Try one new "lower/healthier something" recipe each week. This week it will be an almond pound cake recipe I found that uses almond flour instead of wheat flour. I'll serve that with fresh berries for dessert on Easter.

Continue to build a repertoire of spark recipes that we love, tossing out those that don't suit us.

Saute' my veggies with water rather than oil.



Life is not measured by the number of breaths we take, but by the number of moments that take our breath away...and, remember "slow and steady wins the race".

My main long term cooking goal is to continue and expand batch cooking and also to try a new recipe or food at least once a week and add that to my batch repertoire. I eat gluten free and really need new things to eat.

Resolved in 2014 to remain below 120!

My long term goals will be for me to continue batch cooking for lunches during the week and pre-portioning serving sizes so packing my lunch becomes much quicker.
I will also pre-cook several healthier meals for nights my hubby doesn't want to eat healthy, he can have his high fat food and I'll eat my already prepared, healthier food :-)

Continue to modify recipes to exclude wheat and sugar
Plan ahead each week
Use freezer more to store extra servings when I get in a cooking frenzy and want to try all sorts of things

Since I am trying to adopt a clean eating lifestyle, no chemical preservatives, pesticides, chemically treated food, no GMOs (genetically modified organisms) I do plan on cooking more things from scratch from now on and pumping everything up with as many vegetables as I can.
Really the only way I know to be completely GMO free is to get all my animal products, ie meat, dairy, eggs, organic and well organic meat is really expensive. So right now I am trying to get as many food products clean and non-GMO as I can afford, sadly not everything is clean and free of GMOs, but like weight loss, it is a process.

There are only two of us and I have always cooked full recipes, which leaves plenty of leftovers for another meal plus single-portions to freeze for something the husband can have with his salad on a work day (I make a week's worth of salads every Sunday afternoon). I do almost all the cooking on Saturday, Sunday and always make a soup for Monday, then leftovers Tues-Thur and something simple for Friday.

Long-term goals:
beef no more than once a week unless it is a small amount flavoring veggie soup
fish at least once a week
gradually make over the carb sides I buy packaged into healthier home-made versions (a lot less sodium!)

I really liked the cooking in batches idea, so I have added that theme to at least one meal I cook at home per week. This plus getting acquainted with the recipes in sparkpeople are my long term goals.

My long term goals are to continue making larger batches and freezing individual servings and to try a lower fat and lower sugar baked good twice a month. I plan to continue to cook using less fat and practice tossing in more vegetables than the recipe calls for.

Goal 1: follow recipes or make them over to be more healthy.
Goal 2: Only buy low or no fat low sodium canned or prepared foods.
Goal 3: produce marketing 2-3 times a week - purchasing loss leaders in different stores.
Goal 4: Modify all my childhood favorites, so I can still enjoy my history but enjoy the slender versions - taking smaller portions as well

I am slowly trying to move my family to a cleaner way of eating. If we can get off of processed foods I would be happy.

I don't care if i need to take more time in the kitchen, it really is my favorite room to be in anymore, what i care about is the quality of the foods my family and I are eating. The better quality the ingredient the better quality the meal.

I still need to go through my recipe cards and see what can be tweaked to be healthier, but I'm really happy with where we have come.

I make out 3X5 cards. Each has a meat choice (chicken, turkey, lean beef, pork) a veggie and a low carb side dish. Ex. Turkey meat loaf, Veggie, and mashed cawlifower (very close to potatoes).

Each night, I let my husband choose one for the next night.

emoticon Thank you all for your helpful ideas. This week I started to cook items that can be frozen and then heated in a pan or microwave. I cook enough to last the week using ideas from SP. I use my crock pot (great for main dishes) rice cooker (for vegies - don't cook completely) and my stove top ( pastas). I plan my meals on Monday based on one of my SP challenges. I feel so smart. One thing I found really helpful is to save the broth/water from cooking to use in re-heating and steaming. emoticon

My long term goals are to continue to make breakfast at home where it is much healthier and not give in to the convenience of fast food breakfast. I will also continue to use the toaster oven I bought instead of the big oven. This has really been a sound investment as my fiancée and I are on different work schedules so often we are heating up the oven for only one small piece of fish (usually salmon). The toaster oven cuts down on time and costs. I will continue to incorporate at least one new recipe into my weekly home cooking to keep variety fresh. This challenge has been awesome and I am grateful for the time and knowledge that everyone here has provided me.

Keep doing what I'm doing. Cut out the rare beef and eat salmon at least twice a week and do meatless Monday...but more if possible. Keep using and eating all the fruits and veggies-which does get harder in winter when the price goes up and the quality goes down. Buy whole lugs of fruits and freeze for later-raspberries and blueberries especially.

The best cure for stressing is to count your blessings...and a long walk won't hurt either!

My long term goals are to continue trying new things, healthy
I didn't even eat a salad before this
I want to continue making a healthy recipe 5 days a week
I want to keep my refrigerator stocked with easy healthy items to throw together ESP. Salads, which I will experiment with further
I want to portion my freezer item to pull out and snack items, which I've gotten good at making the night before

At the beginning of the year, I subscribed to a recipe service that delivers weekly menus with recipes and shopping lists. I have really enjoyed the weekly e-mail and have tried a number of recipes... some of which I now use often. The key for me is big batch cooking. If I have food in the refrigerator that I can heat up and plate quickly then my chances of success go way up. I have been working on using up items in my freezer and supplementing with fresh fruit / veggies. I have enjoyed the challenge and the more I cook and use my kitchen tools the more confidence I have gained.

