I look at week 2 as kind of a "freebie"... batch cooking in my house is easy, since there's only two of us. With most recipes providing at least 4 servings, there's always a second meal in it. emoticon Well, that leaves time to look for more new recipes, right?

Already had my kitchen streamlined, but did alot of batch cooking and WOW did it make a huge difference in meal planning and taking lunches to work!!!

Week 2 is a little disappointing for me too, as was week 1. I'm really already doing all this stuff, so it's not much of a challenge.

I am almost done with this challenge team and wow, did things pick up for me in weeks 3 & 4. I've learned so much about substitutions and have actually kept up with the planning and the clean kitchen emoticon This is a team EVERYBODY should do at least once. Now to get my long term goals down.

week two is almost over . again I have learned alot especially in batch cooking....finding out that egg noodles can be frozen...
everything is starting to blend in now.

I understand the disappointment, I feel the same, but it will also allow me to work on making smaller changes that I hadn't thought about. I've got the batch cooking & gadgets down, but some of those tips and tricks, I look forward to trying!

I just started week two...some of which i already did, will do again. like my Dad would tell me,"double check what you have done, as most times you may have missed something."
Even I feel disappointed at times. I shake it off,as tomorrow is another day to focus and be positive.

Oh, I know! I just threw out some muffins, and meat last night and that was only the bottom shelf. What a waste of money. Now I still need to hit the middle and top! Ugh!!

At this point I am constantly reorganizing my freezer and fridge! When I did my initial clean it scared me how much money I wasted on food I didn't eat! Yikes!

I'm going to do batch cooking this weekend! I never did that before, so it should make for an easy week for dinners! But I have to re-arrange the freezer first!

I totally understand what you are saying. But I realized that by doing the things in Week 1, I naturally began doing the things in week 2. Inadvertently I combined the two weeks in my head without knowing I was.

I think also many people do not do batch cooking so this was new for them. For me, it came along with organizing my kitchen.

Week 2 is in the done column for me. I come away just a little disappointed. Week one was full of activity, cleaning, organizing, throwing out, planning menus and shopping lists. Week 2 didn't provide much in the way of challenge for me. Maybe it's because I already do the things suggested. Anyway, I am looking forward to week 3.
