If you like almond milk, try Almond Fresh by Earth's Own. I started off with Silk True Almond but found that it is rather cloying with all the maltodextrin they add to sweeten it. Earth's Own has Original (sweetened), Unsweetened and Chocolate.

I really like the Silk milk products. I've used the soy, almond and coconut, Their almond milk is my favorite for just drinking, but I use them in recipes depending on what Im making for their individual flavor. And Couzcat, I do the same thing with soups, pureeing some of the veggies for thickening. Tastes great, and a healthier soup!

One of the healthiest and low calorie cakes is angel food. You can top it with fruit or fruit syrup or partially mash some fruit, stir it into whip cream (or substitute) and use that to "frost" the cake.

This weekend is my moms birthday and I always bake her a cake. I wanted to make a healthier version, but without telling her. To make sure it wouldnt taste terrible and ruin her day i did a practice run. I used substitutes for the oil, eggs, milk, butter, and sugar! I went all out and it actually tasted good!! I cant wait for her to try it :)

The banana bread sounds wonderful. I think I will bake some and put it in the freezer. It sounds great for guests coming for coffee.

I thicken soups by pureeing some of the vegetables instead of adding flour

I use the silk brand of Almond and Coconut milk for my morning shakes and on the days I eat oatmeal, I use it instead of cream or sugar.. its worth it to me to buy. I do not drink milk on a regular basis but since I don't have much of a tolerance for lactose I use the silk brand.

Does anyone here use the Silk Milk products in place of regular milk in their cooking? As I said in my blog post I've got over 40 $1 off coupons! I'm trying to decide if I want to try it out by buying a half-gallon. I sampled the chocolate milk on Monday but don't remember if it's soy, almond, or coconut milk though I think it's soy. It was pretty good but since I don't drink/use a lot of milk I'm thinking that even with a coupon I'd be wasting my money as I don't think I'd use enough of a half-gallon carton to make it worth my while buying it.

Slow and steady wins the race. Just remember the children's story of the tortoise and the hare when you get discouraged! I'm taking that from Dave Ramsey's advice about getting out of debt, much of what he says is also appropriate for those of us trying to lose weight. We need to remember we didn't put on all this weight overnight, though it sometimes seems that way to me, which means we won't be able to take it off overnight.

Just finished "whipping up" the SparkPeople recipe for Banana Bread...Loaves baking in the oven as I type...House smells SO good!!! The recipe is very much like my Grandmother's family recipe, but with the following substitutions:
~ Out with the oil; in with the applesauce
~ Out with the buttermilk; in with skim milk
~ Out with the whole eggs; in with eggs whites only
From the aroma filling the house right now, I know it's going to taste as good as it smells!

I love this Challenge!! It is the best challenge I have committed to since my venture to be healthy. I made a grocery list and stuck to it. I saved money doing so as well. I used the handy tips of making meals with those nice "cut the time" kitchen gadgets. I have also started cooking more.. I started cooking meals that are healthy and filling and my family loves it. So, I had a success this week. I can finally stay within my cal range and when I went on a date with my husband, I asked him if it was okay to refuse the offer of bread and spread from our waiter when he comes to our table, My husband said Oh I like that part... (My husband is at a perfect weight) SO, I said I am really trying my best I just need your help in this area, so he agreed and we turned down the offer three times.. I was so excited!!! I even cut my tea and coffee down by half. I am a tea person mostly but I read on Spark that it helps to cut this in half or try to stick to green tea if you have to have tea.. so I drink green tea all the time.. I have not lost much but I Know I will in due time it has not been that long since I started to be truly committed to spark.. So here's to you fellow challengers and to our win at the end...
