I'm sure someone already mentioned this, but there are so many posts I got lost. I love to use no-sugar added applesauce in place of oil for baking. Of course, non-fat cooking spray is a must on the top of the stove and in baking pans. They have so many flavors now, butter, olive oil and so on.

I do like my cake, and not sure why it is not there..but it dawned on me I had forgotten to add the calories for cocoa. I am sure it is not much, but don't like giving a recipe that is not correct. My son had a piece, and said it was not too bad. He had no clue it was non gluten..hehe:-) will go and fix my cake. You might look under non gluten to find it:-) as for the coffee cake..yum..but you are right..it is fun to had done this as an experiment, but it was hard not to eat more than one:-) I didn't gain..but no loss..so will forgo these treats again for awhile:-)

There is a great recipe for coffee cup chocolate cake. made in the microwave it takes about 5 minutes tyo do. When the grandkids come i make one for then to share. I never make it for myself. If you want your sweet tooth tickled i will send it to you.

My sweet tooth was tickled by all your talk of chocolate cake, so I searched for your recipe and couldn't find it. While I was looking I found a Mug cake recipe and just tried it.It was delicious. I love the fact that It satisfies my craving and I don't have a big cake sitting in the kitchen taunting me. It's made with applesauce and egg whites ( I added a pinch of baking powder) and the choc-chips you add end up as a fudgy topping.

It is!! I did the recipe, so check it out. Non gluten, non fat, and low sugar. It came out to 24 pieces..to a pan..and each piece was 79 cals. I admit I had three..but still did not go over calories.

well I made a Zuccini cake with all kinds of substituons, including gluten free flour. I used eggwhites, apple sauce, and non fat sour cream. No fat at all, and less sugar than you would normally use. Raisins and chocolate chips helped make the cake moist and yummy. I need to do it on our recipe site, and will let you all know the calories. Made 24 pieces from a large glass baking pan.

I think that I have that cookbook...the reason I say think is because all my books are packed since we are moving.
I love trying to make recipes more healthy. I have had a few disasters though! But that is the fun in baking and cooking!

There is a show on Lifetime T.V. called Cook Yourself Thin. The recipies are in a book by the same title, also on their web site.
They convert all kinds of recipies into lower calorie and low fat versions, using beets and zucchini in baking.
I've tried a few with great results.

You are welcome. I have some lentils and some chocolate chips. I am going to experiment on at least one of these recipes. I will let you all know what happens:-) Need to be prepared when the zuccini attacts begin, by the end of summer.
I wanted to also share, my boss made fresh fruit tarts yesterday with small puff pastry and fresh peaches. Puff pastry is a great substitute for pie crust, and these little tarts are just perfect! She only sprinkled with cinnimon and a bit of sugar. I have had so few treats in the last month or so..I enduldged..and it was heavenly!! I know they keep these little tart puff pastries in the freezer section of most supermarkets.

Pat, to be honest, the recipe I used is now not acceptable to me. I will do a search on both Cooking Lite and Eating Well to find a make over. I have a couple days off coming up, and might experiment. Will post any links that sound good.

Do you have the zucchini chocolate cake recipe.I seem to give that out to so many people. One friend had it made for her wedding guests.
I am sure I have it somewhere, you are right its been a while since i made cake too.
Never had black lentils but I cooked with black beans before as a substitute. I made high fiber Vegan brownies. Another sparker suggested it. Mine did not look good but they taste great. I cut them to make them 1/2 size and I have them in th freezer. I zap one in the micro amd eat it with strawberries and Dannon 7 benefits yogurt, just 1/4 cup does it for a really nice desert. Very occasionally since I used white wheat flour. Pat in Maine.

I was surprised there are even black lentils. I have tried the red, and found them softer, but delicious.
I haven't made zuccini cake for a long time, so this too will be fun to make. I agree it is fantastic to know we can now make healthier treats for kids. Can't wait to try some on my grandkids.

DGRAZIA you are absolutely right they are seeds I just noticed I failed to say that you were correct earlier. Sorry about that. I guess it boils down to all of the legumes do grow in a seed pod and so they actually all are seeds.

