I've been able to stock our freezer with quite a few frozen meals. I'd like to do another big batch of soup and then freeze some meals for Christmas when we'll have lots of people staying with us.

GREAT! I've been using SparkPeople.com for two weeks now and have not had fast food once. I have done some big batch cooking and also get my lunch ready the night before. For longer days, I even pack an extra cheese stick as a snack. Since I am prepared, I also know what I am missing and can plan a quick stop at the grocery store for something such as a yogurt or piece of fruit. (The store is on my way to work, so it isn't a big deal.) I have been browsing the recipe site and have found several things I'd like to try.
Since I'm planning -- I am not impulse buying at the grocery store. I am going once a week for the main food and stopping in a couple of times a week for fresh fruit.
The key is to keep this up.

I have to post a big THANKS to my DH for saving my week two. I was feeling sick and worn down and not at all in the mood to cook, he knew exactly what to say to motivate me and get me through the evening. My salmon, stuffing, and steamed green beans might not have been the healthiest or the fanciest I've made, but I made it and my record is still untarnished.

FYI: It is much easier to say 'no eating out' than it is to hear, no matter how well said. emoticon

So far week 2 is going great. I've tried some new recipes...one is sure to be a favorite, Quick Caldo Verde, a variation of an old family favorite.

My new gadget isn't all that new to me but I talked my mom into buying some for herself..Poach Pods! Both of us love poached eggs...and they come out perfect in just 4 minutes. Clean up is a breeze and you can poach a lot at one time which is great when you have company.

I'm about mid-week 2 and so far things have gone mostly according to plan. I even think I sold the DH on a few kitchen gadgets that I've always wanted and couldn't justify because I simply wouldn't use them. He even suggested a kitchen scale for me without prompting, I'm so proud of him! I haven't done much batch cooking this week since I made the decision to step back from a few of the old-standbys in favor of trying new things. I have, however, had a great deal of success in rolling my meals together. Three of my meals this week called for sausage so I cooked all of it at once on Monday, with onion and mushrooms, and froze 2/3 of the single package for later in the week. I actually wound up using nearly half the meat I generally use by bulking with veggies and adding variety to my meals. I think that I'll mix up some pasta today and toss it into the freezer for next week's meals.

My (extended) week 2 has been a bit of a flop. We did not even go grocery shopping and about the only thing in our refrigerator is yogurt and now leftover thanksgiving dinner from my mom's house. That being said, I obviously didn't make any meals at home last week and ate in the cafeteria at work instead. Bad decision, I know.
This week however, is already looking better. We have our meals planned for the whole week. We're going to eat dinner BEFORE we go grocery shopping, and we are going to cook an extra serving so I can eat home-cooked leftovers instead of cafeteria leftovers. :)

Meal planning and shopping became so much less difficult when I found the 100+ Superfoods article. I just pick and choose from there and I can't go wrong.

I mostly follow SP's meal tracking so that helped a lot.

Until last week (Week 1), I'd never considered planning my meals for the week. I started by writing down the protein I wanted, then added on from there. The veggies & fruits are easy to fill in.

I cleaned out my cabinets and freezer. I read nutrition labels with astoundingly high numbers on them. That made it easy to get them out of my cooking area.

I live alone so the toaster oven is big enough for me. I did purchase the George Foreman 360 grill with removable plates. It's on sale now for 79.99 on the GF website. To get free shipping I had to spend $100 or more so I ordered the Smart Kitchen Multicooker. Although it advertises as a rice cooker & more, the "more" part is the fun and easy part. Too, it has a steamer basket. It's perfect!!!

I did break down and bought the Biggest Loser digital scale. I like it. I also own a 5-oz measuring glass, a 1 and a 2-cup measuring cup. I use them simultaneously so if I have to measure a liquid, I don't have to wash it out before I measure the solid food. I wash them both when I finish using them. It's easier for me that way.

Besides the GF grill, the slow-cooker and the toaster oven, my favorite gadgets are my Cuisinart blender/food processor and my Cuisinart hand-held chopper, whisker & emulsifier. Among these items I do it all from make smoothies to chop carrots.

Overall, once I got rid of what I didn't want in my freezer and cabinets, the rest went well. I'm looking forward to finding out what's next in week three.

Week 2 is going great. I've planned this week's meals and selected some yummy recipes to try. What's on the menu: shepperd's pie (I'll make it with sweet potato), vegetarian chili (crockpot day!), grilled chicken/veggies, a salmon dish (maybe with a side of quinoa salad). I'm taking one evening off this week. Still meeting my goal of cooking at least 3 dinners/week.

