Here's what I'll be cooking the rest of the week:
-Pineapple-veggie-cashew or peanut-noodle stir fry. Can't decide yet if I'm going to make a peanut, oyster, or terriyaki based sauce.
-Chicken (haven't decided if I'll broil or poach) with Gates BBQ sauce for dipping and collard greens.
Potential snacks or sides for leftovers:
-Avocado with lime juice, salt, and pepper
-Sauteed mushrooms (I never use oil or butter).
-oranges, bananas, kiwi, and blueberries (I may mix some of these and create a fruit salad or individual).
