I like batch cooking. Just need to get back into the habit of it. This weekend I made a big pot of beef soup with lots of carrots and potatoes. I am going to freeze what is left in freezer bags and lay them flat for better storage. This week I am going to cut up my vegetables and divide them up into usable portions so all I have to do is grab them and dump into the pan for what ever I am making this week.
I am working on swapping out ingredients for healthier options or lower sugar or fat. On the weekends I like to have some kind of sweet thing hanging around. And its cold and I tend to bake more. Last week I made chocolate chip cookies with whole wheat flour. They was not that bad I was surprised. This weekend I made a cake with cake mix and a can of diet orange pop. I made a glaze with just power sugar and the diet pop for on top. It was not bad either. Except the cake is so moist that is does not stick together too well. But it tasted good and I did not get that diet after taste. I am not sure if its because I used a generic pop or what. But it was a hit with the family.
Guess this is a start. It is not easy to change eating and cooking and baking habits. I am taking it one day at a time until we are used to it.
