Here's what I'll be cooking the rest of the week: -Pineapple-veggie-cashew or peanut-noodle stir fry. Can't decide yet if I'm going to make a peanut, oyster, or terriyaki based sauce. -Chicken (haven't decided if I'll broil or poach) with Gates BBQ sauce for dipping and collard greens. -Lentil soup
Potential snacks or sides for leftovers: -Avocado with lime juice, salt, and pepper -Sauteed mushrooms (I never use oil or butter). -oranges, bananas, kiwi, and blueberries (I may mix some of these and create a fruit salad or individual). -Cheerios -Oatmeal
We will be having whole grain spaghetti with garlic & herb spaghetti sauce and vegan meatballs and garlic bread with vegan garlic butter and Italian seasonings. Cucumber and tomato salad on the side with a balsamic reduction dressing.

I'm not cooking tonight. My husband is working so I will have a veggie burger, a vegetable probably green beans and 1/2 cup of cotage cheese. I will also open a can of sugarfree pears and have a serving of that. Tomorrow will be different I am planning for a good healthy meal. I think it will be meatloaf made with xtra lean ground beef and panko bread crumbs.
Saturday night I made Pork Chops with Mustard Maple Sauce and Pureed Winter Squash with maple. Last night I made roasted chicken thighs with gravy and twice baked sweet potatoes, and today we are going to a cook out which will be hamburgers, baked beans, and cole slaw.
I take a pork loin and cut into about 4oz servings. Then I put it in foil with onions, peppers, and carrots. Then I pour BBQ sauce over the whole thing and wrap then foil around it. I cook it in the oven at 250 for about 6 to 8 hours. Yummy and spicy and real easy to make.
I usually serve it with rice.

So, I thought it would be fun to see what everybody else has been cooking up. Tonight I made a big pot of Japanese-style curry rice with chicken. It is definitely way healthier than the heat-and-eat packets we buy at a nearby Asian supermarket (probably 1/4 of the sodium). Tons of leftovers packed in the fridge for lunches this week.