Really good! I'm trying out a new healthy vegan/vege recipe each night, being mindful of portion size and freezing the left overs.
Tonight I am making vegetarian meatloaf (found from spark recipes).

I am loving getting back in the kitchen again. Our meals were starting to get very manotomus and boring... Spark people has brung the spark back into my kitchen. Week 2 is going great! I never thought of making big batch meals. I have some meals I can do this with which will make some good lunches or dinners. Like stuffed bellpeppers. I like to make individual items to make things a bit easier to warm back up for the husband and my son.

We are heading for vacation soon so I am taking this week to clean out the fridge/freezer/pantry and use some things up before we go. I cook at home most meals so I should have no problem. Tonight we had flank steak with broccoli. Tomorrow will be stuffed pablano peppers with chirizo sausauge. Hubby will be in heaven. I will have a salad. Hate to have to throw anything out before we go so I am using everything possible.

So far so good. We put a large chicken breast in the crock pot yesterday and made chicken taco meat. Had some awesome chicken wraps with onion and green peppers. Turned out rather tasty. Now that we know we like it we are going to make a larger batch of it and freeze it.

The first week was good. Planning meals in advance really makes difference. But the organizing my list and being faster will be the big challenge to me cause im always too messy and slow when i go to the supermarkert lol. Lets see what happens !

We did really well last week, a few slip ups but overall much better in our healthy cooking.

I am working on the menu for next 2 weeks - DH & I are going to go "BIG" shopping on Friday night or Saturday am. We will be taking a list with us and sticking to it!

As far as the kitchen gadgets go... I do have most of the ones listed. I don't have a rice cooker (don't think I need one - rice isn't hard to make) or a juicer. I do have a Ninja and I love it!

This morning I done 60 minutes exercises, and ate my breakfast the leaf over from dinner last night, I eat vegetables curry without chicken I do not like chicken just vegetables, I eat chicken it depends how to cook, I ate with rice all the time for my energy. After my breakfast I was help my husband with our guys throwing and arranged more rocks on the ground again, those big rocks I hit them with the sledge hummer and shovel the dirt to cover the rocks.

My lunch a while ago it's corn beef with mushrooms. Just a garlic and onion, put the corn beef in the whack and add mushrooms into it. To me it's yummy, for my lunch.

We are mushrooms grower and all kinds of food I cooked, I included mushrooms most of the time. Some times also I made mushrooms soap.

I drink 15 glasses of water just half a day today, not included the worked this afternoon yet. I would like to know how much water I drink for whole day. Because this afternoon another shoveling the dirt again, and its too hot working under the sun, and very thirsty, plus sweat all over my body.

Good luck to all of us here, for our best challenge for ourselves. Me I do what need to be done every day, its a very good benefits to me aslo because I can have another greenhouse as well as loosing weight too. Its my best exercises, I had 2 hours none stop physical worked this morning. This afternoon we will start from 2 pm and end up 5 pm. I am sure I will be tired for a day and burning calories too.

I am doing well, and happy. Me and my mother with our friends collected different kinds of eatable shells from the sea shore and we cook them with morringa leaves. I love them very much. I just boiled water with lemon grass and I added the shells to the boiling water, and take out the shells and I put in the bowl, and I added the morringa leaves to the boiling water I add spices and salt in it and its yummy. Most of all are very nutritious food.

Tonight I cooked chicken curry with green vegetables, mushrooms, potato, eggplants and cabbage, we eat with my husband with rice.

In my country potato is vegetables to us. Every time I cook some meat like chicken and pork all the times have potato in it and some vegetables added.

I'm finding out that changing the menu every night (at least the entrée') and cooking just enough for that meal really helps. Less food wasted, no eating out of boredom and 'grazing', just practical planning. Still going good for us!

My husband and I have crazy work schedules. Since our family is very connected (electronically) we use a great app to link a grocery list between family members. Any one can enter items on it and everyone has a copy. That way who ever has the time has the whole list. The items are also categorized with how our local store is laid out. It allows things to be crossed off too so when we both have the opportunity to shop together (rarely), we do it in half the time with one person at each end of the store working to the middle. It has worked extremely well for us.

I've been crazy busy; but my husband went to the store and got everything on my shopping list! He didn't even buy anything extra that was not on the list!! I'm so proud of him....

I lost 2.6 lbs last week, stuck to my meal plan, stuck to every workout to the very last lb and rep. I feel good about this!

This week I am aiming for the same weight loss or better! Also, I'm going to stick with my cooking at home and not go eat out. I am supposed to have lunch with some friends but I'm going to pack my lunch even though they are buying theirs!

