I'm not sure about the apple sauce substitute for oil in cake recipes...do you use the same volume or substitute 50:50? Do you have to reduce the sugar too?

There are some great ideas on here that I will be trying. I usually subsititute egg beaters for eggs and applesauce for oil in baked good recipes. No one can really tell the difference.

one thing i have replaced in my diet with a healthier variation is french fries I make rutabaga fries. It may seem strange but it is actually really good and a lot healthier. I bake them after steaming. I cut them up in wedges or like fries and season with old bay or garlic powder and salt. I also made cupcakes for small group yesterday and I substituted margarine for butter, made my own sugar blend and turned into powdered sugar substitute. I also used applesauce instead of oil in the cupcakes.

I will never be able to substitute Turkey for beef or Pork. . emoticon I hate turkey. I love substituting applesauce for butter or margarine or oil. I can't tell the difference in the finished recipe

I purchase the organic pre-made 18oz polenta packages. (my 2 favorite flavors are green chili & cilantro and the basil & garlic). I cut it up the long way (french fry shape), place them on an aluminum foil prepared rimmed pan, lightly spray the polenta fries with olive oil cooking spray, and bake them at 425 for 30 minutes. Not only are they delicious, they are also fat-free and low in calories. (I get the Frieda's and Food Merchants brands in my home town but they both have websites and will ship their products.)

One of the things I did regarding substitutions has to do with cereal. I love eating eating healthy cereals because the crunching satisfies me. I use nonfat high probiotic yogurt instead of milk and I add frozen blueberries. This is really so good and satisfy me greatly.

One of my biggest changes has been using Light Lite Smart Ground instead of ground beef in all my ground beef dishes. No fat, great taste and it costs less. I wrote to the company and they sent me a bunch of coupons to use too. Try it, I believe you will like it very much.

Since my husband is a vegan, I always substitute milk for Soy milk and butter for the vegan butter. I also use egg whites instead of eggs along with tofu crumbles instead of meat. Everything is still delicious and comes out perfect!

I don't need easy. I just need possible!!

For sour cream on a baked potato I put 2 tablespoons Greek yogurt (or plain lowfat yogurt) mixed with 2 tablespoons salsa. Also I put green giant broccoli and cheese on top of baked potato. Yum! emoticon

thanks for the taco recipe i am going to have to give it a try..

you can try to add a tea spoon of lemon juice to the soy milk i know that you can do that with milk to make it sour .. got to try it and see.. good luck..

I've got a couple recipes for Irish soda bread and they all call for buttermilk...can I substitute soy milk and have it still come out okay?

I eat the Chobani Peach Greek yogurt. A friend tells me to get the plain and just add a dab of preserves of fruit. I may try that one day, but I'm not sure I'd ever go back to regular yogurt.

I definitely need to try Greek Yogurt it is so popular with everyone. I think it is pretty expensive, but it sounds like everyone believes it is worth the price.

When a recipe calls for sour cream I use plain Greek yogurt. It taste just like sour cream and is much better for you. I also use it to make my fruit smoothies too.

Hello Everyone! I thought I would try a new Sparkpeople recipe today. So I changed things up a bit and fixed the Turkey Bacon Breakfast Burritos for dinner. I used whole wheat tortillas and instead of green peppers( my DH is allergic to them) I used okra that gives that same little tang and it was great. I hadn't used turkey bacon in a while and I used the Jennie O brand. I've heard that this type is also loaded with sodium but nonetheless it was good. Have fixed several meals this week and DH really appreciated it. He especially liked tonight's recipe. Everyone have a good evening and healthy cooking thru week 3 of the Healthy Cooking Challenge! Love all these substitution ideas! I tried the "Uncle Ben's" Whole Grain Rice this evening that is so easy to prepare in the microwave. You just squeeze the packet, tear a small slit to vent and microwave it for 90 seconds and the rice comes out steaming hot and perfect. This is a good way to fix rice when you don't have a lot of time and don't own a steamer. We sliced lean steak into pieces and sauteed with onions in Canola oil. We then dipped out the onions and steak and put it in a baking pan and added lower sodium cream of mushroom soup and baked for about 15 minutes to join the flavors together. It was a great quick meal about 30 -40 minutes start to finish. I don't eat a lot of red meat or protein and I thought this would get a bit more protein into my diet.

for dressings on salads I jst use flexseed oil now as it has a nutty flavour and is a oil that is helpful and healthy to us and is just yummy!

A few weeks ago I changed up a recipe for cupcakes. I had the mix but it said to use oil instead I used apple sauce. It said to use 3 whole eggs, instead I used 3 egg whites and ONE whole egg. When it was done one cupcake was 165 calories INCLUDING frosting. If I made it the way they suggested it would have been 295 calories including frosting. And they are just as tasty

I had no idea about the ricotta cheese and yogurt. Today, in muffins, I substituted most of the sour cream with low-fat plain greek yogurt (had it on hand) and most of the sugar with organic sucanat. Have tried them yet, but they seem to have done okay.

A sour cream substitute: mix equal equal parts low fat ricotta and yogurt; puree. I like a little lemon juice sprinkled in and maybe some Dijon.

SHERJE78 you can make a better white sauce by omitting the fat and shaking the flour with some milk to suspend it then add it to the rest of the milk. Cook as usual to thicken. I use the same technique to make gravy from de-fatted pan juices.

An easy "Hollandaise": Mix all of these together in a sauce pan over medium heat until thickened (about 5 minutes):

3/4 cup low fat yogurt
1 egg lightly beaten
1 tsp cornstarch
1/4 tsp Dijon mustard
1/4 tsp salt
dash of hot pepper sauce
pinch of paprika

Makes 1 cup

Try topping your baked potato with either salsa or pico de gallo, yummy and the hot peppers are supposed to help you lose weight. I love to fix one, add a tablespoon or so, sometimes, of low fat grated cheddar then top it with pico de gallo. I've got some different types of salsa that I use not only on baked potatoes but on boiled potatoes instead of butter or gravy.
