Have you tought about planting your herbs in small pots and putting them in your kitchen window? My daughter was able to grow hers in the little 2"-3" pots that would fit on the window sill. If the lighting is too poor, you could try using a grow light bulb in a flourescent fixture. Good luck!

I LOVE SUBSTITUTIONS! Since I work at Dennys, I LOVE substitutions more and more! Sorry to say, but since working at Dennys, Ive been trying to make their food SO much healthier for me and my costumers. Like I know how everything is prepped and (even though its probably not a good thing for the company haha) I try and steer clear and help people. Ive never thought that there were SO many options and now with downloading the cookbook things, I think I can stay clear from things in other places.

Also being a Wiccan, herbs are important to me. I havent been able to plant and store any lately, but as soon as I move, Im planning on going back to planting fresh herbs.
