I did this Monday night, well on Sunday I roasted my veggies for the week. Then on Monday night I cooked 3 days worth of lunches and dinners for myself (I am doing a 3 day detox from the Plan I do it twice a year this is my third time doing and it was so much easier doing it this way than ever before!).

Hello all,

I am planning on buying a crock pot in order to do batch cooking. I love the idea also of making my own frozen dinners. Will let you know how it goes. Also plan to plant a garden this year and freeze vegetables.

I love this article. I started doing this:

1. Keep a running list: I put mine in a sheet protector so I can use dry erase markers. Very nice and time saving

2. Organize your list: My list is organized by area of the store. Again sheet protector saves me from having keep making a list;-)

3. Shop during "off" hours and days: I do this :-)

I organized my cookbook. My husband does weight watchers and he loves their recipes, so we've printing them off and putting them in sheet protectors. Then, on Sundays, we can sit down and plan out meals for that week. I write the day of the week on the sheet protectors and then use a use a magnet to hang the recipe on the refrigerator the night before after I clean up from dinner. It is a good system.

I used to do the big batch cooking. I am going to make some tuna noodle casseroles and freeze them, so if we are in a pinch, I have something on hand.

Love my crockpot. I want to get a rice cooker because it make life easier. I'm all about easy

I am also doing Official 'Eat Up, Slim Down' Challenge. Which doing with this challenge, is awesome! I am learning so much from both challenges. Great tools to keep a healthy lifestyle!!!!

It's going very well I think. Last week my husband went for restaurant food and I opted for home cooked. That usually doesn't happen, we do most everything together. I think it bothered him that I chose to eat at home, no matter how hard he tried to convince me. I think I will save my restaurant meals for our date night, which is once a month.

I find that I am already doing pretty much everything discussed in the week 2 goals but really liked the link being in the article prompting a visit to sparkrecipes to find a new recipe.

I find something to put in my recipe box each time I visit.

I liked the article on equipment and have everything on the list. My favorites are my kitchen shears and the food scale (number one). I find weighing things in grams makes cooking and eating a healthy, calorie controlled diet so much more accurate and much easier.

Moving in new directions.

Working on week 2. Replaced the old, original crockpot with a new slow cooker with a removable crock last week. We'll finish off the last of the Mediterranean Chicken Soup (SP recipe and delicious) today. Today I'll work out the menus for the coming week, make my list and shop tomorrow. My menu list will include several recipes that for us are big batch. Any recipe that serves 6 or more is big batch cooking for two. emoticon

Oops! Never mind. I just clicked on the Week2 Challenge Link on the checkoff line and found it listed all the challenges for week 2 . So I read all the articles and have completed all but the big batch cooking. I have two cook books called "Once A Month Cooking" and should be able to healthy-up some of those, although there are just two of us. Maybe I can even get my daughter and her family interested in a day of Big Batch Healthy and we can share and have fun at the same time! She buys from a local Farm Co-Op when she can, so she's also into organic and local.

Its going very well. I have made several meals that have had extras to go in the freezer. I tried one new recipe that nobody liked so that was no fun. Most of the recipes we try are good so one bad one every now and again is to be expected.

I actually just got my week two email and finished checking if I did "well enough" on week one. I really like the challenge of finding ways to save time. I have a few ideas for some containers to get to portion out weeks food. Both time and money are issues so too much convenience of pre-portioned is not cost effective. i am also still working on single serving meals as I live alone. But it is beginning to get some flow.

Week 2? If today is any indcation....it is not going well.

I am completely drained of all energy and have a ton of things to do. I am irritable and anxious and still stuck on a weight plateau.

Bottom line - yes, this is the day the Lord has made and for that reason I do rejoice in His day and His creation...but frankly, personally, I am NOT having a good day AT ALL!!!

The articles had good information. I love using my crockpot. It is so much easier to start a healthy meal in the morning than to wonder what to fix at dinner time when you may be tired from the day. For those who don't have some of the small appliances mentioned in the articles, I frequently see crockpots, toaster ovens, blenders, etc. at thrift stores for bargain prices.

While reading the tips for week 2 it hadn't occurred to me before that I already do many of the shopping tips provided. Making a list that is in order of navigation around your grocery store is paramount to not overbuying or overindulging. Also, it hadn't occurred to me that investing in a toaster oven would save me so much time and $$$ because I eat a lot of fish. I have been baking fish in the oven and it takes so long for the oven to preheat just for a piece of fish that will take 10 minutes tops to cook. I will be investing in a toaster oven for sure!!

Hi Gloria

I've never poached a fish, cod or otherwise. Please tell me the best way to poach a fish....do you use wine, broth or water? What seasonings do you like. I love cod but it has never occurred to me to poach a fish. This is an excellent method to keep the protein as low fat as possible in my book.

Yesterday I wondered around the grocery store looking for interesting low-cal healthy ingredients to incorporate in my meals, which is better than grabbing chips and sweets to "round out" what I'm cooking. I'm cutting down on the oil and margarine in my recipes and adding veggies where there weren't any before. Generally, I think it's going well.

I have not been able to cook this week, due to having 6 teeth pulled. I am sore to say the least and have not progressed in soft foods as of yet. I did invest in a nutribullet and absolutely love it for making very tasty healthy smoothies. hopefully will move up to some soft food next week..

Wow, I just realized that today I start week 2! The first week went so fast! Tonight I have a rare night without the husband. That happens so infrequently. There was a huge temptation just to grab something to eat on the way home from work, but I didn't! I came home and fixed myself some poached cod. It was so tasty and I am so glad that I did it!

