I am looking forwards to cooking roasted chicken legs with a creamy mushroom sauce over it and having baby spinach salad, baked potatoes and baby carrots tonight for supper. I have to cook baby carrots because my family wont eat spinach.

I prepared whole wheat penne with a little cheese and cream of chicken soup and tuna patties. It was pretty good and probably would have been better with more chicken in the penne and served alone as a quick meal. I am constantly thinking about ways to improve on old favorites and find great ideas here. The recipes all sound really good. My kitchen shelves are looking more like the healthy eating center I want and less like snack central. Week two of this new diet is almost over and I still have a positive attitude and look forward to Sparkpeople everyday. Thanks all! Reda

You are doing great! Your plan sounds good. Glad your boyfriend liked what you cooked....that's always a plus
To save room in the freezer, we always use square containers but have recently switched to a good press and seal freezer wrap...you can't wrap everything in it but we do wrap meats in single servings so they are easy to store, pull out, unwrap and heat.

So I made it through week one and felt like I accomplished what I wanted to. I'm taking more time to plan out what I will be making each night for dinner, and really trying to focus more on cooking meals rather than eating out or just heating up a frozen pre-packaged meal. I even found two new recipes that my boyfriend really enjoyed!
I read through my week 2 email and realized that most of the things suggested there are things that we already do, but I know I can make small changes to continue on with this challenge. I'd like to focus on making at least three or four dinners at home this coming week using fresh ingrediants. I also want to really focus on making sure that we eat our leftovers! There is almost always one or two extra servings left over when I cook and those would make perfect healthy lunches for us to take to work the next day! Because my freezer space is very limited I'm going to work on that as my version of batch cooking!
