I big batch cook all the time. I freeze things in freezer bags. I do smaller bags and freeze two servings in each. Then I can pull them out and have lunch or dinner for my husband and I and not worry about leftovers or eating the same thing for a week.

Since I like to cook from scratch, I have to categories for big batch cooking. Prep items like dry beans that have been cooked and then divided for into small portions for later use. Meats that are paracooked. onions, and peppers that have been sliced. When I cook I always double or triple the recipe then freeze the left over amounts as individual servings do not forget to label and date items if you can vacuum seal the items they last even longer.