The Angelfood cake sounds good as well as the lentil soup.
I substitute just about everything I can when baking. I have started using whole wheat pastry flour and that makes a difference than just whole wheat...somethings just don't turn out with the whole wheat. I also picked up white whole wheat.
I bought a cookbook on pureeing veggies and fruits to add to baked goods and one that I like is a PB and J muffins the secret ingredient is sweet potatoes and carrots.

This is a link to a SparkRecipe we love: Pseudo-sophisticated French Lentil Soup. The first time we made it, DH helped me with it. His response to the first taste was to say if he hadn't helped me make it he would have thought I had opened a couple cans of Progresso Lentil soup and heated it up. This is high praise, as he loves Progresso's lentil soup! We made a lovely large batch and I froze it in one-serving-size baggies for later consumption. We still have two in the freezer, I think.

Lentels are a type of small flat seed, either yellow or they also can be red or black. They are used in a lot of vegetarian recipes, for their high protein content. Great in soups, or to stuff peppers, and with couscous or rice. You find them with all the other dry beans, but I think they are seeds..please correct me if I am wrong folks:-) Do a recipe search, and by all means try them..fantastic!!

Oh yeah..I have made that angel cake with cherries and also other fruit. just dump everything into the pan. wild!
But for a home made cake, Crazy Cake can't be beat. It used to be one cup of flour, sugar, and even oil..baking soda and vinegar. But I broke it down to use half whole wheat flour..half the sugar..and one cup of fat free sour cream..or non fat yogurt..or even the apple sauce or pumpkin. what ever I have works. I want to try it with other non gluten flours..and let you know how it comes out.

I make a cake using Angel Food Cake mix and a can of pineapple. Just dump the package mix in bowl and add can of crushed pineapple. Only those two items. Put in bundt pan and bake per cake instructions.

Hi Pat, how interesting your DH can eat those fruit, if they are cooked. I imagine enzimes of some type must be the reason. I have made my crisps with cooked fruit, when they were not the best. Cooking and adding some flavor and a little sweetner of choice helped inprove the taste. I like your version of crisp, and I was fortunate to be given several small bags of different gluten free flours. Right now, no time,due to working full time again. But I will have to experiment a bit to see what works the best.
Speaking of substitutions, I started using Almond milk, instead of milk or soy milk. I got stomach reactions from both of the others, but I am dearly loving my new find. I love the texture and the flavor, but the low cal is fantastic too!!

DH is allergic to Apples and Pears and a whole lot of other fruits with skin on. No matter how much I wash and peel he still reacts. HOWever if I cook it he can eat it. Every other day I make microwave apple crisp. He eats them not I. I can eat apples and pears whenevr i want to so I leave them for him to eat with Dannon NATURAL yogurt.
I lived Gluten free for over 12 years I still rarely eat any wheat bread. I do have many recipes and books i will find some for you.I used to make the apple crisp for myself. I use Dessert apples, sprinkled with lemon juice to preserve the color.I microwave for 4-6 minutes remove and gently stir to be sure they are cooking evenly.
Topping I use, 3/4 cup old fashioned oats( quick oats work better they stick together better), 1/3 Canola oil, 1/2 cup white whole wheat flour and 2 tablespoons of brown sugar. Cinnamon in topping looks nice. I add 1 teaspoon full. Suggest you try oat flour, Spelt flour or tapioca flour. Spelt works well for me but it is supposed to have some wheat properties. Look it up and decide for yourself.
If you have a health food store ask them for 8oz Bulk bags of alternate flours you do not want to waste money buying and throwing away.
Potato flour, Tapioca flour , Spelt, Amaranth. Quinoa.Rice flour (I find it can be gritty). Hope this helps. I am afraid I still only use real sugar but very sparingly. I love to savor the real,flavor and not just SWEET. I use 2 apples and pears or 4 apples mix and match different kinds. Microwave on high 8 more minutes.I played with this to get it to where DH loves it. Pat in Maine.

