Week 3 is going good. I'm just finding it hard to motivate myself to cook once I get home from work...planned meals and last night sucuumbed to oatmeal instead of making a complete dinner. Oh well, at least it was healthy.

I'm just starting Week 3. I bought No Pudge brownies which substitute eggs, oil, and butter with yogurt. Yup, that's right. All I have to do is measure out the yogurt and mix it with the batter and you get the most delicious brownies without all the fat. I use greek yogurt so I get more protein. Can't wait to make these!

I'm in the middle of week 3..... substituting things that are healthier or omitting things I don't think are really necessary as a matter of course. Yeah! Tonight I made my normal chilli recipe (omitting the butter) but only saute'd the veggies with olive oil, not OO and butter. At the same time, I made a separate batch for myself with ground turkey, so I can take for lunches. Unfortunately, found out at Thanksgiving last year that my husband is allergic to turkey so I can't mix ground turkey anymore. So I do have to cook separate in this case only. Making good permanent changes!

I'm just starting week 3, and I think it'll be pretty good. I have a crazy week ahead of me, so I won't get to try any of the baking tips, however I am excited to learn about them. I am also knocking out 2 parts with one recipe. I am making Chef Meg's Slow Cooker Lasagna and I am substituting spicy chicken sausage for the ground beef which is lighter in calories and I spice up the flavor without adding fat! YAY ME!

Week 3 was also easy for me. I love trying new recipes and use lots of hearbs and spices in place of salt and some oils.
Most of the time I have to buy the smallest oil to keep it from going bad before I use it up

Week 3 was easy for me because I already experiment with substitutions to make recipes healthier. I tried a banana bread recipe and substituted the fats with applesauce. I really couldn't tell the difference.

Week 3 started out bumpy but things have smoothed out quite well. I just made a new pasta sauce that had some 99% lean ground turkey, white beans, and was very low sodium. Usually I have to avoid any tomato sauce with pasta due to the sodium.

Earlier this week I had a stomach bug and didn't feel like cooking anything but gradually I've gained back my energy to try a few new recipes.

I'm going to make a bran muffin recipe with some substitutes on Saturday morning to close out week 3.

I usually only bake sweets for special occasions and since my birthday was last week, I won't be baking anything this week. For week 3, I'll find an old recipe to make healthier. Maybe Voodoo Pasta. I don't make that any more because it is high calorie so maybe I can tweak it to get it more reasonable.

Week 3 is pretty awesome. Though I already did a few of the things, there are a few things I had not thought of. Which is awesome because I love baking but with my husband who doesn't enjoy the sweets as often and my kids are partial to their moods I usually end up eating more then I want to. So of course I am trying to find ways to make it healthy for us all.

Week 3 is going fairly well. I am managing to meet all goals except for baking. I am wheat free due to allergies and I don't back anything at this time.

I discovered a wonderful vegetable: Kale. I love kale and will be incorporating it into more of my dishes/meals.

I made a salad dressing out of 1 teaspoon of white wine vinegar, lemon juice and olive oil whipped with a hand whisk. Had it on a spinach salad. Very good.

Going well. I found another substitution which isn't on the list, my current favourite: lemon juice instead of salad dressings. It's good stuff.

Having a bit of trouble finding a Sparkrecipe to use, can't find anything that I already have everything for...ok if I alter one a bit?

week three is going great. We eat tilapia fish at least three times a week. We(my husband and I) like it alot. I have not read or heard it is bad to eat. I have found some recipes that are really good. We like the coconut recipe, the stuffed one too.
Cod is to expensive to buy right now which is our favorite fish.
Sparkpeople send an e-mail recipe for tilipia did you see it?
I have been using the substitutions in cooking and baking which are great.
I am learning alot of new things here and will be sad when this is over. :(

I eat tilapia, flounder, salmon, sea bass, tuna and almost everything but shell fish or catfish (for religious restrictions). I have never heard tilapia is bad for you. Everything is ok in moderation.

One of my goals was to eat more fish during the week. At least twice a week. I loved Talapia but started thinking "this is really too good to be healthy". So I started a google search on the subject and have found conflicting reports. Some say it is NOT good for you . So what do you guys think? What types of fish do you eat regularly?

Just starting Week 3 and I have been substituting agave nectar for sugar for a while but now I'm going to use applesauce to substitute the agave nectar. I will also use egg whites instead of the whole egg as a binder in meats and baked goods. Also, I have been using 90/10 ground turkey instead of regular ground beef. I'm finding that the substitutions taste better or just the same as the full fat or full sugar item.

marching on going forward...protein is good for the body, I eat alot of it. yesterday had drs. appt. and she checked my protein telling me I am doing great.:) i like good news once in awhile lol
plus I lost seven more pounds, due to eating right and lots of SP recipes. emoticon emoticon emoticon Sparkpeople and Staff :)

week three is going well. i really enjoyed reading the substitution article about baking. i have used applesauce for a long time, but was very interested to read the tips about other ideas. esp. the one about buying baby food prunes. who woulda thunk it??
i use sun crystals a lot--the kind that are stevia and sugar--i am trying to eliminate artificial sweeteners from my diet completely. its a tricky process--i start by adding less than half the sugar amt. and then taste and go until i get the flavor that i want. with heavy breads and baked goods it seems to work fine. also appreciated the sub. tips for eggs. sometimes egg beaters don't make the kind of texture i want. a lot of times i will use one whole egg and 1/4 c. eb's if the recipe calls for 2 eggs.
right now i am not baking much--trying some spark recipes--the rosa marina soup was excellent! and my DH loved the caeser chicken. last night was a super quickie dinner night--just took chicken breasts pounded thin and poured salsa over them. fast and easy and he loved it.
a suggestion for a FABULOUS condiment to add flavor and depth is wooden spoon brands apple/chipotle salsa. the calorie count is higher than reg. salsa but the flavor is out of this world. i would put it on or with just about any meat and even add it to spicey soups--just a little goes a long way. it is wonderful.

