I cook in batches, at least 4 servings of everything. I freeze and then just reheat or microwave.
I'm really not in the mood of cooking after a day of work. emoticon

I have some problems with sticking to my plan, too. For example, I planned an afternoon meal for today (I'm trying to eat 5-6 mini meals a day) but I had a hectic day and although my sandwich was ready, I didn't feel like eating it. Now I'm having a mild anxiety attack because this is what happens when I can't do something I planned earlier. What should I do now? Should I just remove the sandwich form my tracker? Should I add it to my dinner? Should I force myself to eat it? Planned meals are supposed to take away the stress form eating but right now it's causing me stress! emoticon

I also say have some quick alternatives for days you are tired. My meal plan for tomorrow, if I get home from my dental appointment feeling decent and at a decent time soup with rice, which I use brown rice, so takes an hour. If I feel grouchy and grumpy or in pain and get home late, frozen pizza. :) Horrible eh? But sometimes one needs a quick backup.

Do love the crockpot, if you know you are going to be home late too.

You may also want to consider using a crockpot/slow cooker. You can get one that has a warming feature so it will automatically switch over to warm when the cooking time is done. This way the meal will be all ready for you when you get home with no waiting.

Have you thought about fixing meals on a separate day and freezing them for later . that way you could have them ready for when you are running late . you need to eat and this might work . emoticon

I was able to make the meal plan as directed and have included some healthy recipes in there. I don't mind cooking but I have been struggling to stick with the "DINNER" menu on the meal plan. These last two days (days 1 and 2), I didn't stick to the menu. I came home really late from work (say 10pm) and I worked all day (I wake up at 5am). I was so tired that honestly, I didn't have the patience to wait for my food to be ready so I just ordered.
I feel a little frustrated and wanted to know if there are any tips that can help me on those days when I come home late.
