I have done almost that same thing with toast, except I did not put it under the broiler, which I will do the next time, and instead of sweetner and cinnamon, I used apple butter.

Toast (lightly) a piece of bread of your choosing.

Mix together 1/2 c. small curd, low fat cottage cheese with 1 sweetner package and a few shakes of cinnamon.

Spread cottage cheese mixture over toast - put under broiler just till it starts to get bubbly.

You now have a YUMI healthy danish !!!
