We've been working this concept into some of our new menu plans, and it's getting great results. I had what might be the best shredded beef tacos of my life tonight, with the meat "batch-cooked" as an Italian Beef Roast (which was itself done in the slow cooker while I was out) that I cooked on Sunday. It was awesome, and total time in the kitchen for tonight's dinner...15 minutes! Gotta love it!

I never learned to stop cooking as a base brat feeding the troop. This was great when I had teen aged boys running through the house, but for me alone, over kill. I can cook on the weekend and have food all week. With freezer storage I don't have to eat the same thing all week. Variety keeps me from crashing.

I did this one weekend. I created a bunch of freezer soups and meals and would just pull them out. Some of them I would throw in the crockpot in the morning, and some I would let thaw during the day and cook in the oven. It works fabulous for busy schedules!!!

I love your idea to freeze soup/stew in freezer bags. I cooked a big pot of stew over the weekend, and now I have a fridge full of tupperware containers (all shapes and sizes!) of stew. Its definately not efficient. Thanks for the tip!

I also love a sweet taste, especially in the evenings. I started making fruit salad and its gone over really well!

I like batch cooking. Just need to get back into the habit of it. This weekend I made a big pot of beef soup with lots of carrots and potatoes. I am going to freeze what is left in freezer bags and lay them flat for better storage. This week I am going to cut up my vegetables and divide them up into usable portions so all I have to do is grab them and dump into the pan for what ever I am making this week.

I am working on swapping out ingredients for healthier options or lower sugar or fat. On the weekends I like to have some kind of sweet thing hanging around. And its cold and I tend to bake more. Last week I made chocolate chip cookies with whole wheat flour. They was not that bad I was surprised. This weekend I made a cake with cake mix and a can of diet orange pop. I made a glaze with just power sugar and the diet pop for on top. It was not bad either. Except the cake is so moist that is does not stick together too well. But it tasted good and I did not get that diet after taste. I am not sure if its because I used a generic pop or what. But it was a hit with the family.

Guess this is a start. It is not easy to change eating and cooking and baking habits. I am taking it one day at a time until we are used to it.