I don't think I have ever cooked so much! This is working so far. I did a big batch cook on Sunday to have a few meals for the start of the week. I did burn the meat a bit, just need to get used to broiling. But it still was edible. So I have been able to have two cook free days. That is nice. I think I cook everyday last week, it was a lot of clean up... not used to working in the kitchen that much. I need to cook again tomorrow... just thinking now about what to make. A new concept to think one day in advance about what to make!

It's possible!

I'm just so proud of myself today! I had to stay an extra 3 hours of work, but I came home and was determined to make a healthy, tasty recipe from scratch. I found a lovely sounding tuna pasta salad on Spark Recipes and now I'm sitting here with a delicious meal!

Week 2 has been very successful for me as well.
I love to big batch cook and I got some nice tips from here.
I do have most of the gadgets and my favorites are the magic bullet for smoothies and chopping.
Love the toaster oven for reheating leftovers. And we can't forget about the crockpots.=-)

I have been doing a low carb diet this week and loving how easy it is to prepare the foods ahead of time. The day I shop for all fresh veggies & fruits. I chop and bag all the veggie's so it is easy to just grab and cook. Or make a salad to go with most meals.
Gotta love this healthy eating hey?

duckyontherun, I love how you plan ahead and bring a bar or sandwich with you.
I will have to start doing that just in case I end up shopping longer.

Week 2 has been great! I've learned not to bring the kids when I go grocery shopping. It's less stressful for me and I don't end up with Twinkies hidden in the cart. I've found that grocery shopping alone is actually very calming. I still take my coffee with me and because it takes me over an hour to shop because of coupons and comparison shopping, I also take a protien bar or 1/2 sandwich with me. My big notebook always comes with me which has my pre planned meals in it. emoticon

Week 2 has been delicious. Kept to the list, shopped off hours, tried 3 new recipes - stuffed green peppers, baked perch, & a couple of new breakfasts. Spring is a wonderful time to shop. We have fresh strawberries, peaches, vidalia onions, on & on. Looking forward to wk 3.
Forgot to mention I made it a point not to shop hungry & that helped keep me to the list emoticon

Week 2 is gonna be pretty good. I have most of the appliances & tools that are recomended & i already make grocery lists. I just need to go & get groceries when i have the money so i can stock back up on some things. But it's going good so far. :)

I am at the end of week 2. Doing great. I LOVE slow cooker cooking...and always liked big batch cooking too. I have been trying new recipes and an enjoying this challenge and its adventures.

Gina that sounds so good! I have found some really great recipes on here. Your turkey burgers sound good, is that a recipe on this web-site or one of your own? I'll watch this link if you don't mind sharing I'd love to try the turkey burger recipe you mentioned if you'll list it on this blog. I don't think I have eaten turkey hamburger yet and now is the perfect time to try it out. That may be my healthy make-over of the week for next week. Everyone have a good weekend and healthy eating! I am at the end of week two. It went pretty well....ok I will admit I had fun making over recipes, finding the biggest taste bang for the least calories and the most health. I discovered turkey burgers this week with grilled pineapple. Yummo! I have fallen in love with egg whites. I boil up eggs and pop them into a bowl into the fridge. I can use them as a quick snack (whites only) or chopped up and put into tuna salad. I love mayo but have chosen not to eat it anymore. I use miracle whip, mustard, and dill pickle relish in it's place. I love ice cream and chocolate--made something new to satisfy those urges. I combine (in food proc.) yogurt, frozen cherries and dark choc chips I blend in a bit of cool whip and freeze. I spread it on cinnamon graham crackers, I get a bit of fruit, chocolate, "ice cream" and some crunch. Well I could go on and on, but I promise you I won't!! LOL The very best to us all. ☺

Just got a small bottle of Hellman's real Mayonnaise today, something I don't eat. I'll put it in a ziplock bag and send it to my sister along with the 5#'s of grits I'm sending her in a few days, she loves real mayo. Also got a small jar of sweet relish which I will use after draining the juice off it.

I haven't tried batch cooking as I don't have room in my freezer for anything else, it's packed to the top and I want to be able to get out an ice cube tray without pulling everything else out as knowing me I'd forget to put something back and would ruin it.

Week two is going great. I like cooking in batches. It makes life so much easier. I've always made extra at dinner. Use the left overs for lunch makes getting ready for work the next day a breeze. I have been using measuring cups so much to get the proper portions.

Week two completed. Some of my recipe changes worked out well - some did not! But it is a learning experience and thankfully my teenage boys are getting the idea they are not going to hurt my feelings by telling me the recipe is 'not great mom' emoticon
