I am going to start working on finding a healthy alternatives for baking. I want to make muffins this weekend. I have to look at Spark People recipes this weekend. I also am interested in trying veggie spaghetti. I may check out whole foods this week for a healthy option.

I made pancakes using 1/4 cup of unsweetened applesauce and substituted half of the flour with grounded oatmeal. The pancakes were delicious. My picky eater 2 1/2 year old grandson loved it. emoticon

Started measuring vegetables and increasing the amount of veggies per recipe! Cooking beans from scratch in pressure cooker without added salt. Spending more time "shopping around the edges" of the grocery store. I made up a bisquick mix with just the dry ingredients, so I can use applesauce or smashed beans or squash for the binder instead of oil.
It will last longer as well. I have enjoyed making over recipes that I find on smart people!.

Week 3 was a bit of a challenge. I was on "special assignment" with The Salvation Army - serving on a disaster services team. We ate well - bit certainly not always healthy. Happy to report my weight gain was minimal...all things concerned. More importantly..I am not discouraged and am back on track!

I've enjoyed learning how to become a "better baker" in week 3! All of the substitutions to reduce fat or in replacement of eggs (particularily if I want to bake and don't have eggs) is an invaluable bit of info that I'm going to hang onto!

I've had a great time! My groc sales ads come out on Tues night-we have an afternoon paper, so I look to see what's on sale and then do the menu planning for the week and go shopping on Wednesday. They also have a weekend sales flyer for really good deals that are only available for limited hours on Sat and Sun. I leave room for a couple swaps. I recently (3 weeks ago) bought a small chest freezer from a friend who was moving and have used it to load up on great deals on frozen fruit and also on fish and meat that were on sale. It's been really good to get back to menu planning and even better to take an afternoon to prep lots of veggies so they are at the ready if a craving strikes....been eating lots of pineapple, fresh-was a great sale at WalMart and besides eating it fresh I've added it to chicken salad and made a great salsa with onion and cilantro and an anaheim chile that I used on salmon. The tips have been great reminders of things I already knew and just wasn't doing and the recipes have been exciting too!

The best cure for stressing is to count your blessings...and a long walk won't hurt either!

Never give up what you want the MOST for what you want at the MOMENT!

Week 3 is going great! I've made "the world's best broccoli" and I'm experimenting with different recipes with smoothies.I've learned that a protein smoothie will keep me satisfied and not thinking about food for 5-6 hours! Adding fresh spinach to the smoothies has been a great idea!

Loved the Week 3 challenge to try out new recipes and lighten up old favorites. I subscribe to a recipe service that sends me skinny weight watcher friendly meal menus every week and I get fabulous ideas from those. I'll go through the list and see what I might want to try. I have been trying to limit my grocery shopping to just a few key items so that will make it even more challenging to see what I can do with what I have on hand.

Week three already! I had a bit of trouble with planning last week and so I threw together a menu quickly and went to the store on Sunday. It's Wednesday, so far so good. We have had fish and a dish that had whole wheat pasta, spinach and tomatoes. I've got it covered for this week but I need to start planning ahead for next week so I can get my grocery list ready. I do use the crock pot a lot and I do have two meals planned for it, along with some more fish.

So far, I'm not having any trouble staying away from unhealthy cooking, other than the burnout thing. Frying has never been a way for me to cook, but I had begun adding more olive oil to foods than I should have (after all, olive oil is good for you!). When I discovered one tsp of olive oil has 45 cals, I was shocked! So, now, I'm very stingy with the oil, and I do miss more, but I measure carefully now. As May West once said, "too much of a good thing is wonderful!"

I was really get burned out from all the extra cooking, and washing of pots and pans. Tonight, I adjusted the recipe, and cooked it in the microwave oven - much better! Don't know how I got into the pots and pans rut in the first place. 8-) I've added egg substitutes to my diet, and am learning to like them - don't miss the fat!

This week is going well. I got rid of salt and used black pepper, turmeric, and other spices, instead.
I'm not a fan of dessert baking. Actually I almost never do it. But I make whole wheat bread.
I'm going to make a healthy version of Ranch dressing with Greek yogurt. I already bought the ingredients so tomorrow I will prepare it and use it on my salad.
I use 1 egg and 3 whites when making omelettes with veggies and a little low fat cheese.

Loving it lots of new recipes are now being used and the new substitutions are great. Half and Half sugar ( half sugar half sweetner) that we have in England works well and one knows the difference in baking.
Wholewheat pasta is more filling and the brown rice as well. Wholegrain bread makes really tasty toast and makes sanwiches more flavoursome as well.
So for me a great week

This week was great for me! I realized I really do like cooking and I think my taste buds have changed. I am enjoying learning to eat fresh food, especially vegetables. And I am really liking big batch cooking.

