I saved the guide to spices and substitutions to Pinterest for quick reference and saved the cookbooks to my computer. Can't wait to try some of them!

I made a copy of the Guide to Using Herbs and Spices to put in my spice cabinet. I plan to try a couple of more substitutions this week also.

I'm supposed to be on week 3 but haven't yet completed the list of stuff from week 1. To be fair my kitchen has just received a massive makeover and I'm really pleased (I got a bit carried away). Still got the recipees too organise. Now I've got a full inventory of everything and am trying out reverse shopping lists.

l will succeed.
I will not give up.

I made Chili and Beans using our Crockpot. I bought lean ground round, used 2 cans chopped tomatoes with one of the cans salt free. I used Mrs. Dash instead of salt. After the chili had cooked a while it was a bit runny. We had low fat shredded cheese, so my Hubby added the cheese to the chili. The chili was Delicious. I made a double batch so I could freeze the left overs.

Week 3 for me.. pretty rough. Not because of the challenge but because of things happening in life (a death) and how I am processing that. I have fallen apart and am now in the process of picking up the pieces one at a time. Tonight I have put together in the crock pot a plant based soup. Broccoli, cauliflower, spinach, beans, and some almond milk for luxury. Added some seasonings and will most likely blend it for a creamy type soup. It is 19 degrees here so soup should be nice for dinner.

Life would be much more upbeat if there was just background music no matter when or where you were doing things.

It would also be more fun if people didn't look at you funny when you danced to the music down the sidewalk ha ha~

I have to say that I find it way worse to remove natural fat and replace it with higher sugar/lower fat content things. I refuse to eat most processed foods and find that the substitutions listed were alright, but we need to stop criminalizing healthy fats.

Started measuring vegetables and increasing the amount of veggies per recipe! Cooking beans from scratch in pressure cooker without added salt. Spending more time "shopping around the edges" of the grocery store. I made up a bisquick mix with just the dry ingredients, so I can use applesauce or smashed beans or squash for the binder instead of oil.
It will last longer as well. I have enjoyed making over recipes that I find on smart people!.

Exploring recipes, I am determined to eat out only one time this week, which is our Friday night out with friends, I will share a menu item with DH. Thats the goal!
Learning to shop at a variety of stores, to maximize nutrition and reduce costs.

I will go... I will do...
I will go... I will say...
I will go ... I will be...

Spent this week at a conference with my husband. Bought items for breakfast in the room as there weren't a lot of good choices in the restaurant. Searched other restaurants in the area for better options.

61.5 pounds lost.

Week 3 was a bit of a challenge. I was on "special assignment" with The Salvation Army - serving on a disaster services team. We ate well - bit certainly not always healthy. Happy to report my weight gain was minimal...all things concerned. More importantly..I am not discouraged and am back on track!

I've enjoyed learning how to become a "better baker" in week 3! All of the substitutions to reduce fat or in replacement of eggs (particularily if I want to bake and don't have eggs) is an invaluable bit of info that I'm going to hang onto!

Things are getting a little better this week. I'm still feeling very tired and low energy since the surgery so I hope that let's up soon. Maybe it's all the hot weather. I tend to get up early bird all the time.

(((Positive Vibes)))

I've had a great time! My groc sales ads come out on Tues night-we have an afternoon paper, so I look to see what's on sale and then do the menu planning for the week and go shopping on Wednesday. They also have a weekend sales flyer for really good deals that are only available for limited hours on Sat and Sun. I leave room for a couple swaps. I recently (3 weeks ago) bought a small chest freezer from a friend who was moving and have used it to load up on great deals on frozen fruit and also on fish and meat that were on sale. It's been really good to get back to menu planning and even better to take an afternoon to prep lots of veggies so they are at the ready if a craving strikes....been eating lots of pineapple, fresh-was a great sale at WalMart and besides eating it fresh I've added it to chicken salad and made a great salsa with onion and cilantro and an anaheim chile that I used on salmon. The tips have been great reminders of things I already knew and just wasn't doing and the recipes have been exciting too!

The best cure for stressing is to count your blessings...and a long walk won't hurt either!

Never give up what you want the MOST for what you want at the MOMENT!