I am not really able to eat cake anymore. The gluten is just so bad for me. I am going to experiment with non gluten flours to find a few things I might enjoy. In the mean time, I have been making fruit crisps. I use fresh fruits in season, and sweeten only with stevia. I was using agave, but someone from another group sent a link to show it is not a good sugar substitute. I have raw organic honey I have ordered, but really the stevia is a great alternative. I use old fashioned oatmeal and add about two TB of butter mixed with olive oil or canola. Then I add cinnamon and a bit more of the stevia..and top the fruit. I bake until it bubbles and use a bit of low fat whipped cream.

Next time you are in a grocery store check out the calories and chemicals in those mixes it might just surprise you.
There is a good chocolate cake in an earlier thread. I guess it was last weeks thread i must verify that.

LOW FAT VEGAN CHOCOLATE CAKE-Spark recipe well rated.

I have used the one in Kate Brackens I hate to cook book. I bought that for each of our three sons and they still have their copies.

Thanks for all the great tips! A friend of mine takes a choc. cake mix, adds a can of diet coke or maybe 1/2 a can, pops it in the microwave and viola! Yummy moist and easy!

Using the lentils sounds good.
I tried a Spark recipe for High fiber Vegan brownies.
The recipe uses black beans.
I made them just for myself and made them half the size they were supposed to be. Hence half the calories. I froze them and use them thawed with strawberries and 1/4 cup lowfat Natural vanilla yogurt from Dannon. My desert in Strawberry season. Pat in Maine.

I use lots of apple sauce, bananas, or apple juice in baking. I often make recipes including zucchini, pumpkin puree, or grated carrots.

I so rarely make a cake mix (I`ve made 2 in the last 10 years) that I haven`t tried it with pumpkin puree... I only made the cakes this past year as one of the mixes were nut free and my son has a friend with a peanut allergy (and a couple of the ingredients in my cupboard said ``may contain...`` so went with the nut free option!)

Cooked lentils are also a good substitute for butter and oil in cookie recipes. I have a recipe that my family loves and I make them often and have received many compliments on them.

I presaute Onions in the microwave in Canola oil it takes the heat the best. 2 large onions take 6 minutes to become tranlucent, then in to the pan and there is almost no spatter to clean up.
I also use canola oil in place of other fats in cookies , muffins and baking in general i have done it for years most successfully. Started when DH was told to cut back on sat Fat.
In baking I rerely use milk water works just as well. DH developed milk allergy. Popovers do great with milk and pancakes also.
I cook my vegetables for stew in the microwave also before adding them to crock pot Use a very little broth for steam
PLEASE remember fat free is not always good. There are many good nutrients in oils and our body needs them more than sweetness.Just determine which ones do not heat well. Pat in Maine.

This is an interesting forum and I am learning a few extra tips for baking. Thank you. I have found that if I use powered milk and the correct amount of fluid it cuts out the fats from the milk. I use it when I make my potato/veggie soup. I do use a little butter when I start to saute the onions and keep then covered until they are sauteed. Then I add enough water to cover my veggies and simmer until done. At the end I add powered milk and a tiny bit of butter (if you think you need it for flavor) and your seasonings. I use potatoes, carrots, onion & celery. You could add about any vegetable you wanted. If you left out the butter I believe it would be nearly fat-free.

It is so much fun making over foods into healthy meals.

ah..good one! I use applesauce, bananas, non fat yogurt, and fat free sour cream. I also use liquid egg whites, or liquid eggs. You can use up to half of sugar sometimes, and it wont change flavor or mess up the recipe. Go to Cooking light for suggestions..and recipe make overs.

I think applesauce makes the cakes or cupcakes seem more moist than with oil.

Wow, I think I'm going to learn a lot this week! The past two weeks I have read through the challenge goals all at once and either most of it I already do, or it was something I already knew about. But today I could only get through the first two topics and related articles before my brain said, okay, that's enough for now. Go back later!

I am really intrigued with the substitutions area for baking. I have not been doing as much baking as I used to, just because there are so many calories in such small treats, but maybe after this week I can start again! Mmmm, cookies fresh from the oven!