Although I may be addicted to cooking :) I woke up early this morning thinking about a skinny potato soup recipe I found. I knew I would crave it all day, so I got out of bed, made the soup (it only takes abut 20 minutes), and have it packed and ready for lunch.

Bring on week 4!

The challenge this week, to me, was an exciting one. There are SO many YUMMY looking recipes out there and I really would like to try a lot of them. Unfortunately, YUMMY seem to not always = healthy. So, I am always trying to come up with ideas on how to "improve" the recipe in that area.
I always think it's fun to find healthy substitutions that work. And, I am always amazed and excited to find just how beautifully spices really do "spice" things up!!! emoticon
Now, my daughters are looking forward to getting together and making some freezer meals for their families and I am eagerly looking for healthy, tasty recipes we can do together.
I really am thrilled at the prospects of sharing new, healthy, tasty finds with them!

Better now. I have learned how to roast garlic, make garlic infused olive oil in the process & use the roasted garlic to make garlic infused "butter" actually smart balance to use in cooking. Its kinda scarey, almost feel like suzy homemaker. My family (children grown & live alone) will never believe me, lol.
I also have found powered egg whites, so I use 1 real egg and the powered egg whites to make up the diffeence.
On Pinterest, I found a website to make healthy crockpot recipes that you freeze all the ingredints together(spearate individula bags into 1 big bag) so they are ready to go into the cockpot. Just take out in time to thaw, then into the crockpot. Gonna really help come surgery time emoticon i

Pretty well so far. I found out today I have to have surgery, so learning how to batch cooking & freeze individual portions is going to come in very handy. So I will be starting that tomorrow to have enough to last for a couple of weeks during recovery. I am gluten free so you don't just go out & pick up something, lol. This was the perfect time to take this challenge. Of course God's timing is always perfect, isn't it!! emoticon

God is always faithful and good, especially during the storms of life!!!

I am working on more variety in my evening eating. So far, batch cooking two differently prepared chickens has helped quite a bit. Also, I tried one of those one bag prepared meals. Apart from the sodium levels, it was a pleasant change. (Luckly, my sodium intake levels are usually low and I do not have hypertension.)

I did add more frozen vegetables to make it a bit more substantial. And I did notice I did not want my evening snack.

So far so good for week 3! Haven't really tried any substitutions in my recipes yet. Since starting to plan my meals on a weekly basis, I find I'm using a lot of sparkpeople recipes, and they're already pretty healthy. I'll have to find a recipe and try a substitution just to see how well it works.

I am so proud of myself for not giving in and eating out last night. I wanted to make it quick and easy, and I almost just got some fast food. But I didn't. I didn't eat that healthy, hot dog and some chips, but I ate at home, and that was my goal in joining this group-to eat at home more. Today I am cooking a big pork tenderloin roast in the crockpot that will be used for 3 different meals. Baby steps!!

Week 3 is going great ! I am loving all the fresh fruit and veggies available ! I have tried all kinds of healthy recipes like zucchini pizza, vegetable crockpot lasagna, turnip fries, baked green tomato casserole, kale chips, roasted chickpeas, and I have changed alot of my other recipes to use lean turkey or lean beef !!! We are eating more fish, shrimp and veggie meals too ! My husband and kids are very supportive and like alot of these new things as well.

Since I got through the meal plan part, the rest of this seems to be a breeze. It's so funny, I had just saved the article about herbs the challenge refers to. Lots of cooking tonight and I had a great shrimp and garden pasta meal last night. Go protein!

week 3 going good already do batch cooking to save time when I am working.
Trying new recipes I have crock pot chicken with enchilada sauce cooking right now gonna
put on whole wheat tortilla with cilantro avocado and salsa for dinner.

Week 3 has been going well. I used the batch cooking strategy to help with my busy schedule to make healthier dinners. It has worked out very well! I am a big fan of the slow cooker meals. I also bought some small one portion plastic containers so I can pack my lunch the night before. I have been using the spark recipes app and I found a lot of easy recipes that are really tasty! My husband LOVES the BBQ Mango chicken recipe because its quick prep and its out of the oven in 20 minutes! I have not tried becoming a better baker because I am trying to avoid sweets since its my weakness. Planning my meals has also helped me save a lot of money since i am not running out to the market every day. so far so good!

Week 3 starts with a recipe search on SparkPeople in the morning and a printed grocery list.
I am trying to add a new food every week- this week, fennel. I want to get protein more from fish and chicken (natural, not injected with a solution) and cut back on beef consumption. This will be a new challenge, since my DH is a meat and potatoes guy. Slow cooker recipes have been a tremendous help and I will concentrate on those. There is nothing better than coming home from work to a finished dinner. That prevents A LOT of "nibbling". Planning ahead has made life much easier.

I got a bit side track for a week. When it rains it pours around here. I have a few good recipes that we all like so far. This week I did not make a menu. I noticed the difference when I got to think about what I am making for dinner. Its much easier to have a plan for the day. Friday when I go shopping I will make a menu for the week. Amazing how much easier getting dinner is when you write up that simple menu.

