I also say have some quick alternatives for days you are tired. My meal plan for tomorrow, if I get home from my dental appointment feeling decent and at a decent time soup with rice, which I use brown rice, so takes an hour. If I feel grouchy and grumpy or in pain and get home late, frozen pizza. :) Horrible eh? But sometimes one needs a quick backup.
Do love the crockpot, if you know you are going to be home late too.
