'm eating low-sodium, which is hard!). You can do it with almost any recipe and it's fun!

I'm in new zealand so have't seen Rachel Ray, but I do a lot of recipes from
'elegant low calorie cooking." these recipes don't need changeing and they tell you how many calories per serving

There are many diet sites on line I have visited...I still like cook books, just ordered three for diabetics. which I am, Then too I use lots of SparkPeople recipes.
Looking at Rachel Rays recipes, I would really have to like to try one to rewrite it to be beneficial for me.

One of my favorite recipes that is always a hit with everyone is Giada's Shrimp Fra Diavolo. The big "calorie" issue is the amount of oil that is used in it. I have successfully cut it from three tablespoons to one tablespoon of olive oil by using two important ingredients. An amazing pan!!! Great extra virgin olive oil that packs lots of flavor!! I highly recommend this!

Great ideas! I do this kind of stuff all the time. I love food network and all the cooking shows, but I find it weird that there aren't any healthy cooking shows. Paula Deen is a butter fanatic, The Neeleys (who I love) are Pecan and fried food people, Gilada is all about the pasta, cheese and bread and Rachel Ray makes awesome food, but high in cheese and EVOO!

Where is healthy cooking on tv??????

The name of the cookbook that i have put all the revisions in is called Rachel Ray Revisions. I have rewritten Rachel Ray's wild mushroom spaghetti revised, Inside out Pizza-dilla margerita, Pasta with broccoli and sausage with a ricotta surprise, sweet soy-soaked salmon over noodle-y veggies. Then I also rewrote an Olive Garden recipe. I called it Olive Garden my way. And, everybody who has tried it absolutely loves it!!

I did not turn out how I thought I would in high school, I turned out better...

i have rewritten 5 of her recipes so far. I have a cookbook that I have put together on here called Rachel Ray Revisions. So far, I have tried all of them,and the taste is amazing! I even rewrote an Olive Garden dish, and will be making that tonight to test it out. Should I be posting these on here too? I put them in the recipe calculator and hit share.

I did not turn out how I thought I would in high school, I turned out better...

I never got into his show, because I can't stand his shouting matches. I have found quite a few of the chefs from the food show channel also offer great ideas on simple cooking, with lots of flavor, but low cal.
But I know he has a huge following:-)

I don't like fish, but reducing Rachel's recipe by 500 calories is great. I love rewriting recipes too. One reason I joined this team is so I'll stop procrastinating and enter my recipes into Sparks. Then I can use the nutrition tracker.

this sounds wonderful. I have to work tomorrow, but I have two nice salmon steaks in my freezer, and now I know what to do with them. I have rice pasta..doing as much gulten free as I can..but sounds yummy!! amazing 500 calories less! Rachel needs to lighten up:-)

Sweet soy-soaked salmon fillets over noodle-y veggies

Another Rachel Ray recipe that I tried to convert to a healthier version. I peeled a smooth 500 calories off of this dish by exchanging ingredients and reducing others. Please give me feedback on how you think it tastes. Enough flavor? The potassium in this dish is high, even after I adjusted things~maybe from the veggies? All suggestions are welcome.

30 Minutes to Prepare and Cook

Ingredients

4 oz. of barilla plus angel hair pasta
1 tbsp reduced sodium soy sauce
3 inch piece fresh ginger, peeled and grated
1/4 tsp red pepper flakes
2 salmon fillets (cut in half to make 4)
1 cup broccolini(if you can't find it, broccoli is fine)
1 carrot
3 garlic cloves
1 small red bell pepper
1 scallion, trimmed
spray of pam, a few times
2 tsp sugar
3/4 c reserved pasta water



Directions
Place a large pot of water with a tight-fitting lid over high heat and bring to a boil. Once it comes up to a boil, add pasta. Cook the pasta according to package directions to al dente. Drain. Heads up~ you will need some of the pasta water for the dish.

While the pasta works, in a shallow dish, combine the soy sauce, ginger, lime juice, and teh red pepper flakes. Add the salmon fillets, turn to coat, and marinate for about 5 minutes.

Trim the broccolini ends( or chop broccoli). Place 2-3 inches of water in a large nonstick skillet: add the trimmed broccolini. Cover witha lid or some aluminum foil and bring up to a bubble; simmer for 4-5 minutes, until tender.

While the broccolini is cooking, chop up the rest of the veggies and reserve them on your cutting board or on a plate: peel and grate the carrot, finely chop the garlic, seed and thinly slice the red bell pepper. Thinly slice both the white and green parts of the scallions down to the roots and reserve seperately from other veggies.

Drain the broccoini and reserve. Return the skillet to the stove over medium-heat and spray pan with pam. Remove the salmon from the marinade, reserving the marinade, and add the salmon to the hot skillet, skin side down. Cook the salmon until it has just cooked through, about 3-4 minutes on each side.

Remove the salmon to a plate and cove it with a piece of aluminum foil to keep it warm. Return the skillet to high-heat; spray the pan again with pam. Add teh garlic, bell pepper and grated carrots and cook for about 2 minutes, stirring frequently. Add the sugar to the reserved salmon marinade, stir it to combine, then add to the skillet. Add the cooked broccolini and the reserved water, bringing liquids to a bubble, and let them simmer for 1 minute. Add the cooked, drained pasta and the scallions and toss to combine. Taste for seasoning, and adjust if necessary.

To serve, divide the noodles and veggies among 4 serving plates and top each with a piece of salmon.

4 servings.

hey..great idea. I also love watching the perky fantastic chef..but always know her food would make me very fat. I think almost every recipe can be made over to taste just as good, but low in calorie count and fat. Hope you will post some of your make overs.

I have already begun to revise some of my fave recipes and post them on our recipe site. But, my main goal is to revise some of my favorite Rachel Ray recipes and use those! Although they are full of great veggies, she often uses too much pasta, too much seasoning, too much cheese, etc. The dishes are still full flavor with the reductions and substitutions I have made. Tell me what you think!