Also I want to do more batch cooking. I did up a batch of beef soup a few weeks ago. I also made broccoli cheese soup. I want to stock up my freezer a little more so when I need to get something quick I can just grab a few items and thaw them out.

I am on a quest to make healthier cookies and cakes. I found a few recipes we like so far. We all like a little goodie after dinner and my daughter takes stuff for her lunch at school. So I need to find things that pack well and we can transport. Summer we are on the go and this would be helpful to have stuff easy to make and make a double batch of waiting in the freezer to grab.

so I am staying in stage 3 for another week before moving on. Just so I can catch up and get some more tips and information before moving on.

I have been substituting ingredients for quite awhile now. I use Splenda instead of sugar, ground turkey for ground beef, I don't eat beef anymore, and several other substitutions. I have attempted to make over all my favorite recipes. Some turn out very well with the substitutions I have used, others not so good, but if you don't try, you'll never know.

I am trying to figure out a way to make a breakfast cookie that we love. It is on the healthy side and I think I can make it more healthy by using applesauce instead of butter - will not use margarine and have stayed away from Crisco forever. But my cookies have come out so soft and fragile by using butter. I don't want them crispy or hard, but they are far too fragile. They start breaking up the second you try to get them off the pan and it goes down hill from there. It is a chocolate chip cookie recipe with changes. I use 1 cup of all-purpose flour, 3/4 cup whole wheat flour, 1/4 cup milled flaxseeds, Splenda for the sugar, half the salt, and 1 cup of oatmeal and 1/2 cup of coconut. So my idea is to take out the butter and replace it with applesauce.

Any ideas on this?

just finished reading the goals and ideas for this week i am not a big baker and since Lent starts Tomorrow these tips have to wait 40 days i did learn several things about spices and to use them and uses for Plain yogurt are great. and i have printed the sub list out for use latter. should have started the challenge when i first stated so i would have a better understanding of coking and may be i would have lost more than 4 pounds in 1 month and some had to be lost more than once emoticon

spent quite a bit of time in the kitchen doing big batch cooking and loving every minute of it! Since starting this challenge I have rediscovered my love of cooking.

Friday cooked spaghetti & meatballs (froze 4 future dinners), Saturday cooked "mustardy pot roast" in crock pot, made 3 meatloaves, turkey sausage stuffed cannelloni and turkey burgers.

Feeling very content knowing that I have dinners ready to heat & serve in freezer for those nights when there literally is no time to think and that I have meal plan for the remainder of the week!

and I have a stack of low calorie/low carb recipes that I cannot wait to try!

I have also saved the downloadable printable recipe books to my computer with my other cookbook recipes.

I have had a great week. Invited a friend to join SP, which she did and I helped her set up her Sparkpage yesterday, so am excited to see how she does over the next few months! I am happy to have inspired others to get healthy!

Week 3 was great! I downloaded all those free cookbooks to my computer so I have more healthy recipes from Chef Meg and others. I also read the articles associated with week 3 and saved most of them for future reference. Looking forward to week 4. I'm really trying hard to earn that trophy!!

I am a bit behind,since my computer was sick. I got to get up on my videos. My healthy cooking is going well. I do not do a lot of baking but I will work to incorporate a substitute for healthy means. I did make a soup that needed chicken broth, but I used vegetarian broth because that is what I had.

So far so good. Need to concentrate more on planning this week. Started out ok, last week, kinda let some of the old routine slip in. Still ate healthier, but it is easier when you plan on it!

It's gone really well, thankfully! This is the week I needed the most--I've been cooking pretty much from scratch pretty much daily for the better part of the past 20 years, but, well, lets just say if I had a good handle on healthy substitutions and a pile of great lower calorie recipes, I probably wouldn't be here!

It's been kind of hard getting out of my cooking "comfort zone" and not everything has worked so well, but I've had some good food, too, and I'm learning a lot.

Not a tall person - start weight is overweight for me but I'm changing that with SparkPeople for my health and fitness.

i am just starting week 3. I read through the first two steps and am extremely excited to start experimenting with different recipes using the low fat suggestions. I love tastey treats so I am excited about low fat baked goods!! LOL

Week 3 went well. We've choses leaner cuts of meat, and less of them. We're baking and didn't give into the craving of fried calamari. Carefully watching sodium, we're getting more flavor using marinages.

We also finally tried the microwave popcorn as suggested by Dr Oz. 1/4 cup popcorn kernals in a paper lunch sack. Watch carefully when microwaving. Hubby declared it tasted great!

I've been gradually introducing products to my husband that are a better choice as far as calories and he is doing just fine with it, so the more I learn and read the labels....the better I am, but I have been doing this for about 6 months regularly, and really don't notice a difference in taste. emoticon