I've been trying to add more protein to my diet which is always my challenge. Tonight I made turkey burgers (no bun) and cut up lots of fresh veggies to eat with it. I mixed up black beans, frozen corn and some salsa for a quick side dish. I added some chipotle chilies to the turkey to add some zing and it was all delicious and filling. Another good day. Now, what shall I cook tomorrow?,,,,,,

I'm looking forward to the substitutions part of the challenge. Last week was a little boring because I already do the batch cooking. This week will be more of a challenge! Not so sure about the baking part though. My baking experiences have not gone well.

Taking a little longer to do week three really helped me. I just didn't take the time I needed last week to really focus in on the goals so I decided to stick with it a little longer.

I tried several new recipes. One, I love, and a couple that need a little tweaking. I liked the concept of them, so tweaking them will be occurring soon.

Since I have been home on disability, I have been cooking at home more. I make substitutions all the time, looking for reduced sodium bouillon, and other reduced sodium items. I am baking "real" food. Cooking real dinners, making plans, and stretching the food, the budget, and it is working.

This has been the perfect challenge for me. I really enjoy cooking and this has helped me get my cooking groove back--but with healthy foods instead of desserts. Even have used my new ice cream maker for frozen yogurt--eaten in appropriate portion sizes.

So, I know I said I started off week 3 weakly. Well...that kinda continued. I was still making healthy choices and eating well. But I learned that not having that time on the weekend carved out really threw me for a loop. I am going to continue to focus on the week 3 goals for another week before focusing on the week 4 goals. I want this to all stick this time and not keep going on my yo-yo.

Week 3 has been good for me as well. I'm nearing the end of the third week and have been getting into a routine with cooking and all.
This week I continued the menus that have helped a lot with organizing. I lower the salt and sugar in my cooking and baking on a regular basis. I also make substitutions regularly as well. I was able to get my kitchen in order the second week so now I know what I have.
I tried a couple of new recipes this week and they were good!
Looking forward to seeing what week four has in store for us!

Week 3 has been great. I likedd week 1 b/c it made me get my kitchen back in good order and get a little more organized for planning and shopping. Week 2, I read a lot and found that I already do many of the things suggested, but it was great refresher. Now this week I re-worked a recipe for cranberry muffing. I LOVE fresh cranberries and stock up in the fall in order to have them all year. I went with all whole grain wheat flour (rather than half white/half wheat), 4 egg whites (rather than 2 eggs) halved the sugar, and sub'd unsweetened applesauce for all the oil. They were GREAT!!!!!

Everything has been going pretty well. I think this week has been harder though because I was away for the weekend and didn't take the time I have set aside to work on this stuff. I naturally swap ingredients out so much of this is natural for me.

I love using various spices and have been buying mine from a spice store near me. I know its a chain so has anyone else ever shopped at Penzeys?

It's going good so far. I plan to do some bread baking today, using some of the substitution ideas. I also got myself a new Comfort Food Diet Cookbook, that I'm excited about choosing my weeks meals from. That's what I usually do...I'll choose a cookbook for the week off of my cookbook shelf for that weeks meals. Excited about planning my meals today....

Week 3 is going good. I am using a lot of brown rice and eating more veggies. I use turkey and chicken and fish and try to stay away from red meat. I use olive oil and have cut back significantly on butter. (I rarely use it)

Week three: I have made several small substitutes; such as using extra veggies if I do stir fry and only use a serving of lean meat or poutry. I use brown rice every chance I get. I always get lowfat cottage cheese,sour cream, but can only get away with 2% milk at this time!! I have cut back on the sugar when baking and use semi sweet chocolate chips or cocoa. Sweet n' low is all i use in my tea. My other drink of choice is water on the rocks lolz. I use only canola or olive oil for cooking.

Week 3 is going well for me so far. I've learned a lot of great substitution ideas from this thread and I will put them into operation the rest of the week. I don't bake much at all but I may start trying some because some of the lentil recipes on the other thread sounded too good to pass up!

Going great! Love the challenge of turning traditional meals load with cals and fat into healthy meals my family can eat all the time! The funny thing is that they don't even know they are eating healthy!! emoticon

Week 3 is going well. I have had a couple of opportunities to substitute eggs and oil in recipes and they turned out well. No one in my family could tell the difference. I will continue to explore those options. I also continue to find great recipes in Spark Recipes to try. I haven't cooked the same thing twice for almost a month, and, so far, all the recipes have been a hit with my husband. This challenge has been very helpful in so many ways!
