Depending on the recipe, you might be able to substitute boneless pork chops or pork tenderloin.

I know I'm jumping the gun by a few days, I'm still technically mid-week 2, but I can't help it. So many healthy recipes call for chicken, which is also a real budget-saver, but my DH is horribly allergic. Any suggestions for substituting chicken for something as budget friendly? I've been using turkey but it's more expensive and, while similar, it doesn't always cook up the same.