Having several food intolerance's, I cook most of my meal already, but I tend to cook with a lot of fat, frying when I could have baked or grilled, adding margarine to mellow and blend flavors, and I am going to break these habits and replace them with healthier ones. I've already made a good start toward breaking the habit of adding margarine and salt to every vegetable I cook, so I'll work at getting that more ingrained into my mind. Trying new recipes is difficult because I don't eat eggs, much cheese, stocks from the store, and preserved meat. They all are headache triggers for me, but I do read recipes and incorporate the general ideas into my cooking, so I'm going to make sure those ideas are healthy ones.

I, too, always like big batch cooking & have been looking more into freezer cooking (raw states). My daughter started doing this a while back & there's more & more information online with recipes for freezer cooking - you have to love Pinterest!!

I love the "Big Batch" cooking idea. I plan on using it along with my meal planning.

I will also continue to buy fresh in season fruits and veggies and I want to grow my own fresh herbs.

I love trying new recipes each week, and trying a new fruit or vegetable at least once a week.

I already do a majority of my cooking from scratch but I aim to try at least one new (healthy) recipe per week. I've taken my lunch to work every day but one this past 4 weeks and I will continue to take the majority of my lunches to work.

Last week was pretty challenging because of our schedules, but all in all, this has been a good thing. We eat at home a lot more now and I keep adding healthy recipes to my recipe box. I nearly always take food to work with me - for breakfast, snacks and lunch. I'm also working in more fruits and veggies. It's going well!

I'm just sneaking healthy recipes and more veggies and fruits into what I offer my husband. That seems to be working. I was looking at the new Spark Solutions book and it has some great sounding recipes to try. I can't really do the two week "jumpstart" because I've already been working at this for several months, but it still has a lot of good material in there. I do like trying new things

My husband and I are trying to lose weight together, so it has been a lot easier to do this time since we are both trying. We have 3 healthy eating cookbooks and have been planning our meals according to these books instead of the grocery sales add like we used to, this has been working a lot better for us. emoticon

I have a husband who states he wants to be a vegetarian but when I cook vegetarian for a while he starts complaining about the food! We are just about finished planting a big garden and he's doing a great job of helping me with it so maybe he will be more motivated to eat the produce.

I am starting an herb garden. I want to cook more with whole, fresh foods. The fresh herbs will enhance the flavors. I have tried the herb garden before and hope I have more success bringing them in when the weather turns cold again.

1. Make it through the winter. Past experience has taught me that I don't winter well, so my goal is to find a way to be as motivated as I am, now, beyond the weight-loss.
2. Continue cooking a wide variety of vegetables. dh would like to be veggie-free, and I've always cooked "for him." Cooking for me is new, and my goal is to continue along this path.
3. Continue cooking with a minimum amount of oil. I was getting carried away with the amount of healthy-for-you olive oil that I was using.

I'm so glad that spring is finally here in the upper Midwest, and that the farmer's markets have begun. We have one almost every day somewhere within a 10 mile radius. I hope to take advantage of locally grown, pesticide-free produce to increase the amount of veggies/fruits in my meals. I also want to really get familiar with different kinds of greens this summer:-romain, arugula, chard, kale, spinach, buttercrisp, bibb- so many different kinds, I may want to try growing one or two myself.

Planning meals and snacks ahead of time so I have the ingredients on hand
Getting up each morning and deciding what we will be eating for the day so I have things out of the freezer, etc

I have a problem eating enough vegetables. I will try to remedy this by adding them into casseroles

My goal is to continue to look for and use new recipes and to make the things ahead of time that I can so when I am hungry it is easier to put together a healthy meal. I have found that having chopped onions, cleaned vegs, etc. and cooked brown rice in the fridge is great.
I also realize that I need to have some snacks ready besides the fresh fruit in the bowl.

My goal will be to contine this way of cooking long term. I am enjoying creating homemade meals that are just as good if not better than the one in restaurants. I am finding that my food taste better and I know what is going into the dishes.

My long term goals....keep my SparkPeople Cook book handy and try out the healthy recipes at least once a week. emoticon

Keep shopping for more veggies/fruits each week.

Keep the red meat dinners down to maybe once a week.

Eat more chicken/fish meals

Cut out coupons on Sunday, Shop on Monday with a LIST!!!! Don't pick up the unnecessary deals that we just don't need.

Long Term Cooking Goals
1. Make a habit of weighing and measuring food rather than my former ad lib approach
2. Make a menu plan for each road trip at least a week in advance so I can portion and freeze leftovers to take with me
3. Keep my Spark Recipe collection up to date with my favourite recipes
4. Use applesauce as a regular substitute for some of the oil when baking

I collected a few recipes from Chef Meg and from other SP members that sounded appetizing, and some of my personal all-time favorites. I saved them in my SP recipe box. I copied these same recipes in word processor.
When is time to do my weekly shopping I just take the ingredients of the recipes that I will use, sort them by category - this is a great time saver - and print. I also print together the selected recipes of the week.
When is time to cook, I use the shopping list to gather all the ingredients that I will be using for my weekly batch cooking.

I've put together quite a nice compilation of SP recipes in a binder. I love it except it's so huge! But that goes to show that I love alot of SP recipes and have a lot to try too. emoticon
