Since there are only two of us, and my son doesn't always eat with me, there is always leftovers for lunch. Today it's chicken curry and asparagus. One thing I'm also doing is not drinking diet soda everyday. I make myself drink water and only water for lunch at least twice a week.
Leftover chicken (especially leftover rotisserie chicken) is so versatile for next day lunches. Make a sandwich or wrap with veggies, or add to a salad. My favorite salad is some chicken, black beans, cutup tomatoes peppers and lettuce, even corn, for a southwest flavored treat.
Remember you can be a miracle: it may seem small to you but can make smile or lend a hand to someone else.

What I do, is buy a ll ready cooked chicken breast from trader Joe's or a Rotissie Chicken works well too! I cut up 3oz, and microwave it, place some pineapple mango salsa and a little salsa on it. Cook some butternut squash in the microwave and ohhh, I have a under 200 calorie lunch and it's oh so good!
I do all of the suggestions below. I love to cook extras so I can have them for lunch. I also make extras and freeze them so that I don't have to keep eating the same thing all week long and then I can have choices for the next week. I have a husband that likes all the same foods that I do, so leftovers don't last that long in my house, but nothing gets wasted either. Keep up the great work everyone.
I like to cook and I like variety. I have now made lunches and suppers menus for the whole week. I have made individual salads and and soups for the week and have divided out snacks so they are ready to take with me and my Husband where ever we need to go.
I like to do this as well:) I make a full recipe of something, and it means that there's enough leftover for DH to take in his lunch the next day. Sometimes there is enough of a leftover to remake it into something else...(as in the recipe for homemade meatball subs that I made one day...there are enough leftover meatballs for me to make them into a spaghetti or lasagna dish...)
I always fix enough food so that I will have leftovers for lunch the next day, this ensures that I will not eat an unhealthy lunch out somewhere. I love to use my crockpot onthe weekends and fix a big batch of cabbage stew. yum yum