I have invested in some quality non stick cookware that has made cooking at home a much more pleasurable experience. Plus it has allowed me to cut back on the amount of butters and oils to cook things is. Really enjoying sauteed veggies now!

Wk 2, day 6. Wk 2 is going great. I'm cooking and eating more veggies, my blood sugars are down with the weight. I'm out of a rut I didn't know I was in: frozen foods. I blame my picky-eater husband for that since he likes few veggies, but the real blame is on me: I'm not a picky eater, and can eat anything I cook, and cook anything I want. Now I do.

Wk 2, day 2. I tried a new cereal this a.m. I alternate my days between Egg Beaters, toast & bacon, and Old Fashion Oats. I saw on this site a recipe using Country Choice Multi-Grain cereal. Found it at the 3rd store. The recipe is simple: 1/2 c CCMGC, 1/2c frozen (not thawed) blueberries, 2 Celestial Seasons Honey Ginger Lemon tea bag, cinnamon, and artificial sweetener. Brew tea bag in 8 oz water for 2 minutes, then combine all ingredients in microwave-safe bowl, and cook on 50% power for 8 minutes. It was delicious! SP recipe said there are 80 cals in 1/2 c blueberries, but my bag said 80 cals for 3/4 c, which is what I used. Delish!
This Challenge is working well for me.

Going well. Have always used big batch cooking, just makes life easier when time constraints would normally get in the way of eating something substantial, let alone healthy before you have to be somewhere by a certain time. Have been trying several new recipes also.

Its going good..I did the batch cooking as well..I made some vegan lentil burgers..Ate one right off and put the rest in a plastic bag..not stacking them..so they would be easy to get out of the freezer..They have a great taste , plus, I have utilized those darling through out the week. They make a good filling for stuffed gr. peppers, alone as just a burger too. Great recipe..I also made my own tangy balsamic vinaigrette..(found the recipe on Spark)..actually both recipes..love the convenience of these foods and flavors..Its been a fun journey this week..Thanks so much for sharing all your ideas..Sharlene

My family and I are on the final day of week two. I haven't been checking in as often because my husband has been out of town since Monday and I've been busy with other things.

Batch cooking, I actually did this over the weekend and also on Monday. I cooked homemade chicken noodle soup and homemade beef barley vegetable soup in the slow cooker. There was enough for the meal plus two more meals -- I portioned off the soup so it's ready to go for a quick meal anyday/time of the week.

Time saving kitchen tool(s) is definitely my slow cooker. I used it this week for the beef barley vegetable soup, chicken noodle soup, chicken salsa.
I did other time saving meals with my roaster, meals I was able to start in the morning while I cleaned up then I had the afternoon free to go outside with my daughter and in the evening I popped it back into the over for 30 minutes or so.

So far even though my husband is out of town this week has been a success. Looking forward to week three which begins tomorrow! :D

doing great - I have always big batched cooked - have a freezer stocked with quick meals. I soak and make my own beans, make gluten free bread, and veggie burgers so I always meake extra for that quick meal.

It is going great. I made a bunch of chicken veggie stock as I had the carcases of 4 chickens after making a huge enchilada casserole for and event. I'm looking forward to using them in recipes. 9 court bags made with rich flavor. Pre made stock is minimum of 2 dollars for week flavored stuff. emoticon I also did some other batch cooking. Am working 36 hours over the week end and have yummy meals prepared to eat as well as healthy lunches ready to go,.

I am doing well so far. I have made extra every night and will be freezing what we do not use for lunches. I am planning to make a ham and bean soup from leftovers from our New Years Day ham. Some for us and some for our neighbor who had hip surgery. I really like the menu planning and feel I have finally made it a habit.

So far so good! I continue to do the meal planning and am stocked up for my first day of big batch cooking! Week 2 is going GREAT!!!! Can I just say, I LOVE BIG BATCH COOKING!!?!?!?!?
Those handy, dandy little "grab bags" are SUCH a BIG help!!!! I love them!!!!!!
They provide such convenience and variety. They're perfect!!! I just mark the content, portion size, date; thaw it some; heat it up; log it in to my food diary while it's heating; and ENJOY!!!

(OH!! And, I have gotten some new kitchen tools lately that I also LOVE! :) Also, for Christmas got some silicon baking sheets/mats. Looking forward to giving those a try.)

I cooked some food that should last the week. I made some spaghetti sauce and I steamed some pork chops (gotta cook with family in mind too). I cooked the rice in advanced. I have some wholewheat pasta that I need to cook to go with the spaghetti. I was hungry when I got home from work, so the pre-pared food worked out well.

Week 2- I cooked some things to freeze yesterday. Going gluten free so still trying to figure out what I think taste good. One thing I made was horrible & took alot of effort. That was discouraging but I know what not to fix! emoticon On to the next meal. Honestly, I have found several things that have tasted good. Anyone going gluten free I recommend Gluten free on a Shoestring cook book. It explains it all! emoticon

I have been using my cheese grater more for making my own hashbrowns or shredded cheese. The block cheese lasts longer, so i shred out only whats needed and save rest. With the potatoes, I know I am getting real potatoes with no additives.
I also have serving spoons that are pre measured according to serving size, such as 1 serving of starch,veg, etc. the serving spoon is like a meauring cup, but unless you read the cup of the spoon before scooping, you would never know one was measuring!

I wish I would have seasoned only half of my chicken breasts with one kind of seasoning leaving the other half for a different seasoning. Will try and remember that next time I thaw that chicken.

make a chicken bean soup with friends. Boy! it smelt good. They should be able to get a lot of meals out of one batch of soup. I will have to make my own version of it. I have some turkey hamburger and frozen turkey that I could use in my soup. Just have to decide what all veggies I would like to use in it.
